I had avocado ranch salad with a 3 inch round of naan and water to drink. Thought I might have a Halo or small apple too but I was full with that so I'm good to go.

Until I learned there were noodles in here. I love noodles.

I used a hand mixer instead of a processor. It came out pretty good. Overdone on the sides and bottom. Next time I’ll double up on the parchment paper. Texture was almost perfect and way better than expected. I used monk fruit for sweetener and it’s the best I’ve tried so far.

It helps that I haven’t had real pound cake in ages.

I am not a big fan of lemon, in fact I always cringe when the Pioneer Woman and Barefoot Contesa use it so very often, but this lemon pound cake, I'd try that in a heartbeat!

I'm nuts about lemons. This recipe called for water in the icing but I used lemon juice and it was perfect for me. Nice and tangy.

This was easy-peasy to make. I haven't made more than one or two cakes from scratch in over 20 years (thank you, Betty Crocker), but gave it try with this one and am glad I did.

It may not be as good to people who are accustomed to gluten and sugar, but I can't get over how it good it is to me.

Will definitely make this one again.

Tonight will have burger on low-carb tortilla with lots of fixings and cake for dessert.

A little while ago, I saw this miniature popcorn tub at a store. I pondered it over and decided to go ahead and pick it up. It was less than $2 and I eat popcorn regularly, so why not I thought. Well, my big bags won't fit in it natch but the smaller 100 calories bags are a PERFECT size. They fill it up exactly to the top.

So, my dinner tonight has been a 100 calorie bag of butter flavored popcorn, 2 Halos, 1 small apple and I'm contemplating the banana. If I opt for it, I'll add the tiniest smidge of reduced fat peanut butter to it to help slow the sugar absorption. Water to drink.

Dinner was light because of calorie laden breakfast and a big lunch as well.

I am mostly eating stuff that can be packed in a cooler these days. My caregiver makes it for me before leaving for work. Leads to some pretty unexciting meals.

This looks absolutely delish. I had to go on their site and see if anyone sells them near me and there's a Target 6 miles away that does so I will be trying this.

Last night, I got out of work 3 hours late due to a security issue, so it was popcorn and a sliced cuke dipped in buttermilk cracked peppercorn dressing. Very very light dinner.

Sliced avacado and chopped spinach with a scoop of tuna salad made with my homemade bread and butter pickles.
Tiny egg rolls in air fryer.
Moscato wine.


S'more cookie. Perfect marshmallow under the broiler.
