Tonight, in honor of the KU/UNC game, we are having steaks, asparagus, and I am making cheesy potatoes. Gotta have a diet coke before the game starts; as I was drinking one prior to the first game of the tournament. We keep the same traditions every game...except the menu gets fancier as the team goes farther in the tourney! :clap:

Soft boiled eggs and soldiers with a little Gruyère toasted onto the soldiers
then biscuit with lemon curd and a cup of hot tea

Tonight for dinner I had homemade strawberry shortcake.
I cleaned and sliced the strawberries and mashed them a little. Added some sugar. I then made a batch of sweetened biscuits and put it in a round cake pan to bake like a cake. Served with milk. YUM!

Last night I made a big pot of chicken and noodles with sauteed mushrooms and onions, add peas, and italian three cheese. Even better today! I have not been the best cook since the girl left, so this was a good thing.

I made an inside out burger, swiss cheese in the middle. then i slow simmered it in bbq sauce, with a side salad and some baked lays. thennnn a cherry mango popsicle for dessert. yum!

Yep! It’s a recipe from my Dad’s family (Norwegian) from the 80s when Avocados where new and exotic. It’s said the Antipodeans created Fusion cooking; sometimes I’ve wondered if they meant ConFusion cooking, lol! It might seem like a strange combination, but, the acid of the Sauerkraut works well with the creaminess of the Avocado. It’s one of my comfort foods.

I usually make the Surkal (Sauerkraut) myself with some Caraway seeds. If you’re interested, I’ll give you the Salad recipe?
