I like the way you think. It is HOT here. How do you get it to freeze with just the gin and vermouth? Do you add something to it?

For dinner, I had pizza with onions, feta and mozzarella.

These are pre-made vodka martini sticks, perfect on a hot day, and tasty. Just throw them in the freezer. Here’s a video about them. They’re sold at costco, BevMo, online, and some local stores.

Cajun Calamari, Shrimp Diableaux, Cajun Bloody Mary 2 of of them to be exact and a sweet tea.

- roast beef
- zipper peas

Boneless pork, salad, sauteed mushrooms, tea, pinch of Truvia in the tea for desert.

Pork chops covered in a spinach/walnut sauce, with a baked sweet potato covered in butter, cinnamon and brown sugar. Sweet tea to drink.

Tonight I had black bean soup with cilantro; tomatoes with artichoke hearts, hearts of palm, pepper, garlic, balsamic vinegar, basil, and avocado; and blueberries with cinnamon. It was all quite good!

I made oxtail ragout in the instapot

Oxtail
BIG hunks of sweet potato
BIG hunks of onion
Yellow bell peppers halved and seeded
1 can stewed tomatoes
1 cup water
Garlic cloves
Salt and pepper

Cook for 1 hr on high, and allow for natural steam release

So tender, so flavorful; it was the best oxtail I have ever had!

How big was the ox?

The pieces were approximately the size of a 6oz sirloin steak! I’m thinking they came from Paul Bunyan’s ox.......:blink:

I had some kind of a spicy Thai wrap that I got from the grocery store deli, and a slice of delicious banana walnut bread.

Not hungry much. If anything, I imagine it will be a bowl of raisin bran with milk.

I love how easy this meal is and always good. Sometimes I get too caught up in making vegetable dishes that take too long and are harder to digest. This meal is my fun work day meal.
