Ms made us baked chicken stuffed with garlic, onions, and she smeared it with a Parmesan rub. The skin was crispy and tasty. Yum yum! I made rice and peas to accompany the delicious fowl. Four star entree!!!

I fixed a lean angus roast,then some frsh string beans but no potatoes in them..but lots of smokey bacon and sweet onions with cajun seasonings..A big bottle of very cold water to drink.

The Boy made dinner. :D

In the crock pot he made dijon/orange marmalade pork steaks.
Whole kernal corn (in the microwave)
And diced fresh tomatoes.

Hey it's a start and was ready when I got home from work. Yay!

He's a good kid. :D

I was hungry but had nothing to eat. So I punted.

Stew meat (3/4 of a lb) browned in a small cast iron. I threw some garlic powder on them. Added about 1/3 C of Muscato (it's what I had and I can't drink it any more).

Turned the heat all the way up. Let it bubble/reduce for 3 minutes.

Then I rinsed out a can of black-eyed peas w/ jalapenos and threw those in without the juice (trying to lessen my sodium intake).

Then I added a can of Ro-tel Tomatoes Original (didn't rinse these, lol).

Threw in some pepper and a tiny pinch of sea salt. And about one tablespoon of Worcestershire.

Cooked over medium heat for five minutes.

Put it in a bowl and called it Arwen's 10 minute Hopping John Stew.

:) Not bad. I did add Tabasco, but you can never have too much tabasco.

Lazy dinner
 
Pumpkin and white cheddar tamale with sweet red pepper relish.
And a banana.
Should of had something green but I had a big spinach salad for lunch so I got lazy and didn't cook the green beans. (Which is pretty lazy cause it only take 1:10 in the microwave.)

I went to a home interior decorating party held by my gf and let me say, she knows how to put on a feast! None of this cake and koolaid stuff. We had:

Smoked ribs
Potato salad
Taco soup (OMG it was good!)
Apples and grapes
Key lime dip
Dump cake for dessert

Sunday night dinner
 
Planning on making Stuffed Squash tonite. Acorn Squash baked with butter and brown sugar, scooped carefully out of shell when tender. Mix that with browned Hot Italian Sausage and cheddar cheese, then pile that mixture back into the shells to go back into the oven for 10 min. Sounds weird, but this is the most amazing taste!
Since we have some picky eaters living here who won't consider eating squash, we are also making Lemon Chicken.

I made an egg scramble and am eating it as I type

I took pieces of skirt steak, diced up fresh garlic, added leftover corn,
cooked in butter and when it was almost finished added cojack cheese

Two slices of honey 7 grain toast

Dinner is served

I put a picnic roast in the slow cooker covered with chicken broth.

It's been on high for about 4.5 hours, but

I haven't checked to see if it's done.

After I use a thermometer to make sure it is cooked through,

I will use a fork to shred it and add some barbecue sauce.

I want to serve it over corn bread.

Oh my goodness, it smells good.

Since yesterday I posted my dinner on my FB wall and forgot to do it here,
I'll just have to post what I ate tonight

I made veggie tacos because I still have corn tortillas to use
Took the other half of the avocado I had left and sliced it thin
Also, diced up onion and a jalapeno (seeded it)
Sliced a roma tomato thin, grabbed a handful of cilantro
Heated up 3 tortillas and tossed all of the above in them
