Hey Everyone !
This afternoon I had cleaned and made 2 bunches of collard greens. No meat, I used lots of garlic ( minced ) and some olive oil to sautee the garlic in . Them added the greens to cook slowly, so I had some brn rice about 1/2 cup. I admit I was somewhat hungry today . But that satisfied me. Now I'm getting ready to make a fresh fruit smoothie with banana and pineapple, berries, and some PB. Good evening to everyone .... btw I feel great :fastdraq: so far :happyjump:

I especially hate to smell it cook or tear it off a bone. However, I will not *die* if I eat a piece. I do eat dairy, but not alot. Especially milk.
Just trying to explain to you my eating habits.....so if I say I used whey (vegans do use whey, it's dairy) or I had yogurt/again X to a vegan, you'll understand.
I love garlic......in a green smoothie, its actually a little sweet.

I eat mostly raw......but and but is the key word here, I have trouble feeling satisfied with hunger, and then I do crazy things like eat 12 peaches.....I am a vegetarian, only because I do not like meat. Health nut, in regards to my own health, I am....nutritionist, I am not. If you are a diabetic, you are eating too much fruit (thats sugar too)...more veggies girl!
Pineapple is very sweet, be careful with that. (although it has a ton of wonderful enzymes and fiber) but you have to watch your sugar. I know nothing about lactose. I just do not like milk. The internet is a wonderful tool.
I don't use powders, greco does. I only use b pollen, scroll through the thread, and read why I use b pollen.

MMM.. I was a lacto ovo veggie for 10 years, vegan for a few as well. Though I seem to want to eat chicken from time to time, veggies and fruits and soy products have my heart. I can just about break down in tears when I see really fresh organic produce piled up... Subscribing... Will toss in any tried and true recipes if I can find them, lost a bunch on the last move. Meh.

Looking forward Licious to your recipes. I have a recipe that sounds
good and its with yogurt (YB) so I'll post it as soon as I get home.
So, this weekend is my first "test run" at bar b queing
honorable nephew will do his thing with the meat and
I'll grill the veggies, thinking of grilling portobellos as well
at least one of the kids doesn't touch meat so I have
company.
Run this am was beautiful, Sun, birds, the road, and a sensitive
veggie boy with me I'm so glad I came up here I'm proud of
my nephew, and my grand-nephews
So this morning after fun run we juiced:
kale
red leaf lettuce (grand nephew's pick)
celery
apple
drank this diluted with H2O on the deck
I'm going to miss them all
later, for our green smoothie
we saved some of the juiced greens
to blend with
strawberries
raspberries
soy milk
walnuts
should be delicious
Kat, I do lots of greens and keep the sweet stuff minimal
and juicing is different from blending in that you don't
have the fiber of the greens or fruit.
When I'm home I save the fiber after I juice and put it
into my salads, saute it with other veggies, add it to
soups(this is always delicious)...
So, veggies folks have a great weekend!

So, detoxing its been happening since I began

and stopped eating meat of any kind

Found this recipe and thought you may enjoy it,especially
those of you that enjoy Greek yogurt,
alas I will not make it until I find a substitute for
the yogurt so here it is:
omega-3 rich for breakfast or dessert
Ingredients:
1 cup
of quinoa, rinsed
1 cup of fresh, organic blueberries
2/3 cup of raw honey
1/4 cup of walnuts
1 teaspoon of nutmeg
2 cups of spring/filtered H2O (water)
1 cup of probiotic-rich organic Greek
yogurt
1 teaspoon of cinnamon
Directions:
In a medium saucepan, bring the water to a boil. Stir in the quinoa,
cover, and reduce heat and simmer for about 10-15 mins, or until
water is absorbed. Remove from heat and let cool, chill.
Mix together the honey, cinnamon and nutmeg. Set aside.
Divide chilled quinoa into 6-8 servings.
Place blueberry-yogurt mixture on each serving. Drizzle
each serving with oney, cinnamon and nutmeg mixture.
Top with walnuts. Serve and enjoy.
This sounds delicious...any suggestions for yogurt
substitute?

This sounds so delicious! What's funny is that I recently began eating Greek yogurt (maybe replace w/soy yogurt or apple sauce?) mixed with quinoa, and it just blew me away how much I liked it. The sour with the grainy taste is just so good. I've been making veggie chili and having that mixture on the side. Thanks for the breakfast idea. Everything you listed below is a favorite ingredient, and I would not have thought of that! Can't wait to try!

Will experiment with the apple sauce, good suggestion, soy yogurt if I can find a brand that has not been genetically modified (GMO) I'll give that a try as well.
GMO soy is not labeled in this country as such, what is labeled is when it is not genetically modified so will give it a shot.

Hi Veggie People,
Here's the next recipe with yogurt
0-3 Parfait
Serves 4
Ingredients:
1.5 cups sliced organic strawberries
1.5 cups organic blueberries
1.5 cups organic raspberries
1 12oz container of organic,
probiotic Greek yogurt
1Tablespoon vanilla
3Tablespoons honey
1 banana sliced
3 teaspoons flaxseed, ground
1,5 cups of organic granola with
walnuts, almonds, raisins, etc.
Directions:
In a separate mixing bowl, stir together
the Greek yogurt, vanilla, honey. Set aside.
In a large clear parfait bowl, layer 1/2 cup
strawberries, 1/2 cup blueberries, 1/2 cup
raspberries, 1 teaspoon of flaxseeds, 1/3
of the Greek yogurt mixture, 1/3 of the sliced
banana, and 1/2 cup of granola.
Repeat this process until your parfait is built
with the remaining ingredients.
Serve or refrigerate and serve later.
This sounds delicious, though I would lessen
the amount of honey. The fruit is sweet enough
for my taste, may leave the honey out all together.
And the yogurt, I'll try it with something else
perhaps soft tofu.
Enjoy it.

I made a huge produce/whole foods run today......gee was I eating anything? Filled the whole back of my smart car up. It was heavy rain today, was *forced* to use the car if I wanted to shop
I also won't put honey into parfaits. I like bear nature granola. just saying.
Back to the honey. Since I am allergic to bee stings, somewhere in time I got it into my head that honey wasn't any good for me, so I don't touch it. Honestly, I don't even know what it tastes like
Blue berries were .99 a qt. I bought ten guarts. I'm wondering if that's enough. I may only have one more week to decide. I have a whole shelf of the freezer in frozen grapes.....but I know that looks like more than it really is.
My special find was asparagas. At first I thought, gee isn't it early for that? But we are going into the second week of July, so No, it's not early. It's good eats.

Detoxing from years of eating meat, and processed foods. I asked in a recent previous post, "How has being veggie/vegan changed you?"
I am sitting with that question for myself as well and the detox is assisting in my getting clearer about this change I've made to not participate in cruelty, even if unintentional, and other changes/decisions I am in the process of making.
And yes, honey I know is not necessary in these recipes, I use it rarely as the fruit really is sweet enough.

I keep a structured lifestyle because I feel better, if I deviate too much from my norm, I am almost forced to eat foods that are processed, or precooked, even microwave=impurities
When I eat the way I eat, live, fresh, or as they call it today...raw. I feel more alive because I am in essence, giving life to all the live parts of my body, cells, tissues. This enhances my overall health and vitality.
I think I said it in this thread, if I feed my body correctly, it rewards me with good sleep.
What about you?

Morning Veggie Lovers,
This morning went for my run. What an incredibly beautiful morning!
So many folks out early, all ages, races, and sizes; people loving themselves
enough to get out into Nature, and move their bodies, enjoy being with others.
I really enjoy seeing other people out there.
So today I'm returning to regular green smoothies, and while I know the
detoxing will go on, it will do so more slowly.
By the way, for anyone wanting to detox a bit I used
celery
cucumber
apple
now these fruit are quite sweet so I used lemon to cut the sweetness down
used H2O to dilute it. So, results so far:
clear headed, no fog head none
energy lots of it
clear dreaming
releasing emotions I didn't expect
this one, but it was necessary I can
see now
releasing stagnant stuff from previous
eating of meat, processed foods
I won't get graphic
skin looks smoother
and I was on the detox juice for about
a week only and I've seen the benefits
I'll be doing a longer one in the middle of
August for four weeks and end it before
the Autumn Equinox, that's the plan
So, returning today to regular green smoothies
and combine what celery apple cucumber I have
left this morning with :
spinach
banana
H2O
aloe vera
Overall, this change to a veggie/vegan way to
eat has brought positive results to my body,
mind, and spirit. I'm excited to see what further
changes will be taking place as I now understand
what YB is talking about when she says that she
gives all parts of her body live food (paraphrasing)
YB, I think about all the dead food I've eaten through
the years, and some that perhaps wasn't real food
at all...the body is so incredible that even with all
of this, it seeks to take care of us...got off the subject
a bit
I agree with you YB, live food nourishes, and nurtures
every cell of our bodies, helping them heal us on many
levels.
While watching "Earthlings" was hard to do, I am grateful
that the truth was shown about how animals are treated
before, and during slaughter. I just could not contribute
by living in denial of such pain, now that it was brought
to my attention.
There must be another way to respect the animals that
share our earth with us, even if one is going to kill them
for food.
My journey into this way of eating, live foods has been
surprisingly easy for me, mainly because I love the reality
of my not contributing to cruelty, the energy
it has given me, and the clarity on all levels.

Where I tend to be *hey, take it or leave it*
Have you seen any of the new studies they are doing for diabetics? They are putting them on the green smoothie diet (and only asking them to walk 10,000 steps a day)
and the results have been consistant, that within 30 days,
they have gone into *remission*
I'm not bragging, I'm just saying......I constantly hear *You don't look 53* and then I look around at 53 and think to myself, (right, I don't) While I admit, I am not perfect with
eating, every once in a while I eat something I dubb poison. Ice cream at the Pirate game flashes in front of me, and I paid for that. I couldn't sleep the whole night.
It's been miserably humid here. That ranks with wind chills as my two weather conditions I dislike the most. But hey, life goes on. I put extra celery in my smoothies and green tea drinks yesterday (celery is a natrural diuretic) and it's true, I've been eliminating fluid like crazy, from my body today. Maybe today I won't become mid day dizzy from the humid conditions and can enjoy baseball. Simply put, we are what we eat.
Eat garbage, feel like garbage. Eat live foods, feel alive.

YB, yes I've not read the studies, but did view a youtube video where people with diabetes were put on live foods, and their diabetes was completely cleared in 30 days.
This doesn't surprise me because diabetes is a diet and lifestyle dis-ease, there is a diabetes that is genetic (I hesitate to say this now because I haven't researched this one), but the medical folks are saying so (which is why I definitely want to research it)...as is heart dis-ease, and other chronic dis-eases.
Anyway, they couldn't believe how easy it was, though they did go through all the detox cravings, they got to the other side of it. It was interesting to watch the addictive nature of the foods the majority of us eat, and how they went through withdrawal. I can certainly identify, but it doesn't last long.
The walking/moving is essential...it helps the body move the toxins out of the system.
By the way YB, celery is incredibly healing for the kidneys, so important in recovering from excess dead food.
You know YB, I appreciate your sharing information with us. I certainly have found it exceedingly helpful, and supportive, so keep it coming my friend. I do not think your proselytizing at all, info sharing for those of us who seek healing is what you do, that's how I receive it.
I also enjoy sharing my experience because no, I'm not wanting to change anyone, its simply not possible anyway, but I want for others who may want to change their lifestyle/eating/exercise to know that others are out here doing the same thing.
For me there are no judgments, I know how uninformed I was so to each their own life way.
YB, the not looking like 53 years old thing is a side benefit for those who care about these things...I'm 59 now and well, this is what 59 looks like when you treat your body, mind, and spirit well. And you are what 53 looks like when healthy in body, mind and spirit.
And by the way, there is no arrogance in feeling, and looking well.

I spray the bottom slots with extra virgin olive oil (a good fat for your heart) Oh, plug in george.
then i lay one asparagas spear per slot, top of spear to top of grill. I don't care if the bottom parts cook, i'll be cutting them off. I grind fresh ground pepper over them...then I close the lid. I cook until el-dante. You'll know this when they turn bright green. I slide them off, onto a dish to cool.
repeat if you want to cook them all up, thats what I do. Then i can eat them cold, they are good cold, or i can put them into green smoothies.

Yeah, would say that's the best way to cook asparagus, grilling them. A good tip is to shave some really nice parmesano reggiano over the asparagus, and with some freshly ground black pepper and some drops of lemon olive oil it will taste divine.

then i lay one asparagas spear per slot, top of spear to top of grill. I don't care if the bottom parts cook, i'll be cutting them off. I grind fresh ground pepper over them...then I close the lid. I cook until el-dante. You'll know this when they turn bright green. I slide them off, onto a dish to cool.
repeat if you want to cook them all up, thats what I do. Then i can eat them cold, they are good cold, or i can put them into green smoothies.

HA HA!!!
Later, as life went on, they kept coming out with different george foremans and more colors and bun warmers....blah blah blah. But none of those pretty ones seemed to get as hot as the original. Glad I kept the original, donated the second one I bought to good will.
The older one gets, less is more! There is no more asparagas in this house. Excellent.

for the office today...yes, delicious
and kept me energized all day
now for breakfast had

went to the gym
got home had
green smoothie with

after work-out
all this takes I've learned
is thinking ahead and
freezing the juices
yes, immediately juiced or blended
is wonderful
so is freezing and heading off to the
office with juice/smoothie in hand
for the day
so I'm doing both...juices are good
frozen for two days
still experimenting with all of this
which actually adds to the fun of it

Well, the detox has worked amazingly up at 3 o'clock this morning
yes the earliest so far soon I won't need the alarm clock as I'm
waking IT up...smiling
So, made my H2O w/lemon did some "work" until gym time
today did my weights 30 mins a quickie I know and treadmill for 30 min
elliptical for 30 mins ran home protein after work-out green smoothie
showered dressed out the door in the car at the office saw pts

Let me give you my answer to your question...I congratulate you both for blending smoothie for breakfast.
For me it is all about the greens, I use banana as a creamy base, then add lots of whatever green veggies your going to use...I use spinach,broccoli(frozen, organic, always its in expensive too), cilantro, dandelion and at times I combine two or three greens along with the apple or berries.
The important thing is that these get blended under "liquefy", in other words, I always blend, giving the blender a rest every 1.5 mins, until the greens are thoroughly liquefied...the banana, and other fruit like avocado make it creamy
and thick, satisfying, and filling.
I also add walnuts, almonds (these I soak the night before so their softer), and that adds a nice crunch for my day.
I use flax oil because the seeds are difficult to get blended unless you first ground them...frankly I don't want to go through all of that if the oil is available, organic, and delicious.
So, that's it for now. I recommend greens, fruit, don't worry about the fat content in the yogurt, your body will use the natural fat in it to help it absorb the nutrients. It will not add fat to your body.
I use regular soy milk, organic of course, these smoothies are delicious, and filling.
If the smoothie gets too thick just add filtered, spring water until its to your liking. That's it for now...congrats again.

Oatmeal, was it cooked?
I never thought of that. I'd grind that first, and make it dust like.....(mmmm, I'm liking this idea)
nuts are a source of protein (I usually use almonds), sometimes a spoonful of beanut butter, excellent with bananna. Proteins make you feel full. So thats veggies,
Spinach is very mild (when mixed with a bananna). I like yogurt in my smoothies, i use low fat or full fat, you need some fat and the yogurt will make you feel full. I use ice cubes in the summer months. And always berries.
I made freezer packs, portion controlled sizes of berries....strawberries, blueberries and rasberries, to last me well into winter......(no, i do not have to much time on my hands):cherry:. I'm going to try that oatmeal in the morning.....
Welcome to the wonderful world of smoothies.....loved seeing flax seed added to that.

Hi Jennifer....I put the dry oatmeal into the blender all by itself, and *blend*, it chops it to dust.
I got a good chuckle out of the coffee utube, when the woman was adding metamucil for 6 grams of fiber. Oatmeal will give you 8 grams. BUT!....
Oatmeal is the only food known to do this, and is endorsed by the american heart association because of it. Oats are soluable. They go into your body and absorb excess grease (cholesterol) and eliminate it when you have a bowel movement. Cholesterol issues can be genetic and are not always caused by high fat diets. If I could make a suggestion, I'd suggest using quick oaks (mothers oats) instead of instant oats, because of the salt. No other reason.
We learn from one another....I never thought to do this....(thank you again)and I love oatmeal. But eating raw, you shouldn't introduce boiled foods into your diet. Now I can have oatmeal, and the benefits of it again.

My Gramma used to make me chocolate drop oatmeal cookies full of sugar, and I don't know what else.
I have Scottish porridge every day with almonds and some kind of fresh fruit. If I use a less water , it makes a reallly thick mass of good chewy stuff.

I like bananas and I don't trust the soils of today (except my own, another plug for worm farming) for magnesium...anyhow....your smoothie sounded great. I had another beet. Gives a new meaning to home grown.
I peel the beet then grate it, yes, slightly labor intensive....but I know I will reap the rewards.....before i toss it into the blender because I do want it to be emulsified and don't want to be swallowing chunks of beets.

Hi Veggie People,
A while back I asked the question, "How has being veggie/vegan changed you?"
I'll answer that question as much as I know myself tonight...First I'll say that I had no intention of stopping the eating of meat, no. What I remember is someone suggesting I see the video "Earthling". I did, and its changed my life.
Before watching this video, I thought I ate a healthy, little did I know that the way I ate meat also contributed to cruelty, and a completely unsustainable way of eating/life. Who knew?! I sure didn't.
I watched "Earthlings", and all the cruelty, pain, and unfairness I have ever personally known in my own life became clear, so very clear to me in the lives, and deaths of the animals that we kill so unmercifully.
So, I decided then and there that I would only eat veggies, and I have since then found clarity, some form of redemption in knowing the truth, the ugly truth of what is done to the other animals in the guise of making them our "food".
Personally, I had already been on a personal quest to survive a major loss (too personal to discuss here), and this realization of the cruelty and the unsustainablility of factory farming put, "the icing on the cake" for me.
This is a rather long story, and I won't bore you with it all, but suffice to say that as I return home, I return a changed person. A person that has known cruelty, taken and given, and a person who has stopped it, in all ways I am different.
Clarity brings with it responsibility. I leave on Monday with the goal of looking and revising the path of my life, as much as I have control over it, and of creating a life based on love for life, love for myself, and my family, friends.
The "work" I do in the World is changed as well...though remnants of my old life must be shown, the new images are here as well. Not a new life, new Self, but a Self new to this World. A World based on love.
This, I know sounds like I should be posting on "Listening...to..." thread, yet my words are most appropriate here, the thread where my new beginning took place.
I will be posting music, green smoothies, etc. as much as I feel right until Sunday night. Monday I leave for home and will be there for a long while.
I wish you all good health, and healthy eating, clarity of Self, and as my friend YB says, "Your body will thank you for it."

We will be heading to the farmers market soon, the weather is bearable today. Chard is *in season* and something I only see a couple weeks out of the year.
As you no doubt know, I am an extremely early riser (4:45 each day, my alarm kat became accumstomed to my prior occupation requiring me to start very early, and he likes every one up at this hour) I really do not mind. So I roasted my coffee beans for our deck ritual with the neighbors.
We were on the river with our kayaks as the sun rose. What a great way to start your day. I really need to get into the habit of carrying around my camera again. You'll love this. I took a thermos kayaking with us, and when we got to our spot where we *float* I whipped out the thermos. A. thought we were having coffee. I pulled out the frozen grapes...they were half frozen. Now guess who is loving the half frozen grapes:hamactor:
We were back home in plenty of time for coffee with the neighbors. They don't start getting up until 8:30 ish....
Another great video. I couldn't help but notice how the facilitator said her mom says over and over HOW SHE FEELS FANTASTIC. Having come from my death bed to a life full of life, and always looking for more information
on how to be 100% alive (look at Jack Lalane (sp) for example)....your signature line says it all. (very nice, by the way.)
I certainly will miss your informative posts and your deep thoughts. You may not know, that I secrectly stalk your music posts. I'm not exclusively a rock an roll lover. You can tell alot about a person, by their music. I think so, anyhow. As I love music, and I love art. Art has many forms. Music is a form of art.
Enjoy your Hiatus from the fast lane.....continue to take good care of yourself, your body will thank you for it. I find it very intriguing how you speak of mental clarity. You get yours while awake. 4 cups chopped chard or kale (1 or 2 bunches)
1 T oil
1 tsp ground coriander
1/2 tsp cumin powder
1/2 tsp ground fennel seed
1/4 tsp turmeric powder
1/2 tsp dried thyme leaf
Optional Sauce:
1 cup water reserved from steaming
1 Tbsp arrowroot powder
1 tsp curry powder
1/2 tsp salt
Directions:
Preheat oven to 300 degrees
Spread the almonds and pumpkin seeds on a cookie sheet and bake for 12 minutes or until lightly toasted
Prep the beets and sweet potatoes
Steam separately or side by side in a steamer basket for 15 minutes, or until tender
Wash the greens, remove the leaves from the stems and chop in 2 inch pieces
Fry the spices in oil for 1 minute, then add the greens and stir fry until wilted
Turn heat to medium/low and stir in the steamed beets, sweet potatoes, almonds and pumpkin seeds
Optional Sauce: Dissolve arrowroot powder in 1/4 cup cold water. Whisk the arrowroot mixture,
curry powder and salt into the hot veggie steaming water until the arrowroot thickens
Pour over the veggies, stir, and serve
Cooking Tips
You'll need a heavy weight, wide bottomed 6 quart pot or dutch oven for this recipe.
The advantage of pre-steamng the beets and sweet potatoes:
When you mix them with the greens at the end of cooking,
they keep their color, which makes the dish very pretty.
If you're in a hurry, skip toasting the almonds and pumpkin seeds, but add them anyway for crunch,
flavor and eye appeal, plus protein, fiber, vitamins, minerals, etc.

WoW! Two of my favorite people re appear in the same day.
As for green smoothies. No I have not stopped, nor will I.
You know Greco, I have to take this medicine (poison) to control these nasty migraines I get. My neurologist ran a complete blood count on me as this medicine (poison) can turn on you and eat your platelets. No worries. It's not eating mine. She commented to me that my Iron count was 84 and that was beyond excellent for a vegetarian. So she asked my secret. I told her I drink green smoothies and eat a mostly raw diet. First she complimented me by saying Thats why you look so young, and then she explained to me that Iron carries oxygen to all the cells in your body. The more iron, the more oxygen.
Training for a mini Tri (a Halloween Fun thing) It shouldn't be called a Tri, except it's three events. Run, Trail bike ride, and kayak race (time trail)

and nutritiously age defying YB but you already know
that...the iron/oxygen fact is interesting I wasn't aware
of that...do know that the smoothies and the exercise
have had a transformative effect on my sense of clarity,

Roasted Root Vegetable Soup
5 carrots, peeled and roughly chopped
5 parsnips, peeled and roughly chopped
1 small butternut swash, peeled, seeded and roughly chopped
2 leeks, washed and sliced (white and light green parts only)
1 medium onion, peeled and sliced
2 whole heads of garlic, tops removed and skins left on
¼ cup olive or canola oil
2 teaspoons sea salt
Fresh ground pepper
4 cups veggie stock
½ cup light cream
Preheat the oven to 400 degrees F.
Place the carrots, parsnips, butternut squash, leeks, onions and garlic on a large unlined baking sheet.
Drizzle the olive oil over the vegetables, sprinkle on the salt and a few grinds of pepper, and toss everything together ensuring the veggies are evenly coated with oil and spices, and laying flat on the tray.
Bake for 35 to 45 minutes, or until the leeks and onions are golden brown and the root vegetables are fork-tender.
Remove the vegetables from the oven and transfer them to a stock pot or dutch oven. Cover the soup with the stock and puree using an immersion blender. Alternately, puree the roasted vegetables and stock in a blender, and transfer to the pot.
Add the cream and warm the soup, lightly seasoning if needed. Serve warm with fresh bread or topped with crumbled feta.
Susbtitute vegetables as you please. I am still growing root veggies. Also, they are STILL very affordable at the market and this CAN be frozen.
ONE OTHER SUGGESTION: Instead of adding stock and turning into soup,
use immersion blender, ot your actual blender and puree the roasted vegetables and you will have a wonderful FRESH and fat free dip for a
football crudites. Very easy!

No stranger than I.....
People thought Einstein and Freud were strange. I'm glad people put me [us] into that classification.
You will never have ulcerative colitis if you incorporate a small amount of ginger into your diet. I often grate the fresh root right into hot water, as if it was tea.....and drink it as such.
I got a bushel of Apples. October in Pennsylvania is Applefest like you wouldn't believe. All kinds too. I'm going to make some applebutter and sugar free applesauce. Apples hold up for a pretty good amount of time, and the way I incorporate them into my diet, I bet I'll get another bushel before October ends. The crock pot is my friend. In fact right now, I'm making vegetable stock with my almost limp vegetables. I do eat more cooked foods in the winter than I do the rest of the year. Before starting the stock, I had to go see how much junk veggies the worms had....(the things I talk about) as I like them to have balance in their diet too.....that gives me the best damn soil around. And thats where the vitamins need to begin. Enjoy the soup. I'd leave the cream out if you are going to freeze...
I think the cream is always best if added fresh. It doesn't break down on you.
Your up to 5 miles running now! Good for you! Thinker has started a running thread. Keep your eye open for it. He's catching the running fever!

Your right YB I won't be getting ulcerative colitis or any of the other chronic diseases...but I am developing something really strange, namely, clarity, emotional balance, physical endurance, and fun...imagine that!
Yes up to 5 mi and prefer running in the park then on the treadmill...but in the dark 5am morning the gym is perfect. I'll look up the new running thread before getting off of this thing.

Butternut Squash, Spinach and Mock Feta Pizza
Ingredients
2 cups cubed butternut squash, cut into 1/2-inch pieces
1 tablespoon plus 1 teaspoon olive oil, divided
1/4 teaspoon salt, divided
1/4 teaspoon freshly ground black pepper, divided
1 medium red onion, halved and thinly sliced
2 tablespoons water
1/4 cup all-purpose flour
1 (16-ounce) ball store-bought whole-wheat pizza dough, at room temperature
1 (14-ounce) jar pizza sauce
2 cups chopped fresh baby spinach
1/2 cup mock feta
2 tablespoons cornmeal
Directions:
1. Heat oven to 400 degrees F. Heat pizza stone on bottom rack (or use an inverted 11" x 16" cookie sheet, not heated). On the sheet, toss together the squash, 1 teaspoon oil, 1/8 teaspoon salt, and 1/8 teaspoon pepper. Bake for 25 minutes, or until squash is soft and lightly browned, stirring halfway through; set aside.
2. In a large skillet over medium-high heat, add remaining 1 tablespoon oil. Add onion onion, 1/8 teaspoon salt, and 1/8 teaspoon pepper; cook while stirring for 10 minutes, or until onion is light brown. Add water; cook while stirring for 5 minutes, or until onion is fully brown. Remove from heat.
3. Turn oven up to 450 degrees F. Sprinkle flour on the counter top or other flat surface. Press dough into a 15-inch circle or 10" x 16" rectangle. This pizza can be made with or without sauce (I did half and half, I much preferred the half with sauce) Top with sauce, squash, onion, spinach, and mock feta. Dust stone or inverted sheet with cornmeal; place pizza on it.
4. Bake 10 to 12 minutes, or until crust is crispy and cheese melts.

Edamame is simply whole soybeans that can be eaten directly out of the pod. Soymilk is another suggestion that also provides a great alternative to milk, especially if you are lactose intolerant. There are many soymilk brands on the market, but I recommend the ones found near the regular milk that come refrigerated for the best taste.

Alright, so I received mixed reviews on the green juice, green smoothie day at my house with family. For their first time I think they did well, and my Sis is using her blender so its good.
My green smoothie for today:

that's it! Simple, fast, delicious.
I mentioned the "Fat, Sick, and Nearly Dead" documentary by Joe Cross
the other day. Without divulging the whole thing its about J.Cross an Australian business man who got sick and tired of being sick and tired.
And well, I've seen it twice, the story is inspiring to say the least. I'll be
moving toward doing a 60 day green juice fast in the Spring and am
beginning by "eating" green smoothies, and green juice only on the weekends
now, no solid foods.
So, it will be an interesting Winter.

Do I have to put greens in my smoothies?
You don’t have to, but we highly recommend that you do! Greens are rich in calcium, iron, magnesium, vitamin A (as beta-carotene), C, K and many B vitamins. They are also rich in chlorophyll and antioxidants. Most people do
not eat enough leafy greens each day so blending them with fruit in a smoothie is the best way we have found to sneak more greens into our diet.
If adding leafy greens to a fruit smoothie just seems too alien of a concept, or even disgusting to you, try it out by adding just one small handful of fresh baby spinach to a fruit smoothie. You won’t taste it! Once you’ve taken this
first step, add another small handful and work up to 2 handfuls of leafy greens per smoothie. Before long, you’ll be blending an entire bunch of kale or dandelion greens!
How many green smoothies should I drink in a day?
We try to have at least two 32 ounce (1 liter) of green smoothie every day using an entire bunch of leafy greens in each smoothie. Most often, we drink up to 70 ounces of green smoothie in a day – one at breakfast and one at
lunchtime. Davy’s smoothies are about 750 to 800 calories each, and Tracy’s are about 400 to 500 calories.
If you are starting out, this will probably be too much for you. Start with a 16-ounce smoothie and work your way up to a quart. Then go from there. We don’t necessarily advocate or recommend a liquid, smoothie-based diet.
For us, it’s purely for convenience. You can get the same or similar nutrition by drinking one 16-ounce green smoothie in the morning and having a large salad or vegetable meal at lunch.
You say to eat two bunches of greens per day. How much is a “bunch” of greens?
When we say a “bunch” of leafy greens, we are referring to how you would typically purchase them in a supermarket – such as several stalks of kale, dandelion or swiss chard bundled together. Typically, there are about 4 to 5 cups leafy greens in a bunch when chopped.
A bunch can also be an entire large head of green/red leaf lettuce or romaine. We would consider 2 heads of baby bok choy or 3 heads of baby romaine lettuce as one bunch of greens.
When it comes to bagged or packaged salad mix, such as spring mix or fresh baby spinach, we consider a “bunch” to be 4 to 5 cups (or handfuls) of packed or chopped greens.
Our recommendation is to consume about two bunches or equivalent of leafy greens per day.
Do I have to make my smoothie fresh each day? How long will it stay fresh after I make it?
Yes, you definitely should make your smoothie each and every day. It will stay fresh in the refrigerator for up to 24 hours, but you will lose some nutrients as it sits in the fridge. It will also not taste as fresh after the first day and water separation may occur.
Fortunately, it only takes a few minutes to blend up a green smoothie in the morning. You can store leftovers in the fridge for drinking later. You can also make it the evening before and have it ready for you to grab the next morning before you go off to work or school.
Some people make up a big batch of smoothie and drink it over 2 to 3 days. Personally, we don’t like the way smoothies taste after the first day. Fresh is best!
How do I loose weight with green smoothies?
Green smoothies make a perfect weight loss shake because they are naturally low-calorie, high in fiber and loaded with nutrients. If you use only fruits and vegetables, they wont have added sugars, preservatives or any chemical additives.
Beyond that, green smoothies help boost your metabolism, give you energy and after a while, reset your taste buds so that you begin to enjoy whole, natural foods. You’ll start to crave green smoothies, salads and fresh fruits and vegetables.
We both lost about 30 pounds in a few months by simply adding green smoothies to our diet. We drank a 16-ounce smoothie with breakfast and another one with a healthy, fruit or vegetable-based lunch, or as a midday snack.
We do not recommend severe calorie restriction and you should not just drink three 16-ounce green smoothies per day in order to lose weight. Be sure you are getting enough calories to maintain your ideal weight and your body will naturally achieve that goal weight as you slowly make healthier food choices.
Why do your green smoothie recipes not have milk or yogurt?
None of our smoothie recipes call for milk or yogurt because dairy is not necessary for making a rich, creamy smoothie. Dairy doesn’t facilitate detoxification, it contains hormones and promotes animal cruelty (as well as providing young calves for the inhumane veal industry). It is easy to make a thick, creamy smoothie using the right types of what we call “base” fruits like banana, mango and durian. If you still want to use milk, try hemp, almond or rice milk. You can find brands at most supermarkets that are fortified with calcium and vitamin D as well. They are much healthier alternatives to cow’s milk.
How can I get more calcium in my smoothies without dairy?
Leafy greens are the best way to get extra calcium in your smoothies. One cup of chopped dandelion greens has 10% RDA of calcium while one cup of kale has 9%. Young coconuts have 10-17% RDA of calcium. Lemons and papaya have 7% while oranges have 5%. It’s pretty easy to make a big green smoothie with 50% of your daily value of calcium.
What smoothie recipes are good for doing a detox?
All fruits and vegetables facilitate detox. Be sure to use only organic ingredients in your smoothie recipes, avoid animal products, dried foods and additional sweeteners during your detox and find a workout routine that works for you. When it comes to making the “ultimate” detox green smoothies, we use dandelion greens and citrus such as orange, grapefruit,
lemon and lime.
Is it okay to use frozen fruit in a smoothie?
We regularly freeze strawberries and bananas when they are on sale and we frequently buy frozen wild blueberries.
Freezing does destroy some of the nutrients but not enough to really worry about as long as you eat plenty of fresh, ripe, non-frozen and raw foods. We recommend that you not use too much frozen fruit. Drinking and eating ice cold (or steaming hot) foods can interfere with digestion or cause damage. It’s best to drink a green smoothie at room temperature, but if you do not like to, then add a few frozen berries to chill it slightly.
Which is better, green smoothies or green juices?
Both blending and juicing are a wonderful part of a healthy diet and lifestyle and both have their uses. Green juices and green smoothies are both nutrient-rich beverages but juices are missing the fiber of smoothies.
Because of this, juices are not a whole food. That is not to say that there is anything wrong with juicing. Use juices to nourish while skipping or delaying a meal, while sick or recovering from an illness or simply to boost your nutrition without the excess fiber.
Smoothies are perfect for getting more whole fruits and vegetables into your diet, using as snacks or meal replacements and for losing weight. You don’t need to choose between blending and juicing. Do them both!
Why is it important to rotate greens in smoothies?
Leafy greens contain small amounts of toxins as a defense mechanism to protect a plant from predation. Glucosinolates in Brassica vegetables like kale, turnip and cabbage as well as oxalic acid in spinach and beet greens may provide some health benefits in small amounts, but in large amounts, are toxic to humans and other animals.
Eating two bunches of greens each day is perfectly safe, but to prevent a potential for a buildup or overdose of toxic elements in a certain species of plant, it’s best to rotate every few weeks.
For example, we might eat dandelion greens and romaine lettuce every day for two weeks, and then we’ll switch to beet greens and kale for a couple weeks. Then we might do leaf lettuce and spinach for a few days.
It is important to rotate greens among different plant families. Rotating one Brassica like kale with another Brassica like bok choy isn’t a good rotation because you are still getting the antinutrients that are in all Brassicas. A better rotation for kale would be a non-Brassica like beet greens, lettuce or chard.
I hate (am allergic to) bananas, but a lot of smoothie recipes call for them. Are there any substitutes?
Bananas are in just about every green smoothie recipe because they are the perfect fruit-base for a smoothie. Bananas naturally have a soft, creamy texture that blends well and strong flavored fruits such as pineapple and strawberries easily mask their flavor.
However, bananas are not the only base fruit out there. Other fruits you can use in place of bananas include mangoes, pears, apples, peaches, melons and durian. You might need to add less water or more of a particular base fruit (like two pears to one banana) to get the same, creamy texture.
Mango is the best banana replacement as it creates a smooth consistency and has nearly the same calories as a large banana. Alternatively, use two pears, apples or peaches for one large banana. Two cups of papaya or melon can also be substituted for one banana.
Are there any nutrient interactions or potential issues with mixing fruit and vegetables in a green smoothie?
There are varying philosophies about food combining. We don’t pay much attention to them. Basically, if it feels good, do it!
Most natural health experts agree that blending fruit and leafy greens is healthy and beneficial. Where some health experts disagree is on blending other vegetables with fruit, or blending non-sweet fruit like tomatoes with sweet fruit.
Our feeling (and experience) is that if you add a tomato or two to a green smoothie and you enjoy it and you do not experience any digestive difficulty or other health issues – particularly with your skin – then it’s perfectly fine.
I get tired of drinking green smoothies every day. What should I do?
Don’t get stuck in a smoothie rut! Mix it up. There are endless combination’s of fruit that you can use. Go through your produce section and try new things. Find exotic tropical fruits and pair them with bananas or other common fruits to make new flavor mixes. Be sure to rotate your greens as well. Experiment with spices like vanilla, ginger, fresh dill and cacao.

1 Celery stalk
1/2 Red Bell Pepper
3 cloves Garlic (crushed)
3 tbsp Olive Oil (Extra Virgin, Cold Pressed)
1 tsp Celtic Sea Salt
1/8 tsp Cayenne Pepper (for kick)
-Place all ingredients in a blender and blend until smooth.
--Chill in refrigerator before serving. Serve with a dollop of sour cream and some snipped chives

I tend to love the sweet smoothies and add greens as an afterthought ..a handful of Swiss Chard or Kale usually. I try to include (at least) a cup of seeded grapes, a carrot, a crisp apple (honeycrisp is a favorite) 1/2 of a banana, fresh lemon juice, small orange (peeled), and a Tb of flax and hemp seed with a little spring water depending ..because I like my smoothies on the thin side..

Green smoothies and green juices are fueling my running and yes, yesterday I had my first "healing crisis". It sounds more scary then it is, and is the body's way of cleansing, then rebuilding. Frankly, I was surprised it took so long since I've been taking the smoothies since the Summer, and not eating meat.
This week I cut back on my running to 3mi since I want to increase week after next...felt strange not to do my usual 5mi but am learning that rest is the building phase to running, or any sport/exercise before increasing distance, frequency, or intensity.
So new to green smoothie this am:
chia seeds (for energy)
pear
apple
broccoli
green powder
Vit C

I’ve been following the thread for some time….
I’ve been vegan for nearly 30 years due to severe food allergies - most days over the past 20 or so years I’ve been having a green smoothie using Spirulina mixing in fruits (except Oranges, Strawberries and Kiwi fruits as I’m allergic to them……..I’m allergic to my national fruit! It’s sooo embarrassing, lol!) and/or veggies depending on what I feel like – banana and beetroot is NOT a good combination! LOL! I fancied them both and just had to try it out – NEVER again! LOL!
I have alpha-Thalassaemia and Spirulina is chelated iron, unlike Spinach which is unchelated (too much unchelated iron can saturate my organs causing damage). I eat a lot of seaweed, green veggies cooked (except Spinach which is just……..bleurgh! I prefer to eat it raw in salads. I LOVE green salads and fruit and can be found happily eating my way through a generous portion of them, even in Winter! LOL!

The smoothie sounds very nutritious how does it taste? I'm also curious what you are doing about B12 deficiency that can be problematic in a vegan diet?

I take a multi vitamin (just in case). Everybody should. You can't trust that the soil will be rich in mineral. B12 requirements are very low.

B12 absolutely essential to vegan, vegetarians, and meat eaters as well I've learned. I take liquid B12 under tongue about 100mcg daily, that can be taken through nutritional yeast as well.
Also remember Omega 3 found in flax seeds (among other great nutrients), and guess what? Deep leafy greens, fruit.

What’s better after an indulgent Thanksgiving than a refreshing raw salad? Chickpeas are one of the best sources of folate (they help red cell production and carry oxygen to the muscles) and iron. Iron is best absorbed with vitamin C, which is what makes this chickpea-red pepper combo so powerful. Red peppers deliver more than 300 percent of the daily requirement for vitamin C, imperative for cell repair.
In general, I like to go for beans because of their slimming properties: they help shed fat and improve blood sugar levels.
This no-cook, energizing recipe is perfect on its own or can be tossed onto some greens or sandwiched between whole-grain bread. It's a perfect way to get back on a healthy eating track---and stave off that mid-afternoon slump!

Chickpea, Red Pepper, and Herb Salad
2 15-oz cans chickpeas, drained and rinsed
2 red bell peppers, finely diced
1 cup cilantro, chopped
1 cup flat-leaf parsley, chopped
3 cloves garlic, minced
1 Tbsp olive oil
Juice of 1 lemon
Toss together all ingredients in a large mixing bowl. Chill in the fridge (up to 2 hours to let the flavors meld).

I say leek, you say potato leek soup? Many people are unfamiliar with how to cook, prepare, and include leeks in their diet, other than in the classic vichyssoise. Although they seem like more of a sideline vegetable, leeks have a flavor and texture special enough to be the center of attention. And now that leeks are entering their peak season, it's the perfect time to experiment with this tasty and surprisingly healthy vegetable.

Leeks belong to the allium family of vegetables with garlic and onions. As a result, they contain many of the same beneficial compounds found in these well-researched, health-promoting vegetables.
One very important nutrient concentrated in leeks, is the B vitamin folate. Folate is a key B complex vitamin for supporting our cardiovascular system, preventing anemia by supporting red blood cell production, allowing nerves to function properly, and can even aiding in the prevention of dementias, such as Alzheimer’s disease. The highest concentration of folate is in a leek’s white, lower bulb portion (about 50% more than the rest of the stalk), but there is still enough folate in the green parts to also be considered beneficial.
I love cooking with leeks because their flavor is more delicate than onions, and their subtle sweetness never overpowers a dish like garlic can. This method is incredibly healthy, as it uses broth to cook the vegetable instead of oil. It also infuses the leeks with an incredible amount of flavor without added fat. Save the oil for the dressing and you’ll be preserving the olive oil’s delicate benefits.
Leeks and lemon seem to be best friends, so I made sure to include a lot of citrus in this dish. Using both the juice and the zest of the lemon is a twofer for flavor. I also threw in some freshly cooked chickpeas and goat's milk feta to make this a more substantial meal, but you could also omit them for a more simple side. Just don’t forget the dill---it’s divine!
Lemony Leeks with Chickpeas and Feta
Serves 2-3
Ingredients:
3 large leeks
1 cup vegetable stock
1 cup chickpeas (canned is fine)
½ cup crumbled goat feta
Dressing:
2 Tbsp. extra virgin olive oil
1 tsp. liquid honey
juice and zest of one lemon
pinch of sea salt + pepper
1 clove garlic, minced
1 small bunch fresh dill
Directions:
1. Slice off the root end of the each leek, then cut the stalk into 1-inch chunks on the diagonal (see photo). Use both the white and pale green portion of the stalk, discarding the dark green tops. Submerge leek slices in a large bowl of water to remove dirt between the layers. Be careful the layers stay intact.
2. In a large frying pan or saucepan, heat the vegetable broth until simmering. Remove leeks slices from water and place each slice with one flat side down in the broth. Cover and let simmer for 4-5 minutes on medium heat.
3. While the leeks are cooking, make the dressing by combining all ingredients except for the lemon zest and dill.
4. When leeks are just tender (do not over cook!), remove from pan with tongs and set on a serving platter, leaving the remaining broth. Pour chickpeas into the pan and heat in the broth for about one minute, tossing to warm through. Add half of the dill and toss.
5. Remove pan from heat and place chickpeas on top of the leeks. Pour dressing over top, sprinkle with remaining dill, lemon zest, and plenty of freshly ground black pepper. Serve immediately.

The reference to brazil nuts got to me, I love nuts a lot, altho I seem to be allergic to most of them..but I think I might try using brazils and see if it goes well..I think it would put an interesting dimension to my green smoothie. Thanks :)

Just wanted to share what to do when your Kale/Swiss Chard goes a bit limp at the end of the week. Cut it under water, on the diagonal, remove any gone ick greenery and stick in a glass of cool spring water and it should perk up..this works with parsley too.

There are plenty of recipes out there for mock chopped liver, but this one is mine. There really is no correct way of making it. Just depends on your taste.
4 cups Crimini or Portobello mushrooms cut into slices
1/2 cup shallots chopped fine
1 cup raw or roasted chopped pecans
1/8 cup plus 3 tablespoons EVO (For those of you who don't know-EVO is extra virgin olive oil)
Salt, pepper and Spanish smoked paprika to taste
Fresh finely chopped parsley
Saute mushrooms, salt, pepper and Spanish paprika to taste in 3 tablespoons EVO till soft. Remove from pan and put into food processor. The put a enough EVO in pan to saute shallots just until they are translucent. You don't want to burn them. Add to mushrooms in food processor. Add pecans and 1/8 cup EVO to food processor. Add more EVO if it gets too thick where it wont blend. Take some sort of greased mold or a bowl and put mix in there. Refrigerate over night. Remove when ready to serve, put a plate on top and then gently flip it over. Garnish with finely chopped fresh parsley Serve with crackers or pita bread. It is VERY yummy:)

Raw Yule Log Recipe...
- Grind one cup of any kind of nuts in blender and put in bowl (We just used almonds).
- Add three tablespoons honey
- Add two tablespoons fresh squeezed orange juice
- Add two pinches of Celtic Sea Salt
- Add 3 medjool dates chopped finely
- Add any other finely chopped dried fruits if you like (goji berries, apricots, raisins, etc...)
- Add a teaspoon of orange zest (grated orange peel)
- Add several dashes of any of the Christmas Spices: cinnamon, ginger, cloves, nutmeg, allspice, and/or cardamom (we just used cinnamon and nutmeg)
- Mix thoroughly in a bowl
- Roll into a log (the kind you burn in a fireplace)
- Pour 1/3 cup raw carob powder on to a plate and roll the log around in it
- Pour 1/2 cup dried-shredded coconut on to a plate and roll the log around in it
- Slice and serve

Made an interesting, new dinner tonight:
Trader Joe's vegetable quinoa microwaved (big thumbs up), and I mixed in some non-fat Greek yogurt to make it creamy
Stir-fried frozen brocolli (took awhile to unfreeze by stir-frying alone!), raw cashews, tofu, toasted sesame oil (yum), shallots, and ... here's the new experiment: a jar of medium spicy kimchi! The kimchi flavored the stir-fry all by itself.

What goes good in a smoothie w/raw tahini? And how does it flavor??
how to i answer this?...there is a whole universe of possibilities, but it is good option for most any kind of smoothie and has worked in my green smoothies (especially well) I have also put about a tsp of hemp oil in it as well and i feel amazing for several hours..i really believe its my smoothie that makes all the difference, giving up sugar was hard for me but I have really found I don't miss it and can pass up the white/brown sugar monsters most of the time.

Trader Joe's vegetable quinoa microwaved (big thumbs up), and I mixed in some non-fat Greek yogurt to make it creamy
Stir-fried frozen brocolli (took awhile to unfreeze by stir-frying alone!), raw cashews, tofu, toasted sesame oil (yum), shallots, and ... here's the new experiment: a jar of medium spicy kimchi! The kimchi flavored the stir-fry all by itself.

I got two strong messages this summer about sugar and one was a blood test in a range that was a precursor for diabetes. I was consuming a fair amount of sugar, and I grew up with a lot of sweets in the house. With these wake up calls, I went off cold. I do use things like agave nectar when I want my coffee or tea to taste a little sweet. Getting off sugar has made a huge difference in my health.

how to i answer this?...there is a whole universe of possibilities, but it is good option for most any kind of smoothie and has worked in my green smoothies (especially well) I have also put about a tsp of hemp oil in it as well and i feel amazing for several hours..i really believe its my smoothie that makes all the difference, giving up sugar was hard for me but I have really found I don't miss it and can pass up the white/brown sugar monsters most of the time.

Np..Hemp oil is one of the easiest oils for humans to consume with few/no digestive upsets- its also one of the most nutrient rich oils on the planet containing essential amino and fatty acids and a a rare protein globule edestins which is very close in structure to human blood plasma. Hemp: Not for Human Consumption

A number of companies are now selling hemp oil, toasted and shelled hemp seeds and granola bars containing hemp seeds. This is not a good use for hemp. Hemp may be appropriate for domestic animals and birds, but it should not be used for human food. In China, where cultivation of hemp originated, hemp oil was used occasionally, but there are no references in the Chinese literature to the use of hemp seeds as food for human beings. (Simoons, Food in China, 1991)
Hemp oil has been promoted in recent years as a “heart healthy” oil that is rich in essential fatty acids and low in saturated fat. Hemp oil is indeed highly unsaturated, and this is exactly why it should be avoided. Hemp oil is over 75 percent polyunsaturated, containing about 55 percent omega-6 fatty acids and about 20% omega-3 fatty acids. It contains only about 10 percent saturated fatty acids and 10 percent monounsaturated fatty acids. It is, therefore, highly unstable and prone to oxidation; and the high content of linoleic acid makes it particularly unsuitable for human consumption. Diets containing an excess of polyunsaturated fatty acids, particularly omega-6 fatty acids, have been linked not only to heart disease but also to cancer and autoimmune disease.
An additional problem derives from the fact that hemp oil may contain traces of cannabinoids and these substances can then turn up in the urine of those who consume it. In one research project, seven adult volunteers purchased hemp oil from a health food store and ingested 15 milliliters each. Urine samples taken at 8, 24 and 48 hours after ingestion were positive for THC. (Journal of Analytical Toxicology October 1997 21(6):482-485.) If these volunteers had been obliged to give a urine sample to their employers, they would have failed their drug test.
Because hemp oil is highly unsaturated, it makes an excellent base for paints and varnishes. In fact, there is no need to consider hemp for human consumption except in small quantities for medicinal purposes. There are many good fats and oils that humans can use and there are many good industrial uses for all the by-products of the hemp plant. Let’s not make the same mistake with hemp that we have made with soy (http://www.nourished.com.au/articles/the-ploy-of-soy), by promoting its inappropriate use as a human food.

I've done that, too! ....Yeuck! :| The worst oil for tasting rancid is sesame....it leaves you with an after taste that can only be described as putrid, and that was AFTER rinsing my mouth out several times and cleaning my teeth! :blink:

Recently I put a lot of Brewer's Yeast on my salad before bed, and it made me super sick. I already had ground flax seed on the salad (I have ground flax seed every morning usually with no trouble). Anyway, I also took a multi-vitamin, and I really think it was that Brewer's Yeast on top of everything that did me in. I lay in bed feeling nauseous and cramped.
Then there was the time I started having dried goji berries every morning. Horrible cramping that immediately resolved itself once I put two and two together. Some people have that reaction and there can be drug interactions. The Internet always help figure these things out.
Whenever we try something new, there's the possibility of a wonderful new discovery that's added to the routine or there's the possibility of a bout of feeling like crap!

I have to agree with you there! :) I hate how it clags up my mouth....a bit like eating putty or polyfilla (spackle) I'd imagine and for ages afterwards I feel I have to excavate my mouth....not good! :| LOL!

When ever trying any new foods or health suppliments, I do at lunchtime. For me, it lessens any digestive issues that may occur because I've already eaten breakfast and drunk plenty of water, so, my digestion can handle 'almost' anything, lol!

Chocolate mousse?
2 avocados
200g bar chocolate, melted
sweetener to taste
Blend all together and set in ramakin dishes in the fridge.
Avocado and roasted peppers on toasted Rye (or any other bread)
1 avocado cut into slices
red and/or yellow roasted peppers sliced
a drizzle of olive oil with basil pesto and/or balsamic vinegar and salt to taste.
Toast the bread.
Layer the avocoao and peppers on the bread and drizzle with the dressing.
Avocado, cheese and tomato sandwich with basil pesto.
Mash the avocado and spread on the bread.
Add cheese and tomato and drizzle with the pesto.
Toasted bread works well with this too!

I love avocados and make these treats often....the sandwich ones are great in the Summer with a salad. I've fooled carnivores with the chocolate mousse....the secret is not to tell anyone until after they've eaten it, lol! ;)

Avocado is terrific in a green smoothie, in the Summer when it is in season, I put it in my smoothie and add filtered H2O as needed to create a delicious creamy green smoothie. Of course I add greens with fruit and Vit C and Vit D3...experiment. Avocado in smoothies is delicious.

I eat Quinoa every day. It's a super food that grows in Peru. It comes in white and a very high prced red. I mix them when I cook them. Sorry to disappoint you, Quinoa can't be eaten raw. Please know, I eat mostly raw.
My only exception is for grains. Quinoa is very high in magnesium and also protein. You make it like most grains...2 parts H20 to one part Q and simmer it down.

It is my experience that Q. has no real taste of it's own. It readily will pick up any flavor you cook it with. I always make my own vegtable stock, so I use that instead of water to cook down my Q. I also dice up what ever is near the end of life in my veggie inventory and toss it into a small fry pan and heat it first to bring out the flavors then let it(the diced veggies) reduce down with the Q and the stock. I only make one batch a week! (big batch, like 2 cups of Q)
and I eat some every day. I love getting the magnesium from it.
Its very easy to cook with. I stuff peppers with it, I toss it into sauce i/e pasta and use it in chili....(even though I eat raw, I love to cook) people just assume it's meat. Again, tossing cooked Q into a skillet with diced red onions and Garlic (mushrooms) and sautee that....the Q picks up the flavors....and yes, they could be fooled. It's so good for you.
It also comes in an angel hair pasta and a farina (cereal, like an oatmeal)
so you really can eat it every day! Hope you love it like I do.

Mornin'. I use quinoa (we say 'kin-wa' around here) like any other grain except it cooks up faster and is a complete protein by itself. I throw it in stews, soups, and just cook it up and use it like rice. My favorite is to eat it like I would brown rice with a vegetable saute. It's also know as "curly cues" in my kitchen. ;-)

when i want a change from my usual green smoothie for breakfast i try to stay as raw as possible and i got this breakfast idea off a video from a girl living in Switzerland
in bottom of bowl
shred an apple (large shred)
(organic)plain yogurt
a couple spoonfuls of whole oats (uncooked)
(1 TB) raisins
(a few)walnuts/pecans
(sprinkling) of cinnamon
it's very good and you will not be hungry til lunch!

I forgot to add sometimes I vary the ingredients a bit ie instead of raisins i might use some berries or may add some fresh shaved coconut, dried apricots, whatever I have about the pantry..my combinations can get pretty wild, but they always taste delicious..it's become one of my go to standards when i'm bored with everything..i even eat it for dinner sometimes:|

I just watched the documentary called Fat, Sick and Nearly Dead, Joe Cross, the filmmaker, did a 60 day juice fast where he only juiced raw fruits and vegetables for those 60 days as a result he lost 75 pds. in 60 days and was able to rid himself of an auto immune disease he had struggled with for 8 years.
I was thinking of something more in depth, like this. Anyone have any experience with it?

heh that's sounds really good i suspect the vinegar was a little too strong.. instead of vinegar why not try lemon and use half as much garlic?? it would be just acid enough to give you that buzz without making your eyes water:goodluck:

This will be quick, as I am leaving for work. Juicing as a detox is wonderful. Juicing as a diet isn't good. Your body is made to do the whole digestion thing. Juiceing takes that away. If you stop utilizing your bodys natural abilility to digest foods, you will have problems when you start to attempt it again. If you're looking longer term, try smoothies (for the fiber) and juicing.
I am against things like metamucil and benefiber for the same reasons. There are foods that *scrub* the intestines just fine. When you start to use these substitutes, you enable your body to stop making the enzymes that do this for you.

They have different kinds and flavors. I opted for the plain and its a mixture of alfalfa, barley and wheat grass..now the one I got isn't raw but I was reading on their website that they have one that is. So I will finish this out and see..maybe I need both:|

This is my favorite superfood powder. By a great herbalist that makes "quality" Products, Dragon Herbs. It costs a bit, but less than a cup of coffee per day :) Very balanced ingredients, although I wish they left the wheat grass out, being a person with wheat (not gluten) sensitivities.

4 small organic oranges
1 organic lemon
1 organic grapefruit
1 to 2 Tb raw honey
1" cube ginger root
2 cloves garlic
pinch cayenne

I usually do either kale or broccoli with cucumber, celery, green pepper, and either green apple or pear. I will add carrot back in as soon as I get some more, I go through a lot of produce juicing.
I won't lie, the first few days are tough...the headache you get while detoxing is a killer, but it passes.

driving around for 30 days and juicing...He looks healthy
now.
How's it going today? That ratio of greens to fruit is what
I do as well, though I focus a lot of the greens because I'm
mostly doing smoothies. I juice on the weekends for the week
and just toss the frozen juice in the blender...delicious.

I love juicing but i only fast when something special requires it..fruit&veggie smoothies are my favorite way to end the day...i'm totally in love with Kale..lately, swiss chard, not so much:hrmph: i'm thinking i need to use spinach more often ..love the color of a spinach smoothies it almost looks like

I just watched the documentary called Fat, Sick and Nearly Dead, Joe Cross, the filmmaker, did a 60 day juice fast where he only juiced raw fruits and vegetables for those 60 days as a result he lost 75 pds. in 60 days and was able to rid himself of an auto immune disease he had struggled with for 8 years.
I was thinking of something more in depth, like this. Anyone have any experience with it?

I've decided to begin the juice feasting (prefer it to the word fasting) even more, to step it up. So I'm counting today as Day 1 and I'll report on how
I'm doing daily as I can get to the coffee shop.
Today I began the reboot standard program from Joe Cross's site, the link is in my previous post reply to ElijahRene.
It consists of 5 days of eating fruits, and veggies in any form except for frying of course. I agree with Dominique about the importance of fiber.
So my green smoothies remain, and will up the amount of green juice daily, also can have salads. That's it fruit veggies and more veggies!
Then 5 days of only green juices.
Then a return to eating fruits veggies salads soups smoothies etc only
fruit and veggies with a bit of oil of your choice. I love both olive and flax.
Also I will have tea (non-caffeine), and H2O.
Now nuts, seeds, and of course animals etc I will not have until after
I'm done, except in my case for the animals, don't do animals anymore.
My dates for this is begun today 1/21/12 - 4/21/12, two months...I'll
let you know how it goes...

Today I did have Brazil nuts, and chia seeds in my smoothie before seeing
the program.
and 4 apples
green powder
red powder
flax oil
H2O
delicious!
on to the green juice
7 stalks of celery
7 stalks of dandelion

On my juicer this came to
a bit more then 24 oz
I diluted above with about

to make about a liter.
I froze some, and drank
24oz of the juice during
the day.
This is not such a different day for me, except that I did not have any grains, or pasta. I missed chewing for sure...Tomorrow, no nuts, or seeds, nor grains etc.
Question 1: How do I feed myself? With life-affirming foods.

Hi guys,
I made it through 6 days of strictly juice (down 18 pds.) but My energy level was so bad it was difficult to function at work. Now I have added whole foods back into My diet, but sticking to the program and My energy level is back. I don't regret the fast, I think it has "cleansed My pallet" if you will and made it easier to stick with a whole foods plant based diet.
The weight loss has slowed substantially, but I guess that's to be expected.
I am guessing the fasting slowed My metabolism and now there will be an "adjustment" period. Anyone have any thoughts on this?
I also want to thank everyone for being so supportive!

up quite early a discomfort has been an urge to chew more then my smoothie the green juice is high octane for sure
no no headache and I think that is because I've been off the coffee
and meat, dairy for several months
so only urge to chew into a grain
and emotions surfacing along with increasing clarity more vivid dreams

and first day on only Green Juice! Almost done.
about 52oz energy all day.
A client of mine looks at me and
says, "You look even more different then
when you stopped eating meat, and running and all
that crazy stuff...What are you doing now?!"
I laughed and smiled and told him. He looked
at me very strangely...then asked, "Do you want
me to get you a pizza?" I said, "Thank you, no. I'm
good." We had a terrific session...smiling.

I mentioned in another thread that I juiced live, just picked greens I grew. Within days there is a notable difference in my skin. I drink about 20-26 oz of juice a day. I have not done a juice fast. Just recently I stopped coffee and that was huge for me. It's day 5, lost count, and I'm still getting headaches but I also stopped diary and meat. I decided to just go cold turkey with it all. My body is going through changes and sometimes its uncomfortable but I also feel it restoring. I'm having a huge cravings. My roommate sets the coffee pot to auto brew at 6:30am and I can smell it in the morning. I did not take everything out of the house and amazingly I have been cooking up food I had, I;m not longer eating and preparing it for my roommate. I honestly can't believe my will power. I have not cheated.
I might do a juice fast once I ramp up the garden. I start the seeds soon and by march I have cold hardy greens growing. I can't wait! I may try and get a buddy to fast with me and go for a full 10 days.

I always have drank a lot of water. I must drink at least a gallon or more. How do you think I get this awesome complexion and hardly any wrinkles?? lol
Growing greens is pretty easy actually if you ever want to to take the plunge I'm happy to help. Better yet come on out to the farm, I'll put you to work, you'll learn, get healthy and I'll get free labor. lol
I juice a lot of kale, romaine, spinach, bok choy, celery, fennel, even broccoli. Whatever I can get my hands on. I take the pulp which still has some nutrients and I feed it to my hens, blend in my vitamix and add it to my dog food and or compost it. As you know there's lots!
One of my favorite things lately when I'm craving sweets (which is several times a day :( ) I put frozen organic mango in the vitamix, a banana. pineapple and some rice milk. It's yummy!

I use agave because I enjoy the taste over honey for tea (once coffee). I'm an olive oil snob. Nothing is better then EVOO unless I'm using virgin coconut oil for something special. I dislike the taste of flax seed oil. I'd rather eat flax seeds hidden in something or eat raw hemp seeds instead.

I am in bed today kinda sick. I've been drinking and eating a lot of fresh and juiced greens and herbs. I also stopped dairy, coffee, meat, processed fats. I am in full detox mode and feeling like poo. :( This is about day 6 or 7 I think.
When I get sick my craving for sugar and carbs gets out of control.

I am looking for bread, fruit and nut cakes, maybe some cookies for Mia who is allergic to dairy. I try and find her stuff with organic ingredients- pumpkin, carrot, agave, honey, apples, etc.

Vegan Spiced Carrot Cake Cookies
adapted from Whole Foods
INGREDIENTS
1 cup raw unsalted walnuts
1 cup rolled oats
1/2 cup raisins
1/2 cup dried cranberries (use whatever combo of raisins and cranberries to equal 1 cup of dried-fruit))
1/2 cup whole-wheat pastry flour
1 1/4 teaspoons baking powder
1 1/4 teaspoons ground cinnamon
1/2 teaspoon ground ginger
2 carrots, grated
1 apple, grated
1 very ripe banana, peeled and mashed
1/4 cup almond milk
DIRECTIONS
Preheat oven to 350°F. Line 2 baking sheets with parchment paper or a silpat.
Combine walnuts, oats, raisins and cranberries in a food processor and pulse until finely ground. Transfer to a bowl and stir in flour, baking powder, cinnamon and ginger. Add carrots, apple, banana and almond milk and stir until combined. Drop by rounded tablespoons an inch apart on the prepared baking sheets, making about 24 cookies. Press down on each cookie with the back of a fork to flatten slightly. Bake until tops and bottoms are lightly browned, 20 to 25 minutes

What's New and Beneficial about Garbanzo Beans
There's now direct evidence about garbanzo beans and appetite! Participants in a recent study reported more satisfaction with their diet when garbanzo beans were included, and they consumed fewer processed food snacks during test weeks in the study when garbanzo beans were consumed. They also consumed less food overall when the diet was supplemented with garbanzo beans.
Garbanzo beans (like most legumes) have long been valued for their fiber content. Two cups provide the entire Daily Value! But the research news on garbanzos and fiber has recently taken us one step further by suggesting that the fiber benefits of garbanzo beans may go beyond the fiber benefits of other foods. In a recent study, two groups of participants received about 28 grams of fiber per day. But the two groups were very different in terms of their food sources for fiber. One group received dietary fiber primarily from garbanzo beans. The other group obtained dietary fiber from entirely different sources. The garbanzo bean group had better blood fat regulation, including lower levels of LDL-cholesterol, total cholesterol, and triglycerides.
In some parts of the world (for example, parts of India), garbanzo beans are eaten daily in large amounts and on a year-round basis. But a recent study has shown that we can obtain health benefits from garbanzo beans even when we eat much smaller amounts over a much shorter period of time. In this study, it took only one week of garbanzo bean consumption to improve participants' control of blood sugar and insulin secretion. Equally important, only one-third cup of the beans per day was needed to provide these blood-sugar related health benefits.
Garbanzos are a food you definitely want to keep on your "digestive support" list - especially if you are focusing on the colon. Between 65-75% of the fiber found in garbanzo beans is insoluble fiber, and this type of fiber remains undigested all the way down to the final segment of your large intestine (colon). Recent studies have shown that garbanzo bean fiber can be metabolized by bacteria in the colon to produce relatively large amounts of short chain fatty acids (SCFAs), including acetic, propionic, and butyric acid. These SCFAs provide fuel to the cells that line your intestinal wall. By supporting the energy needs of our intestinal cells, the SCFAs made from garbanzo fibers can help lower your risk of colon problems, including your risk of colon cancer.
Many public health organizations—including the American Diabetes Association, the American Heart Association, and the American Cancer Society—recommend legumes as a key food group for preventing disease and optimizing health. The 2005 Dietary Guidelines for Americans developed by the U.S. Department of Health and Human Services (USDHHS) and the U.S. Department of Agriculture (USDA) recommends 3 cups of legumes per week (based on a daily intake of approximately 2,000 calories). Because 1 serving of legumes was defined as 1/2 cup (cooked), the Dietary Guidelines for Americans come very close to this as they recommend of 1/2 cup of cooked legumes on a daily basis. Based on our own research review, we believe that 3 cups of legumes per week is a very reasonable goal for support of good health. However, we also believe that optimal health benefits from legumes may require consumption of legumes in greater amounts. This recommendation for greater amounts is based upon studies in which legumes have been consumed at least 4 days per week and in amounts falling into a 1-2 cup range per day. These studies suggest a higher optimal health benefit level than the 2005 Dietary Guidelines: instead of 3 cups of weekly legumes, 4-8 cups would become the goal range. Remember that any amount of legumes is going to make a helpful addition to your diet. And whatever weekly level of legumes you decide to target, we definitely recommend inclusion of garbanzo beans among your legume choices.
You will find that many of our recipes containing beans gives you the choice between using home cooked beans and canned beans. If you are in a hurry canned beans can be a healthy option. Unlike canned vegetables, which have lost much of their nutritional value, there is little difference in the nutritional value between canned garbanzo beans and those you cook yourself.
Many of our body systems are susceptible to oxidative stress and damage from reactive oxygen molecules. These systems include our cardiovascular system, our lungs, and our nervous system. Plentiful amounts of antioxidant nutrients are critical for the support of these body systems, and garbanzo beans are a remarkable food in terms of their antioxidant composition. While containing small but valuable amounts of conventional antioxidant nutrients like vitamin C, vitamin E, and beta-carotene, garbanzo beans also contain more concentrated supplies of antioxidant phytonutrients. These phytonutrients include the flavonoids quercetin, kaempferol, and myricetin (usually found in the outer layer of the beans), and the phenolic acids ferulic acid, chlorogenic acid, caffeic acid, and vanillic acid (usually found in the interior portion of the beans). Depending on the type of bean and color/thickness of the outer layer, garbanzo beans can also contain significant amounts of the anthocyanins delphinidin, cyanidin, and petunidin. The mineral manganese - a key antioxidant in the energy-producing mitochondria found inside most cells - is also provided in excellent amounts by garbanzo beans. In fact, just one cup of garbanzos can provide you with nearly 85% of the Daily Value (DV) for this key antioxidant. An increasing number of animal and human studies clearly show the ability of garbanzo beans to reduce our risk of heart disease, and we believe that an important part of this risk reduction is due to the fantastic antioxidant make-up of these legumes. Decreased Cardiovascular Risks.
While epidemiologic studies don't always single out garbanzo beans from other beans when determining their relationship to cardiovascular disease, garbanzo beans are almost always included in the list of legumes studied when heart disease is the focus of diet research. Large-scale epidemiologic studies give us a great look at potential heart benefits from garbanzo beans, and the evidence shows garbanzo beans to be outstanding in this area. As little as 3/4 cup of garbanzos per day can help lower our LDL-cholesterol, total cholesterol, and triglycerides in a one-month period of time. This cardiovascular support is likely to come from multiple aspects of garbanzo beans and their nutrient composition. About one-third of the fiber in garbanzo beans is soluble fiber, and this type of fiber is the type most closely associated with support of heart health. As mentioned earlier in this Health Benefits section, garbanzo beans also have a unique combination of antioxidants, and these antioxidants clearly provide support for our blood vessels walls and blood itself. And while garbanzo beans are not a fatty food, they do contain valuable amounts of polyunsaturated fatty acids, including alpha-linolenic acid (ALA), the body's omega-3 fatty acid from which all other omega-3 fats are made. There are about 70-80 milligrams of ALA in every cup of garbanzo beans, and there are about 2 grams of other polyunsaturated fatty acids. Risk of coronary heart disease is one of the specific types of cardiovascular risks that has been shown to be reduced by regular intake of garbanzo beans and other legumes. Better Regulation of Blood Sugar
No food macronutrients are more valuable for blood sugar regulation than fiber and protein. These two nutrients have an amazing ability to help stabilize the flow of food through our digestive tract and prevent the breakdown of food from taking place too quickly or too slowly. When food passes through us at a healthy rate of speed, release of sugar from the food is typically better regulated. Strong vitamin and mineral composition of a food - including strong antioxidant composition - can also help stabilize its digestive impact on our blood sugar. Given these basic relationships between nutrition and blood sugar control, it's not surprising to see garbanzo beans improving blood sugar regulation in research studies. We've seen studies in which participants consumed as little as 1/2 cup of garbanzo beanss per day and still witnessed better blood sugar control in as little as one week. In animal studies, garbanzo-based improvements in blood sugar regulation have partly been linked to better control of insulin output and overall insulin function. We suspect that some of these blood sugar benefits are directly related to improved digestive function. Garbanzo beans are a fantastic food for providing our digestive system with nutrient support. Even though research studies have shown blood sugar benefits with as little as 1/2 cup servings of garbanzo beans, we recommend that you consider more generous single servings of this delicious legume, in the range of up to 1 cup. Increased Chances for Satiety and Decreased Caloric Intake
We have been excited to see recent studies showing a positive relationship between garbanzo beans and weight management. The best single study we've seen in this regard has been a study that measured food satiety. "Food satiety" is the scientific term used to describe our satisfaction with food - how full it leaves us feeling, and how effective it is in eliminating our sense of hunger and appetite. Participants in a recent study were found to consume fewer snacks and fewer overall calories when supplementing their regular diet with garbanzo beans. They were also found to report greater food satiety, with experiences of reduced appetite and greater food satisfaction. We look forward to some large-scale studies in this area, and we expect to see a clear role being carved out for garbanzo beans in terms of weight loss and weight management. Along with their unusual combination of protein and fiber and their great ability to stabilize digestion, garbanzo beans also stand out as a food that is moderate in terms of calories. At approximately 250 calories per cup, we're talking about 10-15% of daily calories. In return for this moderate calorie cost, we get 50% of the DV for fiber and 29% of the DV for protein. Those nutrient amounts are great trade-offs for anyone struggling with weight loss or weight management. Description
Garbanzo beans (also known as chickpeas, Bengal grams, and Egyptian peas) have a delicious nutlike taste and buttery texture. They provide a concentrated source of protein that can be enjoyed year-round and are available either dried or canned. The Latin name for garbanzo beans, Cicer arietinum, means "small ram," reflecting the unique shape of this legume that somewhat resembles a ram's head.
Garbanzos have a delicious nutlike taste and a texture that is buttery, yet somewhat starchy and pasty. A very versatile legume, they are a noted ingredient in many Middle Eastern and Indian dishes such as hummus, falafels and curries.
Dried garbanzos are generally available in prepackaged containers as well as bulk bins. Just as with any other food that you may purchase in the bulk section, make sure that the bins containing the garbanzo beans are covered and that the store has a good product turnover so as to ensure maximum freshness. Whether purchasing garbanzo beans in bulk or in a packaged container, make sure that there is no evidence of moisture or insect damage and that they are whole and not cracked.
Canned garbanzo beans can be found in most supermarkets. Unlike canned vegetables, which have lost much of their nutritional value, canning does less damage to many of the key nutrients found in garbanzo beans. For example, many people rely on garbanzo beans (and other legumes) for protein and fiber in their daily diet, and canning only lowers the amount of these nutrients by about 15%. Many of the B vitamins hold up well in canned garbanzo beans, and some actually show up in higher concentrations in canned versus non-canned versions. An important exception here is folate, which is decreased by about 40-45% during canning. (If you are depending on your garbanzo beans for this important B vitamin, you will want to consider purchasing dry garbanzo beans and cooking them yourself.) Canning will generally lower the nutrient content of food since long cooking time and/or high heats are often involved. The nutritional impact of canning on vegetables can be extremely high since vegetables are best cooked very lightly for a very short period of time. Legumes like garbanzo beans are different than vegetables, however, since they require a long time to cook whether they are canned or cooked by you at home from the dry version.Also when it comes to canned garbanzo beans, we would suggest looking for those that do not contain extra salt or additives. Once you remove the beans from the can, place them in a strainer,rinse them thoroughly for one minute.
Store dried garbanzo beans in an airtight container in a cool, dry and dark place where they will keep for up to 12 months. If you purchase garbanzo beans at different times, store them separately since they may feature varying stages of dryness and therefore will require different cooking times. Cooked garbanzo beans will keep fresh in the refrigerator for about three days if placed in a covered container.
Tips for Preparing Garbanzo Beans
Before washing garbanzos, you should spread them out on a light colored plate or cooking surface to check for, and remove, small stones, debris or damaged beans. After this process, place them in a strainer, and rinse them thoroughly under cool running water.
To shorten their cooking time and make them easier to digest, garbanzo beans should be presoaked There are two basic methods for presoaking. For each you should start by placing the beans in a saucepan and adding two to three cups of water per cup of beans.
The first method is to boil the beans for two minutes, take pan off the heat, cover and allow it to stand for two hours. The alternative method is to simply soak the garbanzos in water for a predetermined period of time.
Based on research studies that we've seen about the soaking of garbanzo beans, we recommend a soaking period of at least 4 hours. Several potentially desirable chemical changes can take place during this 4-hour soaking period. First, there can be a reduction in the beans' raffinose-type oligosaccharides, and this reduction may result in fewer problems with flatulence when the beans are eventually consumed. Second, some of the phytase enzymes in the beans may become activated and help to transform some of the phytic acid found in the beans. When phytic acid gets converted into other substances, it is less likely to bind together with other nutrients and reduce their absorption.
To cook the garbanzo beans, you can either cook them on the stovetop or use a pressure cooker. For the stovetop method, add three cups of fresh water or broth for each cup of dried garbanzo beans. The liquid should be about one to two inches above the top of the legumes. Bring them to a boil, and then reduce the heat to simmer, partially covering the pot. If any foam develops, skim it off during the simmering process. Garbanzo beans generally take about one to one and one-half hours to become tender using this method. If the beans are still hard and no more water remains, add �-1 cup of hot water and continue to cook until soft
If you are running short on time, you can always use canned beans in your recipes. If the garbanzo beans have been packaged with salt or other additives, simply rinse them after opening the can to remove these unnecessary additions. Canned beans need to only be heated briefly for hot recipes while they can be used as is for salads or prepared cold dishes like hummus. A Few Quick Serving Ideas
Pur�e garbanzo beans, olive oil, fresh garlic, tahini and lemon juice to make a quick and easy hummus spread.
Sprinkle garbanzo beans with your favorite spices and herbs and eat as a snack.
Add garbanzo beans to your green salads.
Make a Middle Eastern-inspired pasta dish by adding garbanzo beans to penne mixed with olive oil, feta cheese and fresh oregano.
Simmer cooked garbanzo beans in a sauce of tomato paste, curry spices, and chopped walnuts and serve this dahl-type dish with brown rice.
Adding garbanzo beans to your vegetable soup will enhance its taste, texture and nutritional content.

I love beans and eat them almost everyday. Most of the time it's just opening a can and putting some on rice then tossing in some veggies.
It's been over a week since I made major changes and decided to become vegan or at least vegetarian. (I may do cheese later- goat, cultured) I bumped up my green juice to around 20 oz a day. My body was definitely detoxing, I felt the effects big time. My energy low, gas, cramps, huge headaches. I use to smoke a few cigs a day at the end of the day. A habit I picked up moreso the last two years. I completely stopped that and coffee which was huge huge for me. I drastically cut back sugar. Anyhow, I was feeling pretty yucky and then got hit with a really bad flu/cold and awful sore throat. I'm sticking with juicing and my diet but yesterday I did eat a lot of carbs. This is day three I'm sick with this sore throat, fever, body aches.
I've detoxed in the past and had some uncomfortably but nothing like I am now. I also never got sick while doing it. I wonder if it was the increase in greens and herbs?

This 5-5-5 is very doable. I do find that I miss chewing
when on the juice onlys day, but then its only 5 days and
I return to eating/chewing for another 5 days, very
doable for me.
Not posting each day because frankly its boring to me
to do the count down/up...aside from a low-grade
headache around days 11-14 I'm ok.
Fiber on this journey is very important, gets the toxins
out.

When I suddenly changed my diet within a few days I was feeling detox and especially by the 6th day. In fact I got an awful cold that has lasted over 10 days. I did have a little coffee and even some chicken. I hated cheated and I know that I can't go back to eating the way I was. It goes beyond health for me. I am still juicing and I do notice when I juice twice a day I have less cravings. I'm going to try and do a juice fast maybe at the end of the month once my body stabilizes more. I am only just now starting to feel my energy. This cold truly kicked my butt and I don't normally stay sick for so long.

Also, I'm willing to bet that your cold was part of your detox. One thing I know has been important for me is to make blended green juice. It contains the fiber that eases the liver's job of eliminating toxins because you eliminate a lot of waste/toxins from the intestinal tract.
I also add another method mentioned in Gerson's therapy, pm me for that if you'd like information on it.

I juice kale, greens, ginger, etc, every single day. My juicer also puts some of the fiber into it. I did use to make green smoothies. I honestly dislike them but if you're saying it would make detox easier then I'll suck them down! lol
As for this cold being part of my detox, all I can say is wow. I get sick sometimes but only a few days. I feel like my resistance was super low as it was and I decided that since I had some "help" I would go for it. I had no idea I would get the cold and get thrown down so hard. I figured a week max, I'll be tired, have headache, etc. I've fasted before. This was on a while other level.
I think I'll juice and eat healthy, as I normally do, cut back on some things. I am drinking a cup of coffee a day. Then once i am feeling better I'll do one day juice fast then each month add another day. I think just focusing on a plant based diet is really the key.

Has anyone seen a site with really beautiful vegan dinner party food? I can see the deserts from some already posted here but the main courses? I'm just curious, no need for recipes just ideas.

I was reading blogs today with a fantasy dinner party theme. I came up with a great list, but maybe half the list is probably vegan and some are gluten free. Has anyone seen a site with really beautiful vegan dinner party food? I can see the deserts from some already posted here but the main courses? I'm just curious, no need for recipes just ideas.

this is a green smoother recipe from WF, slightly modified to my tastes. i also cut their recipe in half (shown below) to avoid the temptation of drinking second glass = addl calories.
Green Smoothie (serves 1)
1-1/2 cup baby spinach leaves (prewashed) or fresh kale leaves (washed & deveined), or combo of dark leafy greens of choice
3/4 cup unsweetened flax milk (yummy, nutritious and soooo low in calories)
1/4 cup fresh blueberries
1/2 frozen banana (freeze sliced so they're easy enough for the blender to manage)
2-3 dried apricots (chop before putting in blender)
throw it all in a blender and pulse 'til as smooth as you wish.
approx 160 calories per serving.
NOTE: Old Skool blenders work really well (i have my mom's old Osterizer). using fresh blueberries keeps the smoothie a brightish green -- when i use frozen blueberries the color becomes a very unappetizing grey/purple.

they're open to having it...while they continue

Today's green juice
carrot spinach lemon celery kale
H2O and I did add some Udo's Omega 3 & 6 oil (just a bit).
So, spent most of the day helping the owner of the hair styling place
where I get my hair cut...most of us have been going there for years
and there are several other butches...anyway, earlier this week there
was a fire and one of her walls needed to come down, cleaned out wiring,
and put tarps up until the contractors come in next week...so we
all chipped in our time, and talents...smiling...and had some great
fun doing the physical work, and supporting our hair stylist...who
has become a friend...and at the end of the day, I got my
great hair cut.
Why am I sharing this? To share about the blessing of community,
and giving, and receiving support when you need it, or
can give it...I am grateful for this day and the opportunity
to care for someone in a "concrete" way.

i made this today, it was amazing!
Easy Vegan Chocolate Cake
Ingredients (use vegan versions):
3 cups flour
2 cups sugar
6 tablespoons cocoa powder
2 teaspoons baking soda
1 teaspoon salt
2 cups water
3/4 cup vegetable oil
2 tablespoons vinegar
2 teaspoons vanilla
Directions:
1. Preheat oven to 350 degrees F.
2. Thoroughly mix dry ingredients first (flour, sugar, cocoa powder, baking soda, and salt).
3. Mix in wet ingredients (water, vegetable oil, vinegar, and vanilla). Continue mixing until you obtain an even batter (no lumps).
4. Pour into a floured cake pan and bake for approximately 40 minutes.
I recommend topping the cake with Chocolate Frosting by Sarah.
Serves: 12 slices, Preparation time: 15 minutes

made these this weekned and they was awesome!
Recipe:
makes about 24
1 cup (packed) pitted medjool dates
1 cup chopped walnuts/pecans
1/2 cup old fashioned oats
2 small carrots, peeled and shredded
1 tsp cinnamon
1/2 tsp ground ginger
1/4 tsp nutmeg
1/2 cup dried unsweetened coconut (for rolling)
Combine all ingredients (except coconut) in a food processor and pulse until mixed but not smooth. Taste and add more spices according to your tastes.
Spread the coconut on a plate
Moisten your hands so the mixture doesn’t stick. Pick up about 2 tsp at a time and roll into a ball between your hands. Roll in coconut and flatten slightly, then place on a plate. Repeat with remaining dough, then chill for at least an hour.

Love avocados but my dilemma with them has always been how do you tell when they are perfectly ripe? I won't eat them if they have that little brown ring around them :blink: If anyone has any tips on how to tell when its ready I would so appreciate it! Thanks Glenn!

for a little bit of a different twist on lemon try Meyer lemons they are magical! Whole Foods Inc. carries them, right now I love them so much I'm not using the other kind..they remind me of my grandmother's round lemons she grew in her garden in Makawao..(f)

GREAT thread :) My wife and daughter have made the switch to Vegetarianism and I think I've landed more in the neighborhood of Pescetarianism. I just don't think I can give up fish & seafood. I look forward to reading about everyone's experiences and talking about good food!

Classic Macaroons
2 cups dried, unsweetened coconut
½ cup almond flour
¼ cup coconut butter
½ cup maple syrup
1/8 teaspoon vanilla
Sea salt to taste
Mix all ingredients together. Roll into balls. Refrigerate until solid. If you're not totally raw, try these dipped in nutella..you will thank me

continuing from my previous post today...its been an incredible journey
detoxing and rebuilding at the same time really incredible in that the detoxing
has been occurring on multiple levels (ie., physical, emotional, mental), and
spiritual which is has been a completely unexpected gift.
While I still have a bit over two weeks to complete this first 5-5-5, I am
planning my return to eating grains, nuts, seeds(missing my chia), slowly
will incorporate quinoa, rice, and beans. And will continue to make my
green smoothies for breakfast and the day at the office.
Have had to eliminate running this month and instead am power walking
to satisfy my love of being outdoors but not lose more weight and its
working. And yes, I had to shop for new shirts, and pants, a bit of not
fun time since I don't like to shop but got them and got out quickly...smiling.
Following is a nutritious veggie soup for those of you who are looking
for a good soup. Sounds delicious, I can vouch for the carrot juice base
which I am using today minus the mushrooms, and beans. Enjoy.
Haven't been on here for a bit so the person that pm'ed me about starting
their own detox congrats to you! And feel free to pm me your questions if
you'd like to...the more the merrier in reclaiming our health and wellness.

Hi Veggie Lovers,
Today is the last day of my green juice/green veggies 5-5-5 reboot.
Today is the 3rd day of green juicing
Italian parsley kale celery ginger
H20 and Udo's Omega 3 & 6 oil
So, how will I return to grains, legumes, nuts, and seeds?
Gently. Tomorrow my plan is to make a small amount of spelt pasta
and use blended black beans as a sauce with now the ever present
green veggie (kale steamed), with seaweed on the side (have missed seafood since the Gulf spill but seaweed helps the craving for seafood)
Green smoothie in the morning, and this main meal in the early afternoon.
Its been an enlightening experience on many levels, much of which I'm sure
I am not aware of yet....my mind is quieter, calmer, clearer...my body has lost excess weight I didn't think made a difference to my quality of life, it has made a difference.
So, what now? Time to connect the dots balance my life in terms of activism
regarding my decision to no longer eat meat.
In other words, how does the choice to eat to live impact what I do in the world, how it will effect my relationships with family, friends, who I vote for or not...I have questioned how this choice is connected to the larger political, economic situation in this country and the rest of the global community. How will I continue to share and contribute to my family, and society?
I'll again be posting videos that have positively "opened my eyes" during these last three months on my Food Documentary thread, and Food Discussion threads.

I added garlic, onions to the beans, blended...yes I had sauteed the garlic
and onions first and cooked the beans so the blend was hot, then I re-heated
for about a minute. Poured this over my spelt pasta, and had a salad (the biggest part of this meal), with red/yellow peppers, romaine lettuce, olives.
It was good, but something was missing from the bean blend...what I have no idea...so, if you have any suggestions for veggie cook books I could use them...and I feel very full...learning as I go, enjoy your week Veggie Lovers, Greco

I picked up asparagas at the farmers market today. Had the old george foreman out to cook it. YUM....I couldn't cook them fast enough.

It may not be possible to duplicate the mexi-bean flavor because they often put bacon grease/lard into their beans when they drill them or fry them in a little of this. You might try adding roasted garlic as this can add another dimension of flavor that is awfully good.

A good way to get a smokey flavor in the beans would be to use Brewers Yeast. It adds a lot of nutrition and flavor to food.
It may not be possible to duplicate the mexi-bean flavor because they often put bacon grease/lard into their beans when they drill them or fry them in a little of this. You might try adding roasted garlic as this can add another dimension of flavor that is awfully good.

I am not currently a vegan or vegetarian, although I do love and eat this cuisine often. I used to be really strict and "force" myself into being vegetarian, but it made me feel rebellious. And I thought how silly to rebel against myself????? Now I am trying to listen to my body and delight her in what she calls for. It's been a long process for me making peace with food, as I can be an emotional eater. So I am an omnivore with wicked vegan desert tendencies. Love veggie cuisine, but also the grounding of animal products.
I just wanted to say I am so enjoying the recipe ideas! Yummy, it's so yummy......

Greco: Try steaming the Asparagus till it is firm but just turns bright green, then freeze. That is how I do green beans, and it may just work for Asparagus as well?

red onion, olives/capers, garlic, ginger
broccoli
sauteed in coconut oil (very little just enough
to make onions translucent, black pepper (ground)
over
angel hair pasta and tossed w/a little olive oil
and ground walnuts
with a celery and cucumber salad
w/lemon olive oil dressing
and green w/mint tea
delicious.
enjoy having am green smoothie
and one meal these days
with a tea and a slice of spelt bread
with fruit spread later in the day
if I'm hungry.
enjoying cooking again.
Also FYI the brand of Westsoy
has soy milk that is organic
and verified non-gmo

I was lacto/ovo veg for over a decade and vegan for a few years. Missed chicken and eggs and dairy *nothing else really* and was eating it but seems am going back towards my veggie roots again for a variety of reasons.

I have a great greens recipie.
Greek Greens
Take 4 cups of greens, any will do and steam in a little bit of water until they are wilted, and tender, but not mushy. Obviously Spinach will take much less time than beet greens or collards for example. Drain them and press a bit so they are not soggy and water logged.
Sautee 1 to 2 cloves minced garlic(I prefer more as I love garlic, but you may use less) in 2 tablespoons Olive Oil. Satuee until tender, 2 mins aprox. Add 1/2 to 1 teaspoon of lemon juice and a sprinkle of salt to taste.
Mix the greens and the Olive Oil mixture together, add Feta Cheese crumbles, about 1/4 cup will do.
Sometimes I crisp up some tofu and add that also. It tastes great and even my kids adore them this way.
I also don't make Sloppy Joes with meat or crumbles. I use Green Lentils instead and add sloppy joe mix, some brown sugar and a bit of ketchup. I cook in the crock pot and leave burger buns on the counter for the kids when they get home from school.

Take 4 cups of greens, any will do and steam in a little bit of water until they are wilted, and tender, but not mushy. Obviously Spinach will take much less time than beet greens or collards for example. Drain them and press a bit so they are not soggy and water logged.
Sautee 1 to 2 cloves minced garlic(I prefer more as I love garlic, but you may use less) in 2 tablespoons Olive Oil. Satuee until tender, 2 mins aprox. Add 1/2 to 1 teaspoon of lemon juice and a sprinkle of salt to taste.
Mix the greens and the Olive Oil mixture together, add Feta Cheese crumbles, about 1/4 cup will do.
Sometimes I crisp up some tofu and add that also. It tastes great and even my kids adore them this way.
I also don't make Sloppy Joes with meat or crumbles. I use Green Lentils instead and add sloppy joe mix, some brown sugar and a bit of ketchup. I cook in the crock pot and leave burger buns on the counter for the kids when they get home from school.

Made a new dish that passed the "Husbutch Test." I nearly-dry-sauteed french beans in fresh ginger, garlic, and sesame oil (very, very little oil) for a long time (gave it a smoky flavor). I separately sauteed mushrooms, then poured the juice from the mushrooms into the pan with the beans and also added lite coconut milk. It was quite mild, because BB doesn't like spice (I love spice!) yet flavorful, a bit Thai-like.

This evening had a strong desire for

but where were my olives?!
No olives no capers so
added my own hot salsa
which is made from green chillies
a bit of lemon juice and jalapenos
Cool sensual dish for this hot weather
and very satisfying.

Both sound like great recipes! How do you make your tofu when you do it for this first recipe? You have good ideas!
I use the pre cubed type(I cheat) and put some olive oil in a pan and toss the cubes in when the oil is hot. I add some garlic or onion powder and fry each side until crisp. You can add anything at all to Tofu. Sometimes I add curry powder or Cumin, anything goes. Tofu soaks up what you put on it.
I have made a great Hot Lime Tofu. You just take slices of Tofu, and dip them into lime juice, then you dredge into Cajun seasoning(I get it from the store) and put on an oiled dish to bake. Turn them after a bit and both sides get crispy. Sometimes I spray the Tofu with a non stick srapy oil of some type to help it crisp in the oven. I use it in sandwiches, for a main dish etc. Just remember to press you Tofu first so it is not too wet.

I usually bake it at 375 and about 15 mins a side. Keep a watch on it however, as it will really depend on your oven. It will also need to be flipped one time so both sides bake. It is actually easier to use a broiler, but I don't prefer to, so I bake it instead.
