It was going to be meatloaf and twice baked potatos and salad. But a case of laziness has overcome me and now it is;

Cheese tortellini with marinara
Garden salad
Iced green tea

Are you kidding me???? How else can you make proper Southern Fried Chicken :praying: if you don't dip it in buttermilk before dredging in flour with some salt and pepper? Perish the thought! :hamactor:

Next thing you know ole' Teddybear here will be telling us not to cook in a cast iron skillet or put fatback (that's salt pork for you fancy people) in the veggies!

Jet's Hearty, Homemade Ham & Bean Soup
 
Made from chunks of bone-in ham with Dijon-Honey glaze. I simmer the bone, and chunks of ham in chicken broth with bay leaves. Bring to a boil:15-bean package of HamBeans with seasoning packet (rinsed and soaked overnight)

Add and simmer (3 hours):

Diced tomatoes
Fresh garlic
Diced onion
Chopped celery
Chili powder
Lemon Juice
Kosher salt
Pepper


Topped with dollop of sour cream, chopped green onions and served with honey and croissants on the side.

So far it's been home made chocolate chip
cookies but there's a cold beef tenderloin in the fridge that
I have my eye on. That and maybe some prepackaged cole
slaw. Sad but true...

In all due respect of your love for the dreaded buttermilk. I hate let me make this perfectly clear I HATE buttermilk,. Im sure it has something to do with the fact that my mom drink HUGE quantities while pregnant with me. Funny story that I wont go into right now.

I use a egg and milk wash when I fry my Southern Fried Chicken. Which anyone who has eaten it will tell u its GREAT!!!!!!!!!!!!!

Now for the said cast iron I love that stuff. Esp if it has been seasoned "right"

I have been KNOWN to use fatback however I now know it isnt good for you I just know my dr is reading what i write so i wont say i still use it in my veggies

Ohhhh yummmm...tonight's dinner was so much better than my mess up last night. My roomie and I have declared that there's two things I'm not allowed to cook...Squash Fritters and modified recipe for melt in your mouth chicken.

Tonight the roomie made the REAL melt in your mouth chicken with my favorite Silver Queen Sweet corn that we had put up this year. Love my local veggies !

I'm not sure what will be the final dinner menu yet. Today was the day to go through the refrigerator and figure out what needed to be used (one so nothing goes to waste and the other to make room for the groceries).

So, I found enough stuff to make a veggie soup, which is in the crock pot.

Also, found stuff to make myself an onion, spinach, mushroom, and chicken pizza (thinking that's a good lunch)

I had pulled out some chicken earlier. So, I need to cook that up. Not sure how yet..but I'll figure it out.

so, yeah...that's where I'm at so far *shrugs*

my boy is in trouble... I bought 4 cookbooks today at the Books Are Fun table... I do love his cooking.. It will give him time to come up with a plan for the next meal he cooks for me.... tonight.. I have no idea.

Well, truth be told I don't use fatback when cooking. Occasionally for a holiday meal if the "older generation" is coming over. I had to laugh one year at my aunt's house. I peeked in the bean pot and she had several slices of uncooked bacon simmering away with the veggies. She told me she used bacon instead of fatback as she was "on a healthy eating kick." :|

My *buttermilk* fried chicken is the best! I even remove the skin and it still fries up nice. But I rarely fry anything anymore, just so bad for you, which is why I love my grill!

Tonight is leftover roast beef au jus over egg noodles from the night before. Easy! Dessert is movie popcorn as taking the kiddo to see "Frozen."

Dinner and A Movie
 
Filet Mignon (medium rare) and twice-baked potato. Steamed broccoli. Helping of sauteed mushrooms and onion in fresh garlic and olive oil. Wine tonight: a well-made Washington Merlot that has a percentage of Cabernet Sauvignon.

In the following order and spaced over about 3 hours:

Fudgesicle (sugar free although I couldn't tell)
An avocado with lime and salt
Tiny bit of left over Cuban black beans and rice (I'm sad it is gone)
Rare roast beef wrapped around a pickle
A spicy dill pickle
A Fresca
A handful of wasabi peas
A glass of water with lime squeezed in
Some blueberries and raspberries

I think I am done now

Tonight's dinner or lunch,as the ham has been cooking while I have been watching late night T.v. so it's cooled and in the fridge so I can slice it later today.I'm not sure what to put with it yet but will figure it out at some point.

Saturday Night Special tonight...
 
Salmon salad made with hard-boiled eggs, dill weed, mayonnaise, Dijon, red onion, Kosher salt and pepper stuffed in whole wheat Pita bread with lettuce, tomato and and a schmears of cream cheese.

My home-made Tomato Bisque soup (tomato soup, diced tomatoes, butter, cream, and seasonings to taste), chips and pop on the side.

In my slow cooker
 
I layered thinly sliced carrots, quartered potatoes, boneless, skinless chicken thighs, and onions, peppers, and garlic sautéed with cinnamon, paprika, and red pepper flakes.

The spicy chicken stew smelled so good that we ate dinner at 5:00 pm. :|

Figured it's been awhile and it's my son's favorite......Tacos.

Had some with hard shell, some we put a tortilla wrapped around hard shell one.
(ground beef, shredded cheese, lettuce, salsa, olives, sour cream & tomatoes)

Tomorrow thinking make more chili with the rest of the meat
