i made this today, it was amazing!


Easy Vegan Chocolate Cake

Ingredients (use vegan versions):

3 cups flour
2 cups sugar
6 tablespoons cocoa powder
2 teaspoons baking soda
1 teaspoon salt
2 cups water
3/4 cup vegetable oil
2 tablespoons vinegar
2 teaspoons vanilla

Directions:

1. Preheat oven to 350 degrees F.

2. Thoroughly mix dry ingredients first (flour, sugar, cocoa powder, baking soda, and salt).

3. Mix in wet ingredients (water, vegetable oil, vinegar, and vanilla). Continue mixing until you obtain an even batter (no lumps).

4. Pour into a floured cake pan and bake for approximately 40 minutes.

I recommend topping the cake with Chocolate Frosting by Sarah.

Serves: 12 slices, Preparation time: 15 minutes

Green smoothie for today

Fiji apples pears spinach H2O
Udo's Omega 3 & 6 oil


Soup tonight

onions, garlic, fennel, celery juice base, celery chopped
mint yes, delicious!

For anyone wanting to do this, watch this video Joe Cross
giving important info on the best way to begin if you've
been eating processed foods, coffee, etc.

I know the reason I haven't had much of a healing crisis on
this is that I let meat go back last Summer, and let coffee
go (not easy) sometime then as well...pays to let go of
the processed "foods" first.




And the weight is coming off rather quickly
still I want to continue on the 5-5-5 until
April 21. Slowing the running down so my
weight stabilizes...I will see this through
to the end.

raw carrot cookie
 
made these this weekned and they was awesome!

Recipe:

makes about 24

1 cup (packed) pitted medjool dates
1 cup chopped walnuts/pecans
1/2 cup old fashioned oats
2 small carrots, peeled and shredded
1 tsp cinnamon
1/2 tsp ground ginger
1/4 tsp nutmeg
1/2 cup dried unsweetened coconut (for rolling)

Combine all ingredients (except coconut) in a food processor and pulse until mixed but not smooth. Taste and add more spices according to your tastes.

Spread the coconut on a plate

Moisten your hands so the mixture doesn’t stick. Pick up about 2 tsp at a time and roll into a ball between your hands. Roll in coconut and flatten slightly, then place on a plate. Repeat with remaining dough, then chill for at least an hour.

Love avocados but my dilemma with them has always been how do you tell when they are perfectly ripe? I won't eat them if they have that little brown ring around them :blink: If anyone has any tips on how to tell when its ready I would so appreciate it! Thanks Glenn!

kittygrrl I press lightly on the avocado and if it gives a little its good to go

I get them a bit harder and place them in a brown paper bag overnight in my pantry not in the 'fridge and they are great for the next day

on another note..rilly stuck on macadamia nuts lately:hk16:..so made a morning mix of shredded carrots, raisin, with mac nuts and a little plain yogurt...have to say it was scrumptious!

for a little bit of a different twist on lemon try Meyer lemons they are magical! Whole Foods Inc. carries them, right now I love them so much I'm not using the other kind..they remind me of my grandmother's round lemons she grew in her garden in Makawao..(f)

GREAT thread :) My wife and daughter have made the switch to Vegetarianism and I think I've landed more in the neighborhood of Pescetarianism. I just don't think I can give up fish & seafood. I look forward to reading about everyone's experiences and talking about good food!

I LOVE to cook, especially Southern comfort foods, mostly my own recipes, and started a food blog, it's predominately all vegetarian, so check it out below :)

Later today, I'm adding the dish I concocted last night, Vegetarian Enchiladas with black beans (homemade), corn, fresh spinach & lotsa cheese, they were so good!!!

Classic Macaroons


2 cups dried, unsweetened coconut
½ cup almond flour
¼ cup coconut butter
½ cup maple syrup
1/8 teaspoon vanilla
Sea salt to taste
Mix all ingredients together. Roll into balls. Refrigerate until solid. If you're not totally raw, try these dipped in nutella..you will thank me

Two weeks to go II -Veggie Soup
 
continuing from my previous post today...its been an incredible journey
detoxing and rebuilding at the same time really incredible in that the detoxing
has been occurring on multiple levels (ie., physical, emotional, mental), and
spiritual which is has been a completely unexpected gift.

While I still have a bit over two weeks to complete this first 5-5-5, I am
planning my return to eating grains, nuts, seeds(missing my chia), slowly
will incorporate quinoa, rice, and beans. And will continue to make my
green smoothies for breakfast and the day at the office.

Have had to eliminate running this month and instead am power walking
to satisfy my love of being outdoors but not lose more weight and its
working. And yes, I had to shop for new shirts, and pants, a bit of not
fun time since I don't like to shop but got them and got out quickly...smiling.

Following is a nutritious veggie soup for those of you who are looking
for a good soup. Sounds delicious, I can vouch for the carrot juice base
which I am using today minus the mushrooms, and beans. Enjoy.

Haven't been on here for a bit so the person that pm'ed me about starting
their own detox congrats to you! And feel free to pm me your questions if
you'd like to...the more the merrier in reclaiming our health and wellness.

1/21/12 - 4/21/12 Reboot 5-5-5
 
Hi Veggie Lovers,

Today is the last day of my green juice/green veggies 5-5-5 reboot.

Today is the 3rd day of green juicing

Italian parsley kale celery ginger

H20 and Udo's Omega 3 & 6 oil

So, how will I return to grains, legumes, nuts, and seeds?

Gently. Tomorrow my plan is to make a small amount of spelt pasta
and use blended black beans as a sauce with now the ever present

green veggie (kale steamed), with seaweed on the side (have missed seafood since the Gulf spill but seaweed helps the craving for seafood)

Green smoothie in the morning, and this main meal in the early afternoon.

Its been an enlightening experience on many levels, much of which I'm sure
I am not aware of yet....my mind is quieter, calmer, clearer...my body has lost excess weight I didn't think made a difference to my quality of life, it has made a difference.

So, what now? Time to connect the dots balance my life in terms of activism
regarding my decision to no longer eat meat.

In other words, how does the choice to eat to live impact what I do in the world, how it will effect my relationships with family, friends, who I vote for or not...I have questioned how this choice is connected to the larger political, economic situation in this country and the rest of the global community. How will I continue to share and contribute to my family, and society?

I'll again be posting videos that have positively "opened my eyes" during these last three months on my Food Documentary thread, and Food Discussion threads.

Ok, I must get a vegetarian cook book...my spelt pasta came out pretty good...but my blended black beans? Well, lets just say it needs some work...smiling...still, it was good tasting beans again.

I added garlic, onions to the beans, blended...yes I had sauteed the garlic
and onions first and cooked the beans so the blend was hot, then I re-heated
for about a minute. Poured this over my spelt pasta, and had a salad (the biggest part of this meal), with red/yellow peppers, romaine lettuce, olives.

It was good, but something was missing from the bean blend...what I have no idea...so, if you have any suggestions for veggie cook books I could use them...and I feel very full...learning as I go, enjoy your week Veggie Lovers, Greco

I picked up asparagas at the farmers market today. Had the old george foreman out to cook it. YUM....I couldn't cook them fast enough.

This is the only reason I keep that george foreman.
