We’ve already eaten. I used my rice cooker to make rice with spinach and a juicy spoon of delicious but not homemade sofrito, and I sautéed shrimp to go with it. I found an avocado rolling around on the kitchen table, so we had that too.

What was promised to be a grilled cheese, but turned out to be cheese toast. I was not amused.

Because I was looking online for a certain brand of fresh sofrito, I came across a recipe for arroz con pollo, but because Pete doesn’t eat chicken, I looked for a recipe for arroz con tofu. I decided to make something more like tofu guisado. I don’t have all of the ingredients, but I think we’ll enjoy it.

Dinner
Chicken breast stuffed with broccoli and cheese sauce then baked. Tater tots. Ice tea.

yummy leftovers from dinner out with my friend last night...
my coworker friend and I attended a class yesterday, then we treated ourselves to dinner at Joy Teriyaki :cherry::
She had Teriyaki Chicken, Rice and Salad w/Miso dressing; and I had Bul-Go-Gi (Spicy Korean Beef) over grilled cabbage and carrots with Rice and Salad w/Miso dressing. :hk20: |

Chicken and dumplings! Which will not be made until after the football game is over, so that means we'll be eating around 9 pm.

We ate dinner early because Pete forgot to eat when I went out with my friends. We had vegan sausages and mushroom dumplings, served with sauerkraut and plain Greek yogurt instead of sour cream. Nothing was homemade!

Dinner
Shepards Pie (gravy, corn, hamburger meat, potato, cheese.) nice layers. Ice tea.

Salmon with roasted eggplant, onions, zucchini and red peppers. I sprinkled cilantro on top. Roasted/baked it in one pan. I made it earlier, so when I got home from work, it was sorta room temp. Nuked it for about 45 seconds and drizzled sweet chilisauce on top.
I might make that again tomorrow night. It was that good! Small dish of vanilla ice cream with chocolate shell on top. |

We’re having company tonight, so I started very early, because I need to take breaks while I’m cooking.
We’re having angel hair pasta* with peanut sauce, pressed tofu, tossed with corn starch, baked marinated sweet potato, and cucumber salad. * Rice noodles would be more traditional, but I can’t stand worrying about them clumping together. |

- Turkey and dressing - Fried okra - Sweet potato soufflé - Mac and cheese - Yeast rolls Since I missed out on the traditional Christmas dinner this year, I guess I've been craving it. |
A meatloaf sandwich and orange juice

Naan bread dipped in olive oil and zaatar with a cucumber feta salad. A paczki for dessert. Probably the same tonight.

Last night, it was shelled edamame and red grapes. Carrot juice to drink.
