my girlfriend Happyfemme and I are going out for a Valentine's Day dinner. Valentine’s Dinner Menu! First Course! Cauliflower-Brie Soup Roasted Beet, Goat Cheese, Arugula Salad Second Course Fried Oysters, Spicy Remoulade! Spinach Fettucine, Country Ham Cream, Kale, Poached Egg Grilled Eggplant al Pasilla, Shitake, Corn Puree! Entree Course Seared Scallops, Coconut-Lemongrass Broth, Rice Noodle Shaker-Style Stuffed Flank Steak, Mashed Potato, Kale Pork Medallion, Finglerlings, Parsnip Puree, Thyme Jus Ricotta Gnudi, Farmer’s Market Vegetables, Carrot Brodo Dessert Choice of one of our regular items |
Pork chops and sauerkraut that was cooking all day in the crockpot. So good !!!!

Some friends and I went out for dinner to celebrate "Singles Awareness Day." We went to Red Lobster. I could live on their biscuits! |
We had Olive Garden for two with 2 bowls of soup, breadsticks, 2 parmesan crusted chicken entrees with bowtie pasta and 2 desserts.

Tonight I am having chicken breast with a few veggies.
I have a Boston Butt pork roast in the fridge marinating that I will slow cook for tomorrow's dinner: pulled pork with Mojo sauce. I swear I could be happy with just drinking the sauce, but the pork will give the Mojo something to cling to while I devour both. YUM! No idea what I will have alongside of the pork. |

Homemade chicken soup.

Last night: We made a low-carb pizza crust (mozz cheese, cream cheese, egg, almond flour) and with all the toppings we enjoy. Pepperoni, mushrooms, olives, yellow pepper, and homemade marinara with lots of basil.
Tonight: I haven't thought that far yet. |
Fiery hot homemade chili with sharp Cheddar cheese and grated onion on top. i think we will have Sangria with it.

Being I am home alone, it will most likely be tomato soup with a grill cheese sandwich.

cold tofu appetizer, three rolls of vegetarian sushi, and delicious fried ice cream The fried ice cream was sooo good: breading underneath the fried outside, vanilla ice cream, whipped cream, and Maraschino cherries :) |
No Mojo Pork for me tonight. :( I got a late start so it's leftovers for me tonight. Once the garlic has finished roasting, I can put the sauce together and slow roast the pork tonight. I decided to also make some garlic infused olive oil and some compound butter with garlic and Mexican oregano leaves while my house smells like a garlic factory. :)

I'm making my BFF his birthday dinner this evening:
Flank steak in a garlic, long grain mustard, Worcestershire sauce, lemon balsamic homemade marinade. Risotto with arugula and prosciutto Haricot vert and a flourless chocolate torte with ganache and pomegranate seeds for dessert (not made by me, I'm not baker). |
Last night we had Jasmine rice topped with slow roasted cabbage, and coffee soaked Sausage with spices.

Jet's Homemade Chili
Made in Cuisenart and shared with the neighbors. Secret recipe (won't give it all away) but made with 6 beans and a list of spices and ingredients. It's a feast and I serve it heartily with a relish tray and dip and cinnamon rolls.
