I made a big pot of Beef & Sweet Potato Soup w/ Greens. In this instance I used collards for the greens and added a yellow onion to the mix. It's so good and warm too, so it knocks the cold right off of you! :)

I had a bowl of home style vanilla ice cream with lots of butter scotch fudge topping, throw in a pecan or two with a big fat cherry set in a mountain of real whip cream. I know, I know my bad but dam it was good.

I made a delicious soup with chicken breast, kale, white beans, diced tomatoes, zucchini and squash simmered in chicken broth. Really good for a throw this and that together soup.

I made tandoori chicken and veggies. A sweet potato on the side.

I damn near spiced myself out....but my tolerance is high...as is my love of tandoori....

Made some chicken w/korma sauce in the crockpot yesterday, so tonight it was leftovers. I have to say, I hate how the crockpot turns chicken into mush. Need to try some different meats.

Later, for the Democratic debate (will O'Malley please go away and stop wasting time!), I do have some treats lined up...maybe a Dorito or two...and there is that pecan square with my name on it!

Dinner

I had a picadillo taco with chips and salsa. Ice tea to drink.

Gemme 01-25-2016 07:55 PM

I had multigrain chips with fresh salsa and a little bit of guac. Super yummy!

Chicken thighs and drums hold up better in the crock...especially bone in. I pit them in frozen most times. I think that may actually help as well..

JDeere 01-25-2016 08:32 PM

Sausage balls?? They really do use every part of the pig...;)

Im going to start, sweet potato chipotle chili. However upon further ingredient investigation , there is no beans. ?? Has cauliflower in it though. I'm going to add, smoked pecan jalapeño sausage at the end. Perfect chilly day to try this.
