A bodacious salad....with dk. red kidney beans, organic spring mix greens, boiled eggs, pignolis, cukes, tomatoes, mushrooms, yellow squash- raw, shredded cheese, small,. sweet bell peppers, fresh asparagus-raw, with ranch dressing. AND because a friend put the "power of suggestion" in my head regarding CAKE! now I am off to the store to get some cake...dammit woman..why you do that to me...lmao.

oh it is...and I forgot to add I put baby carrots diced up in it...all ingredients were so fresh and oh so yummy. I can't eat just "plain salad" (ie tomatoes cukes and lettuce...lol)

Baked chicken,fresh string beans with small chunks of potatoes and a little onion then seasoned cajun style.I was good but for some set on my stomach to well,I gess the antibiotics im on still are messing me up.

I' going to try Clays salad tomorrow,sounds great.

I made a lovely soup, beef (cubed rib-eye) sweet potato, green beans, corn and rutebagas in a light flavorful broth. it was super delicious and there is a bunch left over too. yay!

Fried (fry light) lambs liver, red onions and smoked (trimmed to remove all fat) bacon with a sweet potato, butternut and turnip mash. It was yummy!

Feelin' like firing up the grill this eve...
 
Skewered sirloin beef shish Kabobs marinated in a red wine marinade, w/shallots, green peppers, and cherry tomatoes.

Served w/Nicaraguan-style rice.

Dessert will be fresh grilled vanilla lime pineapple.

the Doc I scrub with all the time took us to Cotton for lunch. (Its nurses week.)
Had chargrilled oysters, duck wraps, and a salad with rare Ahi tuna slices, and lots of iced tea!!! Finished it off with an Espresso.

chicken strips sauteed ever so lightly with asparagus and mushrooms. Wrapped up in a yummy olive oil and rosemary flat bread. Wild rice on the side.

I sauted peppers with garlic and basil, and

When it seemed like they were threatening to burn,

I threw in some shrimp and scallops.

I cooked the cauliflower in the microwave, and

I made a very little bit of orzo, and

When Pete got back with Bella, who never pooped,

We added parmigian to our heaping bowls of goodness.

I made a big omelet with bacon, caramelized onions, yellow peppers, mushrooms and sharp cheddar cheese.

To drink, iced Constant Comment tea

For dessert a little of my famous (although I didn't invent it) 2 ingredient dark chocolate mousse with real whipped cream

PS the mousse only has water and chocolate in it hence the name

All I can think about is the peanuts in the freezer...They are begging me to make the homemade peanut butter again...I must resist!

Asparagus, garlic, sausage, rosemary, mushrooms, shrimp, no pasta enters my mouth tomato pasta sauce with a touch of burgundy wine and cream, mozzarella cheese, and a local hard cheese made with milk from both cows and sheep grated over the top(sounds gross but is friggin' delicious)...

cooked up some trader joe's brown rice medley and then put in the oven trader joe's channa masala *indian spice chickpeas* and some frozen veggies. will have that shortly. those of us who live where there is a trader joe's all call it TJ's so you know for future reference.

homemade beefy enchiladas.

Was going to make a whole pan of them, eat a little bit myself tonite, save a little bit for leftovers for tomorrow, and freeze the rest. But my daughter called me just now, needs me to bring over some food for her and her kiddos. So no leftovers for here. Will have to do the make-ahead dinner another time.
