I am thawing some catfish . So I guess cajun catfish and corn maybe some field peas with snaps, or maybe cottage cheese with jalapenos.

A blend of Oriental slaw, carrots strips, and sauteed 'shrooms, and shrimp with a sesame ginger dressing and seasoned noodles and almond slivers on top..yummmmm
(Dunkin Donuts for dessert ( A Red Velvet with Cream Cheese frosting and a Boston Creme in heart shape...yummm)

Didn't have fish. Found out I am allergic to fish today. So I had popcorn. =(

a freshly made chicken burger (made from fresh chicken mince), coated in herbed bread crumbs, righteously grilled to perfection, on a freya thin soy and linseed bun, tasty cheese and chow-chow. a side o' coleslaw.

and a summer peach & tea ice block fo' dessert...

I sauteed portobello mushrooms with some scallions, garlic, red wine, thyme and a just a smidgin of tarragon then I browned some thinly sliced chicken breast, stirred it all together and devoured it, mmmmmmmmm

I forgot to add dessert. We haven't had it yet. Banana Split layered dessert. It has a Graham cracker crust, cream cheese, sugar and vanilla, banana slices and pineapple, cool whip, maraschino cherries and walnuts.

I had a mishmash of sorts...a southern version of sushi if you will.

Sadie has an upset tummy today and I needed to cook her some rice instead of feeding her regular food to her. So I decided to kill two birds with one stone and made a pot of sushi rice. She got hers plain.

For mine, I tossed in some grilled shrimp, & Nori strips. Also threw in some dried tomatoes, spinach, and mushrooms. Tossed all of that with organic soy sauce mixed in with a little wasabi. Sushi casserole anyone?

Steak and salad and a potato. Whether it's a sweet potato or a regular potato has not been decided yet. I'm lobbying for asparagus as well.

I had to buy dinner since I forgot to bring anything....

I went to the deli across the street and got

A baguette (half) with roasted eggplant, red pepper, spinach, tomato and carmelized garlic. I substituted goat cheese with smoked gouda...my own personal demon :|

And


I had a cheesecake brownie for dessert .....

Home made pizza! Whole wheat crust, featuring mah special home made marinara sauce, tastefully accessorized with a three cheese blend, sweet onions, tomato slices, zucchini slices, shrooms, bits of broccoli florets, artichoke hearts, and pepperoncini. The artichoke hearts and pepperoncini were canned/pickled/preserved whatever you do with them by my lovely sister in law.

This summer, she's going to show me how to can my sauce. I remember my mom canning ALL THE THINGS all summer long when I was a kid, but we moved to the city when I was 14 so I don't really remember a lot of it. Aside from the fact that it takes forever to clean all those veggies! Right now, I just portion the sauce into freezer zippies and lay them flat on cookie sheets in the freezer so that when they're solid, they can stack neatly in there.

Once I get the groceries away I will be making baked chicken taco's topped with lots of veggies, homemade salsa, low fat cheese and non dairy sour cream.

Tonight was my night to help at the church fish fry.
Lent and a whole bunch of guys frying fish, fries, hush puppies, making baked beans, cole slaw and yes even dessert is nothing but YUM!
