A green smoothie with spinach and berries and other stuff and chocolate chip pecan cookies because I planned to have them 'later'.

Time flew by me today...I didn't realize that I worked right through dinner. :|

I just spatchcocked my first chicken. I'll be making garlicky roasted spatchcock chicken. It'll have red potatoes, brussel sprouts, carrots and onion. I hope it turns out good because I invited my sister and her boyfriend for dinner.

Sidenote - it's fun saying spatchcock. :D

Spatchcock is when you cut out the backbone of the fowl then break the breastbone. It allows the bird to lay flat and cook more evenly.

I have just discovered the best brand of canned turnip greens. It is Allen brand. They are seasoned.

these turnip greens, cornbread and sliced tomatos with large milk

Leftover white chicken chili topped with chunks of avocado and sour cream. Even better than it was last night.

We went out to a new restaurant/brewery last night, and everything was delicious.
- Wood fired white pizza with ricotta, buffalo, pecorino and mascarpone cheeses
- Pressed Cuban sandwich with pork belly, Swiss cheese, mustard and house-made sour pickles
- I sampled a Russian Imperial Stout that was delicious and smooth, but I settled on a Coffee Porter that was also smooth and had just the right carbonation.

If you google “instant pot stuffed zucchini”, it is the first recipe that comes up. It has dill, cumin, parsley, rice and grated onion in the meat mixture and it is fabulous. I cooked it the 25 minutes suggested, but 20 minutes would be better for the texture of the zucchini.
