Basically was trying to use up leftovers today for supper after doing a fridge clean-out. Now super happy to be rid of all the leftovers with minimal food waste, lol.

Last of some leftover rice noodles mixed with a half can of leftover lentils, a bunch of leftover shriveling "on the verge" veggies (broccoli, cherry tomatoes, 1 mushroom lol) sauteed in olive oil. Then some Pad Thai sauce mixed into it all once finished.

I ended up making grilled cheese for myself with some raw string beans sprinkled with sea salt and chili powder, and my spouse just wanted a fried egg sandwich. And chocolate brownies for dessert for her, I had frozen grapes.:hangloose:

Short ribs on top of a cheese/grits cake sprinkled with crackling, green salad, and a glass of red wine.

Included pieces of marinated watermelon to cleanse the palate.

It was delicious.

Been thinking, maybe need to buy a cow to milk ... I have plenty of land for her in the back ... no big quiz to build her a barn. Just joking, I cannot drink it straight from the source. It tastes nasty to me.

I just pan-fried some chicken and am making a big salad with spinach and romaine hearts, sun-dried tomato, black olive, feta cheese, roasted red pepper, roasted garlic, tons of cracked black pepper, and a lemony-herb vinaigrette that I whipped up.

I'm making a big pot of rice with black beans, garlic, corn, black olives, spices, and some ham steak for my spouse (she has to have her meat), onion, etc. And a pan of corn bread to go along with it.:hangloose:

I've got some 93% lean ground turkey that I'm going to cook up and separate for future meals. I think dinner tonight will be a low carb whole grain wrap with the turkey, veggies and mixed greens, shredded cheese and guac. Yeah, that sounds good.

Vegan lasagna. Its my second time making it, first time turned out great so super excited. On top of the lasagna noodles and tomato sauce, I'm using lentils, yellow zucchini, red pepper (last time I used mushrooms, but not mushrooms at the market this week so red peppers it is), and daiya cheddar on each layer.

Project lasagna is gonna be commencing shortly. Takes longer than I originally thought to cook!
