Queso Fresco: Enfrijoladas

Enfrijoladas, as are most Mexican antojos or cravings, are truly versatile. They can be eaten for breakfast, lunch or dinner and can be a main dish or a yummy side to grilled chicken or meat.

ENFRIJOLADAS
Serves 8

INGREDIENTS
4 cups frijoles colados, or seasoned and pureed beans (in Basics/Cooking Techniques section)
16 corn tortillas
1 cup Mexican cream or heavy cream
1 cup Queso Fresco, or Fresh Cheese, or Farmers cheese, or a mild Feta
Avocado slices, optional

Chipotles in adobo sauce, optional

TO PREPARE
Heat a comal or dry skillet over medium heat.

Heat the pureed beans in a medium cooking pot to a gentle simmer.

Taking one tortilla at a time, heat on the comal or skillet for about 30 seconds per side. Take the tortilla with a pair of tongs and immerse it in the bean puree. Place it on a plate, fold it as if it were a quesadilla or a turnover. Drizzle as much cream and sprinkle as much cheese as you like.

You can also top it with some avocado slices and a bit of chipotles in adobo sauce.

The soft corn tortillas, that you can make or buy ready made at the stores (if you buy them, go for the unrefrigerated ones). The rich, straightforward and creamy seasoned Bean Puree, which also goes by Frijoles Colados, in which they are dipped in and smothered everywhere...

A UK Masterchef winner set up Mexican restaurant (there are three now) and when I'm in Convent Garden at the NZ shop, I sometimes pop into Wahaca for one of their vegan (they do vegetarian and will veganise when asked) breakfast wraps and a hot chocolate. Food heaven! :)

OK here is the disclaimer first for my TBA dinner.... I was in a hurry this morn on my way to work.... and we work 24 hour shifts.


So i quickly grabbed

Cottage cheese, turkey meat balls, kidney beans and sunflower seeds and a head of lettuce.

We are eating wierd today.. so we had Chic Fila A for breakfast (He had a chicken biscuit, me a bagel). For lunhc?dinner it was Hungry Howies Pizza .... may be a snack later....maybe not :)

I made some pinto beans with ham and corn bread muffins. Diced onions, pat of butter, and jalapeno juice made it pretty good. Pepsi max to drink.

Rooster is gaming this evening, which means he'll be eating a chicken sandwich from Wendy's....

I snuck into the fridge and stole his leftovers from Olive Garden....ziti with sausage, peppers, tomato and mozzarella....yummy!

Babyback ribs w/applejuice simmered for 2 1/2 hrs. than switched to a broiled pan and basted with bbq sauce. Potatoe salad ,mac salad , fresh string beans.

Went to the movies we shared popcorn, a hot dog. Had coke zero. Then stopped on way home for burrito supreme from taco bell.

Dinner tonight will be fish of some sort,im thinking salmon baked on a ceader plank that I soaked in lemon water,a nice salad then some fruit compote for desert.

Eating at Moms after the hospital. The menu will include: Chicken, sweet corn and noodle kugel (A Jewish side dish). It is going to be a HUGE improvement over the disgusting hospital cafeteria food.

That ceviche looks good! I love chili verde and Im picky. I make a great chili verde but I add adobo chili(lilbit) too. Very yum.

I made two homemade pizzas. One with olive oil, goat cheese, spinach and cherry tomatoes and another with red sauce and greek olives. I'm not a big fan of pizza but everyone else loved them! :)

No need to send the pizzas for us tonight, we are gonna make homemade ones on the grill! Wheat crusts, with fresh mozzarella, mushrooms, tomato, pepperoni.
