last night was some leftovers my babe brought from family bbq. ribs, hot dog, burger, baked beans, potato salad and I had wavy chips and pico de gallo. some coors light.

tonight I'm about to grill chicken breast to make a spicy chicken marinara over rotini with garlic cheese bread.. and more coors light make that red!

At work and things kept changing all afternoon. Since it looked like we'd have to work thru our dinner break our supervisor brought in pizzas. Cheese, meat, pepperoni and veggie. And a selection of soft drinks.
It doesn't happen often. Even rarer? Everyone was happy!

Last night I had dinner with my family, Dad smoked a brisket and Mom made potato salad and corn on the cob it was so yum!

Tonight, however I am on my own sooooo probably something easy. Maybe breakfast. Mmm.

We are having broiled chicken, even though Pete might be a little sick of it, because I bought a big package at BJ's.

I also cut up potatoes and onions and I tossed in one pint of cherry tomatoes, three cubes of frozen minced garlic, sprinkled it with dried oregano, salt, and pepper, wrapped it in foil, and threw it in the oven.

I had a lovely pinwheel with sausage and beef and fresh spinach and swiss, although not in that order. It was pretty good. A cucumber salad complemented the meat portion of the program.

Poor Pete. I didn't cook the potatoes long enough and they were not yummy and delicious, not one bit.

I am going to make coconut chai chicken today. It is a new recipe for me, but it sounded good and sticks with my eating plan, so we'll see how it turns out. I also have some cucuzza [technically a guard but can be cooked in much the same way as summer squash] and yellow summer squash that I will likely roast, and I have some fresh greens for a salad.

This post just cemented my decision to go to the little produce stand after work.

Hence dinner will be;

baby squash, zucchini, and onions sauteed in fat free chicken broth (as opposed to unhealthy butter which tastes better)

butterpeas (not butterbeans)

fresh sliced tomatoes

cornbread (the real kind, not the sweet, fake boxed stuff)

Sweet tea

Which means breakfast tomorrow will be a glass of buttermilk with cornbread crumbled into it.

I don't care that its 102 outside and cooking indoors will make it hot in the house...but I want meatloaf damn it. So, that's what we're having. In the oven it went and the fan in blowing the heat out of the house. *shrugs* I've been grilling for weeks because of the heat (and because I like to) but today my belly says you shall cave and cook inside.

so..meatloaf, potatoes and a veggie of some sort.
