I have been trying to stick as close to a Paleo eating plan as I can for the last month, and I have been doing really good about it, but forgot to take something out of the freezer for dinner tonight. So, I decided to order an all meat pizza on thin crust with minimum sauce. I will make a salad to go with it. Maybe I will toss the crust and have a pizza salad. Lol! Drumsticks are thawing for tomorrow. :)

It was chicken! I sautéed a huge chicken breast in an Asian marinade in my cast iron skillet and basted it with the reduced marinade as it cooked. The chicken was delicious. I split it and ate half. Half is in the fridge.

For my veggie, I tried something I hate. I know I hate it but thought I'd try it a different way and maybe not hate it so much. It's moved THISMUCH on the foods I hate scale but still really doesn't make me happy. Brussels sprouts. They were steamed with sea salt and cracked pepper. I still had to douse them in chicken juice and more marinade before I could choke them down and had to cut them into slices so they didn't look like leafy testicles anymore. They are so disgusting but have so many vitamins. Nature's truly cruel.

I had to wash the taste down with some gummy bears and flavored water.

:tea:

I've found that explosive taste of Brussel sprouts can be disguised by slicing them, ( like you would a head of lettuce, to almost the thick core) sautéing them in butter with salt and pepper, squeeze lemon over it. It tastes so much better. (Even with browned edges, if you turn up the heat. Add other goodies, garlic, sunflower seeds, be creative.)

You do this with spinach, or any other greens...get all the benefits while tasting so good.

Try it again!

My roommate begs me to make my version of sprouts...slice, add to skillet with a small amount of bacon grease, brown sliced side down until caramelized nice, turn heat down, add at least two tablespoons of local, dark honey then a teaspoon (or more to taste) of Balsamic Vinegar.stir good and serve hot.. The honey really sets it off nice. I've used both frozen or fresh for this...make sure to cook the fresh completely through, so the honey can void the bitter taste.

The bacon grease would eliminate the need to eat them since I would do it for the health benefits, so I think I'll just pass going forward.

If I was nearby and you were making it, I'd be happy to have some of yours though. That sounds like it might just do the trick!

Tonight I had kale salad for dinner.
