I'm gonna' try to make a healthy version of Parisian Chicken for the Papa. Good thing hy eats anything cos I'm not so sure Greek yogurt is ANYthing like sour cream!

I took the last 1 pound rib eye, thin sliced it
I sauteed the meat in olive oil, garlic powder and cumin
Added diced onions, grated dried jalapenos, small can of tomato sauce and a can of black beans
Letting it simmer for about 40 minutes
We'll eat it taco style with corn tortillas and avacado
We'll also have a glass of wine with it

Yikers! The last week of the month is often a "Hummm... what can I make with this, this and this?" Yanno... really having to reach into the creative realm with not having a lot of ingredients that are around right after monthly income arrives!!!

But, all of my pets have their foods! Geez, all are on some special diet of some kind!!!

I used up the leftovers I've cooked the last couple of days.
Took the left over fried taters and onions and scrabbled them up with mixed shredded cheese I had in the fridge.
Heated up the leftover steak from last night and we ate it like burritos on corn tortillas.

I love to cook even though I don't have anyone special to appreciate my cooking. Most times I cook for my folks and my neighbors as they are all in their 70's and they love my cooking. (Do they still have taste buds at that age?) Tonight it was chicken tenders, rice, fresh corn on the cob, and rolls. And someone smuggled out a leftover stuffed pepper from my fridge from yestreday! I guess they were good.

Organic and I are trying to switch our largest meal of the day from dinner to lunch, so it's going to be lighter fare, whatever it is.

Actually, we're still kinda hungry from lunch, which was deelish! :tease:

Dinner as lunch was:

Grilled salmon with a dill sauce, steamed broccoli, roasted sweet potatoes and water for me and catfish, fries, a salad and lemonade for Organic.

Sliced a few apples and glazed them
Steamer bag of green beans

As far as I was concerned, it was a complete meal :)
