I have been trying to cook more lately, instead of just throwing an Atkins frozen meal in the microwave.
Tonight, baked chicken thighs with veggies brushed with a little olive oil and put all around the chicken. I cut-up butternut squash, carrots, onions, zucchini and Brussels sprouts. Everything roasted to a nice golden brown. A one-pan wonder! |
I've been grazing. I had a small veggie wrap around 4pm, a cup of soup around 7pm, and a cup of cottage cheese at 9pm. Think I'm done.

I had mini red velvet cupcakes and pepperoni pizza.

My grandmother sent me chow mein noodles from fallriver. Anyone from MA understands just how special these things are...they aren't those soggy noodles like every place else..these are crunchy bits of joy. Anyway, I made a vegan chow mein gravy with veggies to go ontop. Yup good stuff

A chili cheese burger and onion rings from the Varsity, with a Coke.
OK, OK, full disclosure, I also had a fried apple pie. |
Spinach sauteed with minced garlic and topped with a couple of over easy fried eggs. Sooo good!

I made mexican rice and bean burritos as well as gnochi with a chunky tomato and basil with on io ns, mushrooms, and spinach

Oyster stew or french onion soup—still deciding.

Roasted drumsticks, homemade mac n cheese, Brussels sprouts, and leftover sauteed spinach.

Wonderful cashews sprinkled in sea salt and roasted with peanut oil,cut in halves and pieces.

Pizza tonight.
