I made pizza:

1 cheese for the vegetarian

1 garlic and oil based with spinach, sun dried tomato, sauteed mushrooms and onion, sweet peppers and light cheese (mine)

1 tomato based with mushroom, onions and olives

1/2 tomato based spinach, mushroom, onions and peppers

1/2 garlic and oil based with spinach, mushroom, onions, peppers sun dried tomato no cheese

I should have made the crust thicker...but live and learn

I just came to the alarming realisation that I didn't have any protein tonight...:seeingstars: Can see myself getting a bit hungry again before bed.

Anyway, my supper was:

Rice mixed with peanut sauce, leftover oyster mushrooms and three banana peppers sauteed (direct from farmer...part of my awesome Niagara fruit/veggie stand haul from this past weekend!). Also ate three peaches while I was making supper, lol (also from Niagara haul).

Skipped dinner in lieu of adult activities....ie painting my ceilings...

We ate out and the best part was the Shiner Beer. I haven't had a beer in awhile. It was so ice cold, it was just what I was waiting for !!

These are so good! We get them sometimes too! But I will say they are only second best to my partner's homemade vegan fish n' chips :D ...but those Gardein ones are still pretty damn good! We also get their vegan beef tips sometimes too, those go real good in stir fry!

We've tried a few different Gardein products, and we've liked all of them. Pete especially likes Mandarin Chik'n, which we eat with vegetarian dumplings and a bowl of edamame. We call this meal 'junky Chinese food' since it's like something you get at a food court.

I wonder how your partner makes the fried 'fish'.

Have tried the Mandarin Chicken as well but don't eat it as often. Beef tips and fish are the big ones for us haha.

For the home made vegan fish n' chips I'm not sure the details as my partner's the one who makes that recipe but I know it involves frying tempeh in homemade beer batter. So addictive!

Today is friday..sooo

1) sauteed up mushrooms, onions and peppers for sandwiches to be served with fries

2) homemade veggie pot pies

3) pancakes for a quick heat up breakfast

4) butternut squash, onions, mushroom, spinach with vegan cheese galette

I'm baking a pasta casserole, for supper tonight: protein -plus pasta shells, sliced portabello mushrooms, sweet onion, tiny broccoli buds, roasted cloves of garlic and smothered in an Parmesean type sauce. I'm also thinking about making some kind of sweet dessert.... maybe Lemon bars with graham cracker crust or maybe some small apple tarts? Lemon herbal tea to sip on, after supper.
