Pot Roast and it came out really yummy; I made gravy from the juice and the meat was practically falling apart. It cooked in the crock pot all day long while I was at work. nom, nom

I'm taking my niece to Seattle to visit my YA YA BFF tonight. She has declared it grillin' and chillin' nite. Since she is a whiz with savory kebab combos on the grill, I'm guessing that' what we are having. :) :)

forgot to bring dinner to work AGAIN.....but last night i had a very good dinner....avocado with my favorite new pink salt....a white fleshed nectarine....SO nummy! and some trail mix which i didnt love....but rediscovered how much i heart yogurt covered raisins :) tonight its lifesavers cuz thats what i got ;)

We got up early today and went to the Farmer's Market.
I ended up making roasted red peppers with organic extra virgin olive oil drizzled over them. I roasted some beets and sauteed the greens in olive oil and garlic and onions. We got some heirloom tomatoes so I made a salad with fresh basil and freshly grated romano cheese, olive oil and balsamic. It was all quite tasty.
We had a baguette too.

My honey made a sampler dinner with little dishes of cheese, rice crackers, tomato, avocado, greek olives, two kinds of hummus, and hearts of palm. SOOO yummy!!

Went out for dinner tonight; had a turkey and brie cheese sandwhich on rye bread (SO good) as well as homemade mac and cheese ~ new favorite restaurant for sure :D

tis the season for outdoor dining and birthday pool parties, my contributions for this afternoons' fete:

zucchini carpaccio with lemon, olive oil, capers, parsley and pine nuts;
mango salsa & fresh guacamole; and I have chicken breasts with a chili lime rub in a garlic & red pepper olive oil marinade awaiting the grill.

Made a salad with what I had......spinach, cucumbers, tomatoes, olives, pickles, sunflower seeds and bacon bits with some creamy garlic ceasar dressing.

I miss my girl (f).......*sigh* she is the best salad maker :)

That is a good question. Some of Only's salad would be great.

I have to clean up out back (sawdust, wood chips, little odd blocks of wood) ... lock tools, saws, extension cord in storage room .... a quick shower and trip to store for dog food ... Kelly and Kevin are getting a little put out because they haven't eaten much either today. Since I cannot have any of Only's salad, I'll do the drive-thru window deal. :)

The zucchini carpaccio I've been making lately is really simple: a layer of very thin slices of zucchini, drizzle of olive oil, squeeze half of a lemon over it, sprinkle some capers, parsley and then add another layer of very thin slices of zucchini, repeat, all of the above - until you're out of zucchini. I grated some pecorino romano over the top. It serves really nicely over a bit of arugula.

I *love* fish carpaccio best, but I can't get any of the local fish markets to slice it thin enough for me.
