It's very chilly outside, lots of rain and wind, so I wanted something to warm.me up......
I'm having a few heart shaped waffles, with lots of Maple-Cinnamon syrup, no butter, and two eggs over easy. Bacon, too (crispy, nearly burnt). And a big cup of homemade cocoa, made with coconut milk and a few sprinkles of cinnamon on top. :stillheart: |
Chicken soup...my soul feels very good now.

It's been a busy day..so, I threw together a couple simple things.
sauteed mushrooms and onions...made sun dried tomato mayo for sandwiches to be served with fries and bean burritos and spanish rice |
Half of a cheese pizza from Pieology and a small salad. The pizza is leftover from lunch.

Tacos (completely meatless) and a delicious strawberry shortcake dessert (with extra whipped cream).

I started dinner before that on-call call came thru...it was a quick sit down, but it was good :)

I had grilled chicken breast with King's Hawaiian Smoky Bacon BBQ Sauce (did you know that they make sauce now? Rolls AND sauce?!? Squee!) and fresh salsa that was more like pico de gallo, guac and chipotle cantina thin chips. Grape sucker for dessert.

We had fresh fruit salad with a plate of assorted cheese and crackers.

We had petite sirloin steak wrapped in bacon, mashed sweet potatos, and a spinach salad with all kinds of goodies in it.
And we just had baked apples with vanilla yogurt on top. |
yesterday's Ramen noodles...competition of the 1000 year old duck egg.

Last night, I had a new version of a taco salad: baby arugula, grape tomatoes, shredded cheese, light sour cream, chipotle Cantina broken chip bits and the concoction of 90% lean beef mixture I made earlier in the week. It was good.

Dinner
eFor dinner I made an egg omelet with chunks of ham, green peppers, onion and shredded cheese, chopped tomato........ was awesome.

I haven't been to the store since I got home from my knee surgery, so I so I got a good grip on myself to make a trip to the market. They had some fresh cut grass fed beef so I got some really good roast. So tonight I'm cooking a slow cooked roast covered in mushrooms with various herbed and spices. To go with it will be a pot of fresh string bens.

Sriracha wings, pasta salad with a bunch of veggies in it, and most likely a cuke and grape tomato salad with a citrus and olive oil dressing.

Last night i made chicken fajitas and a big pot of ham, corn potato chowder per Daddy's request. There's plenty of both so thats dinner tonight.

Fall has arrived with a high of 65. So, I have a pot of Tuscan Bean and Veg Soup in the crock pot.
Veg Broth, Onions, celery, carrots, spinach, mushrooms, zucchini, northern beans and kidney beans, a can of diced tomatoes, basil, oregano, thyme, salt and pepper to taste. in the other crock pot I put on some pinto beans to either eat with rice or to make something else with them. |

Went shopping today and got fresh everything SO. Making dinner which will be shrimp, scallops, chopped broccoli, chopped sweet red peppers , angel hair pasta and white sauce with my choice of spices (haven't decieded yet.
