Tonight I had grilled chicken tenders,seasoned with sessama seed oil..garlic..a touch of soy sause as well as worchester sause with a touch of honey mustard. Orental veggies and uncle Bens instant brown rice(took for ever to find it),got enough for lunch tomorrow.

Lemon Chicken Tenders with Curry... and Salad of course!
 
Ingredients

* 1/2 teaspoon paprika
* 1/2 teaspoon salt
* 1/4 teaspoon pepper
* 3 large boneless, skinless chicken breasts, cut into 2-inch pieces
* 2 eggs, slightly beaten
* 1 cup Italian seasoned bread crumbs
* 1/2 cup sugar
* 1/2 cup lemon juice
* 1 1/2 teaspoons curry powder

Directions

1. Preheat oven to 400 degrees F (200 degrees C).
2. In a bowl, stir together paprika, salt, and pepper. Sprinkle seasoning over chicken pieces. Dip pieces in egg, then dredge in bread crumbs. Arrange chicken pieces in a single layer in an aluminum foil-lined 15x10-inch jelly roll pan.
3. Bake in preheated oven for 15 minutes, turning once.
4. In a small saucepan over medium-low heat, stir together sugar, lemon juice, and curry powder, stirring until sugar dissolves, about 5 minutes.
5. Drizzle lemon sauce over chicken, return to oven, and bake 5 minutes more.

I am sooooo hungry! I skipped lunch earlier. Just not hungry since I had 2 eggs w/cheese for breakfast, plus a thin bagel and lox (from a sedar meal). So now...I am starving - lol.

Tonight I am having:

A Cup of Boston Clam Chowder

2 Grilled Pork Chops

Green Beans w/Almonds

Scalloped Potatoes

Fruit Salad

Coffee

Last time she visited our SIL, the SIL bought my sister a magazine of diabetic recipes. We've been trying them - tonight we had Chilli Burgers (sort of spicy with chimichurri on top) and a salad with apples, feta and a vinagrette dressing. My sister fixed Spanish rice - but it really was unnecessary - there was enough with just the burger and salad! It was so good, spicy but not spicy enough to make my sister worry about heartburn. We're full but not stuffed.
