I grazed for dinner including ham, queso, chips, and salsa.

Grilled chicken, sweet potato hash, Asian cucumber salad.

Griilled cheese made with low carb rye bread, sharp chedder, sausage and spicy mustard, so yummy

Rice and toast. I'm on a high carb diet. 😉

well, it's friday..so, that means I spent the afternoon in the kitchen making food for the weekend.

Lean Cuisine's Macaroni and Beef. I added some Mexican shredded cheese to it and am drinking Nestea with lemon. It won't hold me long but it works for now.

I cooked after a long hiatus away from the stove...
I found a recipe for a sriricha chicken that sounded awesome. I thought I bookmarked it but...I didn't. So I found a similar recipe and winged it. It.was.awesome. I started with oil in my cast iron pan...need a big pan for this... Sliced unpeeled potatoes thin..put them in the oil on low. Made the sauce which was 1/4c brown sugar and 4tbs sriricha sauce. Cut chicken breast x2 and seasoned them with salt and pepper. Dipped chunks of chicken in the sauce and placed it in the pan with the taters. Added fresh green beans and a little water. At the end I added sliced mushrooms. Literally this was awesome sauce. I just wish I had minced garlic to start with. And I wanted to add frozen pepper blend but my pan runneth over. I need a larger cast iron pan. |

It was late for me last night. I had chicken fettuccini with some red grapes, 7 Up and whole grain Goldfish crackers.

I purchased a pack of sugar & nitrate free beef franks with my last meat order to try and see if I like them or not. I think I will run to the store and get stuff to make coleslaw and have slaw dogs tonight.

I had beef and peppers but it's not going to be enough. I might have to crack the freezer for some ice cream.
