I baked a whole chicken and I am gonna make mashed potatoes and broccoli with an ice cold glass of tea. Simple and yummy

I cooked a small pan of Farrow & Quinoa and added orgainic slices of carrots and organic precooked pinto beans, then simmered it in Ginger Sesame Seed Teriaki sauce. I made enough to last a week. What i do is make small organic green side salads and ladle a big serving spoon of the Teriaki Farrow & Quinoa mix on the side. My homemade "bento" box lunch or supper. Its pretty tasty.

For supper tonight, i cut a peice of Garlic Nan bread in half, and spread Cherry-Raspberry jam on top, with organic Aragula on top of that, for an open face sandwich. I can only have one half-slice of Nan per week.

It will be a few months before i can indulge in Nan again tho. Nan is a bread of sorts, so im sinning this week. *lol* :|

Chinese... it's always chinese on the first night in a new place! I upheld tradition and I think Pete liked it too

couple of egg rolls
House fried rice
complete with a fortune cookie that told me to "stay focused on my goals"

Tonight I was tired. I just mixed up a quick chicken salad with a fresh tomato from the garden.

That "egg" salad sounds good! I've made it with garbonzo beans and or tempeh but not tofu. I might need your recipe.

Tonight was pickles and tofu "egg" salad (easygoing, you asked about that- I buy it from a health food store pre-made, and they have bought it from someone, so I know the ingredients but not how to make it-- It is some kick-ass tofu "egg" salad!). Anyway tonight the tofu "egg" salad had started to go bad in that subtle way where you consciously acknowledge that fact when you're almost done. Ugh! What's annoying is that the expiration date was still five days away! I hate how stores sell products that you have to get right when they are made because they overextend the expiration dates.

Afterwards I had popcorn. I always love popcorn.

Then I had a Rawmantic vanilla vegan bar. I am hopelessly obsessed.

Then I had fake bacon.

Kind of a weird dinner that one has while alone :eatinghersheybar:.

Interesting. Will you save a label for me? I kind of love the challenge of figuring out recipes when I eat something good that someone else made.

A friend of mine used to make tofu egg salad and sell it to health food stores all over the west coast. Beyond the spice blend I do know that she has a trick to get the tofu texture interesting. She froze the tofu before crumbling and adding spices. I thought it was fabulous!

My dinner was not nearly as creative, just a salad with Pear Vinaigrette and some hibiscus tea. My summer thing is to make a really big salad with non wet ingredients, enough to last 3-4 days. Then, grab THAT when I feel snaky and too lazy to cook. I put different things on top to make it more interesting. Pumpkin seeds or any nuts, dried fruit, fresh fruit (melon is yummy) and being an omnivore different meats. Chewy, crunchy easy and filling :)

This is the one I use. I make the mayo from the recipe link but any vegan mayo of your choice will work.
