My son and I are having spaghetti tonight (leftovers from yesterday).

I made a homemade sauce with crimini mushrooms, sweet onions, shredded carrots and then added meatballs made from turkey sausage.

I made a fresh bed of salad greens (romaine) to go with it too.

Last night was early dinner with my daughter we went for Taco Bells big box new grilled rollers, burrito supreme and a cruncy taco.

tonight as we have to take my daughter back home :( we are meeting her bf for the first time and he has kindly offered to buy us dinner at Golden Corral. Yes, he has a job! LOL :)

When I made cornbread stuffing with sausage and apples for Thanksgiving,

I froze six extra pie plates.

Tonight we are having roast chicken, stuffing and sautéed greens.

Cheese!

I had caramel cheesecake and toffee ice cream. Now I'm working my way through a pack of oatcakes and Stilton cheese.

I should have insisted my house guests take more of the tempting goodies home with them!

I, too, am on for "chicken frickin soup...again...third day in a row...sooo I guess misery loves company...lol....BUT am glad it is chicken noodle soup and NOT :canoworms:

Otherwise, I do have the "pudding" that you get after straining vegetable juice from the juicer....It's very good...has apples, carrots, cabbage, ginger and kale in it. Its like apple sauce with a wicked kick ;)

Whoo hoo time off work, I get to cook
 
Chicken breast stuffed with roasted red peppers, goat cheese, mushrooms and pine nuts.

A few tiny roasted fingerling potatoes with butter, a smidgen of sour cream and coarsely cracked back pepper.

Spinach with shallots, garlic and lemon.

Although I usually don't like white wine, I had a very tasty Toasted Head dry chardonnay I got as a Christmas present that I really liked that went nicely with this, go figure.

For dessert I haven't decided yet; I may poach a pear in wine with cinnamon or I may make pumpkin mousse with pralined pecans, I'll let dinner settle first.

I got a piece of fruit while shopping for my client....I forget the name...I love the idea of trying new fruit. It looks like an ugly tangerine..and it has leaves on it. If it's any good I will be sure to find out the name...and get more :)

last night was food from the chefs at work. a piece of catfish with some red sauce, a piece of ham, new potatoes, veggie mix, a small salad and bite size cheesecakes.

tonight whatever the chefs are making I guess.. I don't want turkey or a sandwich again.
