Baked sprial cut ham,sweet potato cassarole,home made buttermilk biskits then baked apples with lite carmel sause dribbled over it with a dash of whip cream.This was a request of visiting cousns and my aunt Tommie,aunt T is 80 so I was happy top grant the request...

I made a mac & cheese lasagna.
(Kraft diner, sauce, ground beef, cheese and repeat layer. Cook for 20 minutes @ 350 F)
Was delicious. Serves around 4 - 6 people. Have enough leftover for 2 more meals ;)

I purchased some delicious chicken and garlic sausages at the Farmers Market this morning. So, they'll be cooked in a bit of olive oil in a hot pan. And, as an accompaniment, fresh asparagus tossed with a bit of garlic and olive oil, seared slightly in a grill pan. Light, tasty and fresh!

I just prepared then polished off the following: a handful of sea scallops sautéed in butter; a bunch of fresh asparagus that was blanched then chilled, paired with a tarragon and lemon infused mayo dippin' sauce; and a few grape tomatoes to round things out. For dessert I splurged and had two brownie cookies. I think I need a glass of (flax) milk now...

I cleaned out the freezer of most of the crap food that my ex left behind months ago, but couldn't resist fixing myself some tater tots and mozzarella sticks. It's my reward from working hard all day on house fix-up/organization stuff. That's my story and I'm sticking to it.

My friend Ellen's version of Monterey Beans and Cheese from the More With Less cookbook.

I modify it a bit to make it lower carb, no rice, high fiber beans, it is so good either way.

Caramelized some onions
Steamed asparagus
Chopped up red pepper
French vinegarette dressing
Topped with grilled chicken, drizzled with BBQ sauce and white cheese

Oh my my my...it was delish. It's going to be lunch for a few days too. :)

I have a lot of options but I am going to finish up the turkey stirfry I made up with lots of veggies last night and later on finish the last bit of my 6" sub, IF I am still hungry. Surely I won't be.

I marinated Ethan's London Broil in Dale's steak sauce and mine in Terayaki sauce then seasoned and grilled them on the George Foreman grill.. i also made penne pasta with garlic sauce, shrimp, asparagus and cherry tomatoes . I packaged it all up and took it to the rehab so we could eat dinner together.

tonight is a new recipe...stuffed chicken breast with feta, mushroom and spinach in a buttery garlic mushroom sauce. i think ill make some rice to go along side and a glass of wine. lovely!

Threw together a stir fry of sugar snap peas with tri-color sweet red/yellow/orange peppers (pinch of sea salt and grape seed oil, and sweet thick soy) on top of slightly scorched brown rice (adds a nutty element and crunch) then flavored Japanese style with a couple pats of butter and seaweed sprinkles. Feeling full and healthy. Warm green tea went along well. :thumbsup:
