Fall

The fall is the changing of the colors if you will, the air is crisper and cleaner.
The many colors the leaves change to, as well as watching the animals adapt to the up coming season. One thing I miss most is riding through the woods and feeling the peace of it all. We use to have a pasture in the front of the place that had oak trees so I would get the leaf blower and pile up as many leaves in piles as I could then sit back and watch the horses along with the barn pets have a ball playing in the leaves. being it was the first fall for the weanlings it was all new to them...watching them discover a new way to have fun was priceless. |

TOTAL TIME: Prep: 15 min. Cook: 35 min. MAKES: 4 servings Ingredients 1/3 cup chopped shallots 1/4 cup chopped onion 1 teaspoon minced fresh gingerroot 1 tablespoon canola oil 2 tablespoons all-purpose flour 1 can (14-1/2 ounces) chicken broth 1/3 cup apple cider or juice 3/4 cup plus 2 tablespoons canned pumpkin 2 tablespoons plus 1-1/2 teaspoons maple syrup 1/8 teaspoon dried thyme 1/8 teaspoon ground cinnamon 1/8 teaspoon pepper Dash ground cloves 1/2 cup heavy whipping cream or half-and-half cream 1/4 teaspoon vanilla extract Additional heavy whipping cream, optional Fresh thyme sprigs, optional Directions 1. In a small saucepan, saute the shallots, onion and ginger in oil until tender. Stir in flour until blended; cook and stir for 2 minutes or until golden brown. Gradually stir in broth and cider. Bring to a boil; cook and stir for 2 minutes or until thickened. 2. Stir in the pumpkin, syrup and seasonings. Return to a boil. Reduce heat; cover and simmer for 10 minutes. Remove from the heat; cool slightly. 3. In a blender, process soup in batches until smooth. Return all to the pan. Stir in cream and vanilla; heat through (do not boil). If desired, drizzle individual servings with additional cream and garnish with thyme sprigs. Yield: 4 servings. |

Haha... Talon, I can't watch. I've become such a baby about the super scary stuff. I used to have more nerve. Not sure what happened! Though I have been known to enjoy a sunset walk through the cemetery in the fall. ^_^ I think it can be quite romantic in a way. Look at these statues from the Woodlawn Cemetery in NY. The inscription reads: "kissing beyond dreaming, beyond death, forever in stone, if not in flesh.."

I celebrate Thanksgiving in a way but without calling it that. I won't celebrate it without an acknowledgement of the true history behind the holiday. And of course, I love the glorious colors. |

I love the way the light seems different in autumn. Fading afternoon light seems to say, "Get inside! Bake some cookies! Wear your toasty warm bedroom shoes!" Glowing front porch lights are cozier and more welcoming: "Come inside! There are warm cookies here! You can warm your feet by the fire!"

Halloweenie Balls-
Balls
1 cup.+ Jif or Skippy Peanut Butter 2 Tbsps. honey or maple syrup (according to taste!) 1 cup. (Quaker) oats 2 Tbsps. wheat germ or ground flax seeds 2 Tbsps. (Mounds)coconut 1/4 tsp. Vanilla pinch sea salt Topping cocoa finely crushed cheese crackers coconut shaved chocoate In saucepan heat gently the peanut butter, and honey. Til warm and mixed together well- In bowl mix well oats, wheatgerm/flaxseeds, and coconut- Combine dry and wet ingredients together. Form balls and roll in cocoa, coconut or (finely)crushed cheese crackers, shaved chocolate. Store covered in refrigerator for one week. Great for on the go breakfast and snacks :hk11: Happy Autumn! |
