Was out and about, so I stopped at Subway
Picked up a foot long with black forest ham, spinach (instead of iceberg lettuce), tomatoes, cukes, onions, black olives and mayo on wheat
I ate half tonight and will have the other half for lunch tomorrow

I small slice of creme brulee cheesecake

It was a Black Bean burger. Our Youth was running the concession stand at the softball field tonight. My friend Katie raved about it and the youth group made me one after the game!

Baked salmon seasoned with cracked black pepper and a mixed salad. Dunno what's going in the salad yet. I definitely have lettuce, tomato, radishes and spring onions. Need to see what else is lurking in the fridge....

Have a chicken roasting now that will go with a salad, stuffing, and cauliflower for lunch/dinner today...leftover chicken is gonna be chicken enchiladas tomorrow :)

A grilled chicken taco salad that I have been "perfecting." Several dressing renditions- I think I have found the perfect balance of ingredients. I love to cook and to be honest, really miss cooking for other people. LOL, in both of my past LTRs, I was the chef, neither partner liked to cook and well... were not so good at it. But both would join in the preparation often and I enjoy tossing, throwing in a pinch or two, smelling for taste, chopping or grating with someone sharing their day with me and pouring me a half glass of a good merlot for me. Simple ways of sharing time together that promote communication.


My great niece just entered a chef's school and I can't wait to see her during the holidays and find out how she is doing. She wants to open a resturant eventually. It took her awhile to gain acceptance to this school and she will also have to travel for her full training. It ain't flippen' burgers!

Her Dad, my oldest sister's youngest son is so proud of her- as he should be. He's a single Dad and he wants his kids to gain independence, but I think he is anxious about his "little girl" sometimes being thousands of miles away. But, hell, she is 21 now. She has worked so hard to gather the money and pre experience needed to follow her dream. I know he is also relieved that she will finally be breaking away from her boyfriend that unfortunately, is not motivated to do much of anything. But he's young.

I am going to try my hand at arroz con pollo.

I used to make it all the time with the unhealthy ingredients I learned about when I learned to make the dish, sazon, which is full of MSG, and a kind of corned beef in a can that I haven't bought in years.

So I'll saute homemade sofrito with green olives with pimentos and soyrizo, and when the flavors meld, I'll brown the chicken for a few minutes. When the chicken is golden, I'll add rice and let it soak up the flavors, and then I'll add water. I wish I had some frozen peas and avocado in the house but I do have some delicious pink beans defrosting.

i baked a whole chicken basted in its' own juices with a little bit of bbq sauce, mac n cheese, and steamed brocolli

Being I miss fried food like crazy I used a light coating of shake and bake on some fish( worked real good to) poped it into the oven in 15 to 20 minits I had some crunchy baked fish.Add some tomato/cuke slices light sprinkled with red wine vinnigar...oooooo so good.
