My stepdaughter cooked a meatloaf stuffed with mashed potatoes and cheese, asparagus, dinner rolls. :hangloose: I did the dishes.:jester:

Last night was baked chicken and salad. Tonight will be a low-carb version of Chicken Piccata over riced cauliflower, I think.

Chili's.......
I had the 3 for me deal. I ate some chips with the loaded Queso Blanco, a small salad, & I brought home the chicken skillet with cilantro, peppers & onions, & lime. I ate a small couple bites of the molten lava cake...OMG!!! |
I had two grilled cheese sandwiches and my spouse had leftovers. Donuts for dessert.:chocolate::chocolate:

Dinner
We had brisket, ribs, sausage, German potato salad, cucumber salad (cucumbers yogurt, vinager, and dill), and black forest cherry trifle for dessert. Cocktails to drink.

Italian sausage lasagna, and garlic bread, followed a little later by a piece of apple pie.

I made a copy cat recipe from PF Chang's. ..Mongolian beef. I even diagonally sliced the green onions on top. Sprinkled sesame seeds on top as well. Roasted sweet potatoes tossed in coconut oil were on the side.

cereal.. Its all I could force down my raw throat. I hate being this sick.. Tomorrow will be 3 days missed work plus the weekend..

Tonight (when it comes around) I will be making spaghetti and meatballs. I make the sauce from scratch..right down to the San Marzano tomatoes, vegetables and herbs I use. Dinner can't come soon enough!

Last night we tried new things for dinner! I bought kohlrabi two weeks ago and have been curious to try it out. We decided to go with mashing it, so I tried to peel it as much as possible, chop it up (also chopped up some potatoes to go with it), and then my partner boiled and mashed it. I should have tried to get more of the peel off (wasn't easy to peel I found), some bits were still a bit like when broccoli stems get a bit woody, overall it was still very good! Very cool taste, almost like a mild mix between broccoli and potato. The stems/leaves I'm saving for stirfry later this week.
I also pan fried Viana cowgirl steaks. It was our first time trying these and we liked them quite a bit. This is the same brand as the vegan chicken nuggets I like, and I found the texture of the two very similar. These vegan steaks were pretty thick too, so pretty filling. So yeah, that's what we had last night. Vegan cowgirl steaks and mash kohlrabi and potato. To drink I just had some earl grey tea. Tonight will be a squash soup I think, my partner did a lot of cooking after dinner last night so more details to come on the squash soup haha. |
Everyone's dinner sounds soooo good!
I took some leftover wings out of the freezer and reheated them in the oven, and made a raw veggie salad using carrots, grape tomatoes, english cucumber and half of a giant FL avocado cut into chunks. I sprinkled it with some herbs and a few dashes of sweet vinegar and olive oil. I also made my favorite stand by, spinach sauteed with garlic and a little evoo. |
Dinner
I wasn't very hungry so I had a little roasted sweet potato and cauliflower with bread crumbs.
It has come to my attention that apple strudel is being made. Yummy!! |

I went and saw my sweet baby girl god daughter and her mom had homemade soup and fresh salmon and rice... delicious.
