First, I had red pepper chips with fire roasted salsa. Then I had fresh veggies--broccoli, carrots, celery and red peppers--and a cucumber ranch dressing with a couple of pieces of honey roasted chicken breast. Water to drink.

Tonight's dinner was stellar! I had a smorgasbord of yumminess. First, I took some whole wheat sesame noodles and topped them with chicken teriyaki pot stickers and Korean BBQ beef tips. Then I added pearl couscous and red grain salad, curry apple orzo salad and salmon orzo salad to the plate. I had small portions of each of those and then I had a banana and some goji berries and dried Turkish apricots for dessert. The apricots feel funny on my tongue because they are dry and almost have a fuzzy surface but they are good without being overly sweet. Water to drink.

I was out so I picked up KFC and gravy. Ice tea.

Minnesota Tater Tot Hot Dish: I got the recipe from Tik Tok. It is essentially Shepherd's Pie with tater tots on top instead of mashed potatoes. I don't think I'll be making it again, because (1) I bought Trader Joe's 21 Seasoning Salute specifically for this recipe, and there's some flavor in it that I don't care for; and (2) my Shepherd's Pie recipe is better. It was also kind of disappointing in that the tots were mushy, and not crispy. If I ever try a casserole like this again with tots on top, I'll try putting it under the broiler for the last 3-5 minutes to see if I can crisp them up.

Not really feeling hungry so made a med. rare beef sandwich and a coffee.

Last night it was tacos - they were good - but I did not have any lettuce or tomato in the house - so they were hard shell, taco meat, Mexican blend shredded cheese, medium salsa, and sour cream.
Tonight might be KFC which I have not had in forever (SB gave Me the idea).. but if I do not want to make the drive for it - then I will likely have a steak on the grill unless we get another downpour. After I reread this - there seems to be a lot of ifs and maybes - I should have just said - I am unsure of tonight's dinner. (laughing). |

Leftovers of some meatloaf J made. Worst of any I've ever tasted, smelled or seen. Horrible, but I didn't say so. I don't want to do anything that might lead to unhappiness and make a bad situation even worse for me should they ever decide to divorce. If they do I want it to be because of some other mother's contribution not mine.
