I made a stir-fry with EVOO, tofu, cabbage, onions, bell peppers, and curry powder. Then I added spicy kimchi to it (from a jar). It was good and filling but too bland. Needed some sauce or spice help that I couldn't figure out. Suggestions are welcomed.

Then I had a cucumber plum salad, which I always enjoy.

Thanks to GeorgiaMa'am for the recommendation of Gochujang (Korean-style red chili paste, the sauce used for Bibimbap which I love when I have it in restaurants). Just ordered it from Amazon. Will report back!

Citrus roasted chicken from a do it yourself entree kit, some watermelon chunks and a small handful of blueberries, because sometimes you've just got to say what the hay. Surprisingly, though a bit elevated, my blood sugar stayed in range. It was so good. Definitely going on the make this again list.

Beef roast-
 
I always search the *soon to expire* protein section and found a 4# prime/rib roast for $9!

Mixed a rub of fresh ground garlic, fresh ground onion, cracked black pepper, fresh thyme, fresh parsley, dash of poultry seasoning and a dash of sea salt. Tossed together in a ziplock bag and refrigerated for 18hrs. Cooked it in the crock pot for 12hrs on low heat with no additional seasonings, (only moisture was a 1/4 cup of water from rinsing the zip lock).

Fresh from the bakery french baguette and home grown Heirloom tomato as sides-

I made a Tabouli Salad with quinoa instead of wheat. I'm quite please, it is as good as the original. I also used some preserved lemon (Morocco) in the dressing. Fresh and slightly exciting. Three YUM'S up!

Tonight I had the salad I've been into lately: vine ripe tomatoes, artichoke hearts, hearts of palm, salt, pepper, garlic, balsamic vinegar, and lots of fresh basil. It hit the spot as usual. I had leftovers which I will try to have tomorrow but it's kind of not as good the next day.

I also had a bowl of black bean soup with sour cream, cilantro, and onions.

I had Greek yogurt with banana, raspberries, cinnamon, and kamut puffs for dessert.

It was all very tasty.

a sirloin burger patty with a slice of baby swiss and a baked potato. i haven't had much to eat over the last week so this was an absolute FEAST.
