Craving sweetness!

I'm making almond milk rice pudding with chopped banana, cherries, blackberries, redcurrants and blueberries with a drizzle of runny honey.

That should keep my hand out of the sweetie jar.

Last night's dinner was...

beef stroganoff
and green beans

Tonight, I'm making a big pot of taco soup :)

In case you are wondering, it's browned turkey or hamburger meat, rotel tomatoes, diced tomatoes, pinto beans, ranch style beans, sweet corn, a package of taco seasoning & a package of ranch seasoning. Super easy, super cheap & usually have most of the stuff in the pantry already!

Worked late due to long lunch (with Tommi - wow - lovely little Italian place that is going on my "take others there" list.

So picked up Chinese on the way home. But this weekend, if the cool weather holds up, I will probably make a huge pot of something. Beef stew or pasta sauce. Big family kettle - going back generations. I have it now, but I have no idea who it is getting willed to. 6 of us (yeah, big family) all beg for it. So many memories.

Food does that, doesn't it.

sloppy freakin' joes...
 
not too long ago i made a "'merican road trip" (to here... http://www.marthasbackyard.co.nz/) one o' da thangs i bought was a sachet o' sloppy joe mix. i've been waitin' (eva so) patiently fo' chicken mince to go on sale as it's quite dear here. today was my day, sooo...

tonight i'ma havin' sloppy joes! complete wit' melted parmesan cheese, roasted jalapeņos and corn, a wee bit o' mustard and a huge side o' coleslaw. man oh man, i simply can not wait...

(i'ma online now doin' metric conversions, giddy as all get out!)

Peeled and cut up 7 huge baking-size potatoes. While they were boiling in water, I cooked a pound of ground sirloin burger in a skillet. When the potatoes were tender, drained the water, poured a little milk in their pot, added beef bullion, and dumped a good bit of sour creme in there. Mixed it up, in went the drained sirloin burger and lots of chunks of colby cheese. Dumped in a can of white corn and a can of green beans. (drained water from both cans before adding to the pot) Rolled it over a couple of times with a large spoon. The cheese melted just right.

My beloved dogs think I am the best chef in the world. *laughing* I fixed huge bowls for them. I had a plate of it too. Kelly helped me finish mine. :)

I used a melon baller and made little cucumber cups that I then stuffed some with buffalo chicken dip, some with tuna salad, some with egg salad
I also had a big ole pickle and some iced tea
A little later I am making 2 ingredient mousse for desert

Tonight I was treated to Wing Stop and had 10 Cajun wings and 5 parmesan with garlic wings the best fries I have ever had and a cold red draft beer....thanks for the treat to a new place my friend

For supper tonight, I am making a meatless 'sloppy joe's' kind of sandwich meal for my son and I. It all started with finding minature ciabatta buns, at the farmer's grocery store, recently.

Here's my recipe that I am using, tonight:

a small bag of Crimini mushrooms
a small sweet onion
1 small block of Tofu (soaked in Soy Sauce)
a quart of Marinara sauce (I might only use half a quart)
half a bouquet of fresh basil leaves
half a cube of salted butter*
two teaspoons of garlic paste*

Wash and cut the Crimini mushrooms into small edible pieces. Cut sweet onion into diced up bits, too. Cut up small block of Tofu into bite sized pieces. In a skillet, dressed down in coconut oil, use a medium-high heat to sear Crimini mushrooms, onions and tofu -- add sprigs of basil leaves, too. As soon as the stir-fry medley is nearly cooked, cover the stir-fry with Marinara sauce, place lid over the skillet, turn off heat and let it sit while you make Garlic Butter* to spread over single servings of Ciabatta bread. Mix softened, room-temperature butter with the garlic paste. Spread Garlic Butter over open-face Ciabatta bread. Spoon Crimini 'sloppy joe' mixture onto each serving of bread.

(Makes 4 single sized servings - feeds two people).

Linner was too early...and I got peckish...so...

I used some of the corn water to simmer some lentils...sautéed a shallot and a small green pepper with some herbs and spices...cut up some of the leftover kielbasa and added that also...added it to the lentils and omg it's GOOD!

for dessert....

yesterday I made some sugar free cheesecake pudding...and it was kind of meh....so I thought about mixing something in it. Jam was a thought...then....I remember the caramel apple frosting that was leftover in the fridge :| And THEN I remembered that I hadn't finished all my salted caramel chai after lunch...sooo I reconstituted the somewhat dried out frosting with the chai....and poured a spoonful over the pudding....lets just say....I should be on Chopped....:sunglass:

cheese burger for the kids, mushroom, onion and cheese burger for my girl served with tots....and a pepper jack, a sweet three roasted three chilli mix and pickled red onions (I make these items and keep them on hand for when the mood strikes :) )

i had me neighbours 2 boys and 2 o' their cousins ova fo' a home-made pizza fest at me casa. (we have such fests on school holidays!)

we had 4 diff'rent pizzas rangin' from mild to moderately decadent to sizzlin' ass spicy. lol

a good time was had by all. board games and cards were played.

(and i have leftova pizza fo' me lunch tomorrow! mmm, mmm, good!)

Nuked White Castle frozen hamburgers. The dogs had their Science Diet crunchy dog food. For dessert, we three ate large bowls of Captain Crunch cereal and agreed dessert was better than dinner. ;)

I just refilled my supply of grass fed beef from the co-op today, so I think I will grill a burger and have that along with some steamed whole okra, and a salad made with Moringa and broccoli leaves and a few other veggies. Easy peasy tonight.
