It's a carb day, no getting around it, sooo...onions and garlic sauteed in EVO and tossed over cheese tortellini, topped with shaved reggiano. Probably a glass of Pinot Grigio, too.

I made potato soup with red potatoes, onions sautéed with bacon pieces. To continue the bacon theme...Grilled sourdough, thick cut applewood smoked bacon, Havarti, smoked gouda, and American cheese sandwiches, with thinly sliced tomatoes and mayo.

Well, I now live 18 miles from the nearest town.... What's for lunch means anything I can find in the cabinets or the frig!
But, I'm on my way to a small town to meet up with a fellow classmate that's in a class that I'm attending. Lunch time in the big town in the NWP! |

Wow, a much better than expected experimental homemade salad: can of rinsed cannellini beans, cooked/cooled green lentils, diced sweet raw vidalia onions, cooked/cooled red quinoa, chopped celery, diced red tomato -- tossed together, chilled, and doused with lite raspberry vinagairette. My prediction is that this will not last the entire weekend, or even 'til Monday.

I made a "dish" my Mim liked to make for us. It's very basic but it's comfort food at it's finest.
I took a ground turkey patty and fried it in a pan...seasoned it with garlic powder. Meanwhile cooked some plain white rice (bad I know...lol) Mixed together on a plate with salt and pepper...voila Typically, I would add green beans...but I wanted it the way Memere made it... |
