It's a bit early to know for sure, but thinking I will have a beef n bean burrito. Both the beef and the vegetarian re-fried beans are from some that I dried and oven canned a while back, so it will be an easy dinner.

Last night's dinner was...

grilled chicken
mac & cheese (yep, the blue box)
baked beans
and a spinach salad
dessert a couple hours later ~ a strawberry cheesecake blizzard from DQ with 2 spoons :)

Tonight...

a creamy chicken & rice casserole
and another spinach salad (yep, gotta finish up that bag before it goes bad)

I am having leftover thai chicken with rice, veggies and pineapple. It will be served with crushed peanuts and lime. I am also thinking about making a small salad with orange to have as well.

I really wish I was cooking up some spring food, but hard to do when there is a foot of snow on the ground. Ugh.

Leftover crockpot chicken (that my hunnie made and was incredible) with asparagus and onions then on the side is baked acorn squash with butter and Splenda brown sugar yummm !!!

________MEN and sandwiches have always gone together…I mean – what’s not to like …for a guy who has to live the bachelor life...at least (for the time being) – and for many years before…they are – fast – inexpensive – portable and filling and you can eat them on the go in your truck on the way to work…I mean – what’s not to like – right? …If there’s meat – cheese and other goodies stuffed between two slices of bread… let’s face it – I like it - (most) guys do – I’m not sure the women in our lives like it so much…but sandwiches have been a “man staple for years” – come on - financial empires have been built on the “sandwich” … :) - it was and still is standard fare for brown – bagging – and in the summer time – it’s a quick and easy fix for sure…pull out the cold cuts (bologna an old school favorite) – slap some mustard on wheat – and you are good to go – all washed down with a big glass of cold milk – gotta have the milk – that’s key - gotta have the milk - it is a natural after all and good for your bones! :)



In a recent conversation with (her)…as she knows I am (very) challenged in the art of cooking anything that doesn’t involve a microwave or boiling in a bag (and even that is suspect) …I told her I could cook … and when I told her of my sandwich skills– she with a small and beautiful smile said – ... “oh baby – I’m sorry that’s not cooking – that’s called assembling” … lol! :)



So – (for her) – I’ve decided to branch out into the cooking arena – and you know have a healthier diet – as let’s face it – they aren’t the healthiest thing to eat by any stretch…so – in a recent trip to the grocery store –
I got lettuce and tomato to go with the bologna (I mean – that makes it a little healthier- right?) …
SO conversation goes something like this:



She: hi honey…what are you having for dinner tonight?
Me: Bologna
She: (small sigh)
Me: (but) … I’m going to have some chicken noodle soup with it J
She: (laughter) – Well…that makes me feel a little better…
Me: Why? It’s still bologna (and you hate that)…
She: Well…at least you are having a (side) with it…


____SO – what am I having for dinner tonight?



_______________Well…bologna – soup (and) just for her some fresh fruit (cause if one side is good – two makes it even better- right?).

So…she may be the best cook (ever) – and she is –(no doubts about that whatsoever) so I leave that to her…and she spoils me terribly – but when it comes to assembling a bologna sandwich – trust me – I got this. :) ... even I got Dagwood beat on this one…:)

I lied . I didn't have roast beef and noodles I had Mcdonalds drive thru. My normal 12 hour day turned into 14 and a half. So I was too tired and too cook and wait for it to get done. So tonight it will be roast beef and noodles. I hope. Lol

I had some leftover 'oh so tender' beef roast that I topped with mustard n vinegar BBQ sauce, and an entire head of buttery soft roasted garlic that I roasted using a dab of coconut oil! I'll munch on some dried veggies later... :eyeing the remaining beef roast and garlic...maybe.

I'm not quite certain yet, but I'm going to my fave hole in the wall Italian joint later, so I know that whatever I have will be fantastico. I'm thinking either the ol' standby spaghetti and meatballs, or their gorgeous pasta with aglio e olio (garlic and olive oil), tossed with minced walnuts.
