Homemade Sloppy Joes:
Ingredients 2 tablespoons olive oil 2 red bell peppers, seeded and cut into small dice 2 medium yellow onions, small dice 4 medium garlic cloves, finely chopped 1/4 cup tomato paste 2 pounds lean ground beef 2 teaspoons chili powder 2 teaspoons ground cumin 2 teaspoons kosher salt, plus more as needed 1 jar passata sauce 1/4 cup water 2 tablespoons cider vinegar 2 tablespoons Worcestershire sauce 1 tablespoon packed dark brown sugar 6 to 8 hamburger buns, split and toasted Instructions 1 Heat the oil in a large pot or Dutch oven over medium heat until shimmering. Add the peppers, onion, and garlic, season with salt, and cook, stirring occasionally, until the vegetables have softened, about 6 minutes. 2 Add the tomato paste, stir to combine, and cook until the raw flavor has cooked out, about 1 minute. 3 Increase the heat to medium high, add the ground beef and cook, breaking the meat into smaller pieces with a wooden spoon, until it’s just cooked. 4 Add the chili powder, cumin, and measured salt, stir to coat the meat and vegetables, and cook until fragrant, about 1 minute. 5 Add the tomato sauce, water, vinegar, Worcestershire, and brown sugar, stir to combine, and bring to a boil. Reduce the heat to low and simmer, stirring occasionally, until the flavors meld and the mixture thickens, about 30 minutes. Serve immediately. |

I had a cup of chipotle black bean soup with green onions and shredded cheese, a sandwich with multigrain bread, horseradish mustard, ultra thin provolone and black forest ham., 2 Claussen spears, sweet tea with Organic Agave Five, fizzy water and mini chocolate chip cookies.

I had okra in the fridge..I have never cooked okra before and had only eaten it once in my life time. So, I did a bit of searching and decided to make okra cornmeal cakes (cornmeal, okra, red and yellow peppers, onion, crushed Portuguese hot peppers, garlic, baking powder, salt and pepper, fried in a little oil until golden brown on each side). On top of that went a chipotle vegan mayo, avocado, vegan sour cream, vegan cream cheese, salt and pepper whipped together with chopped tomato. On the side was steamed cabbage and onions.

today I was busy cooking..so there are options
1) I had frozen the jambalaya (without the rice) the other day because I wasn't ready to eat it and still needed to adjust the flavors (to spicy for some). I took that out and added a few things to reduce the heat from the peppers and cooked up the rice to finish it off. 2) I made a Tuscan Bulgar (because I couldn't find farro and didn't want quinoa) soup with white beans and basil 3) I have pinto beans in the crock pot and I have yeast bread on it's first rise and should be ready for dinner |
