Not sure if I ever made it when I lived in NM, but it's just cukes peeled and sliced into thick rounds, with part of a raw onion then covered in raw apple cider vinegar. Some folks add salt as well. Refrigerate and allow time, (I usually give it a day) for the cukes and onions to soak up the flavor of the vinegar.

Jesse 01-06-2013 06:15 PM

Tonight I am having leftover chipotle chicken that I grilled last night. Also, red potatoes steamed then mashed with sweet cream butter and raw goats milk, and steamed broccoli and carrots.

DamonK 01-06-2013 06:16 PM

I believe I heard something about burritos....

TheMerryFairy 01-06-2013 06:18 PM

I had a nice cut of pork bbq'd, grilled veggies, red baked potato and a salad. For dessert I am going to finish off my holiday candy.

JoSchmooze 01-06-2013 06:19 PM

Papa John's pizza delivery.....
It's too freakin cold to go out anywhere!

cinnamongrrl 01-06-2013 06:23 PM

Tabouli salad and some nuts.... good and GOOD...but I think I'm gonna learn to make my own Tabouli... The deli puts WAY too much onion in for my liking...

Gemme 01-06-2013 06:23 PM

Five Guys Burgers and Fries

Little hamburger and a 'small' order of fries. Note: said order of fries comes in a big cup and then they throw another scoopful at the bottom of the bag.

Basically, I had some awesome fries with a burger on the side.

Cowboi 01-06-2013 06:25 PM

Grilled tenderloin steak, steamed broccoli, and spinach salad.

Liam 01-06-2013 06:53 PM

Scrumptious soup and buttery biscuits, all from scratch. :)

christie 01-06-2013 09:28 PM

We had a crustless ham, spinach, scallion, mushroom and gouda quiche. It was quite yummy, if I do say so myself!

To start, where do you find buffalo pretzel crisps? Those sound like a great snack to me.

*Laughs about your LITE dinner* I am sure you will enjoy it very much. At the very least, at least you have somebody willing to help do the cooking :P

ahk 01-14-2013 06:55 PM

Brought home a bag of tacos from a nearby Mexican restaurant and had a glass of milk to drink. This place has the very best Mexican food in town.

PinkieLee 01-15-2013 09:17 AM

Dinner last night, was spent in the hospital cafeteria....

grilled ham, cheese & tomato sandwich
some kind of strawberry yogurt parfait
and a Diet Coke

(all of which wasn't too bad)

Tonight, I plan on cooking though...

spaghetti with meat sauce
ceaser salad
and garlic breadsticks

diamondrose 01-15-2013 09:19 AM

Shrimp vegetable stir fry

TheMerryFairy 01-15-2013 09:54 AM

I think tonight I will have Spaghetti & meatballs. Like it or not I'm adding peppers and mushrooms to my sauce.

GraffitiBoi 01-15-2013 10:09 AM

Dinner tonight will consist of probably nothing, unless I can manage to make a piece of toast. My back has decided to act up and go out again. Lovely. I still have to try and go to work tonight.

I think I need a girlfriend so she can come and cook for me today! LOL Even take-out would be fine.

Beloved 01-15-2013 01:05 PM

I get them at Walmart of all places. I have seen them in other local stores also, but very infrequently. There's also a jalapeno flavored pretzel chips but I can't seem to get them in lieu of the buffalo ones!! I swear they are great alone but if you wanted to fancy them up for a party, you could always serve it with a nice ranch or blue cheese dressing dip...mmmm

And our LITE dinner was seafood scampi over angel hair :) good stuff! And yes, I am very lucky that Teddy is such a good cook. It's the best of both worlds; he cooks, I clean, and I love to bake... :)

TheMerryFairy 01-15-2013 07:13 PM

I didn't get to make my spaghetti tonight, more important things came up. I will have a turkey and bacon club sandwich with fries and KFC gravy. Ketchup is optional.

Ang 01-15-2013 07:20 PM

boiled up some perogies, threw them in a pan for a little crispy factor and cut up some sweet potatoe, mixed with some fresh rosemary and baked in the oven.

Trev 01-15-2013 07:37 PM

Homemade mac n cheese and hamburgers...the OT is not being nice to me :|

Gemme 01-15-2013 07:53 PM

Pineapple sandwiches and milk for me.

This is what I cooked for my dogs tonight:
Scrambled 18 eggs in the microwave with lots of mild cheddar cheese chipped up in with the eggs. Kelly and Kevin loved their dinner too. Kevin always gobbles his food and Kelly normally eats very daintily. Kelly will take a small bite in her mouth, chew it slowly while she looks thoughtfully around the the room. It was different tonight. They both had empty bowls at the same time. LOL!
