Broiled swai filet (catfish) and a side of spaghetti squash with prosciutto cheese sauce. Some leftover egg salad if I'm still hungry.

What I'd like is some stone-ground grits and fried smelts, but broiled filet and spaghetti squash will do just fine.

I had an Andouille chicken sausage link in a bowl with mashed potatoes and mixed veggies. A smidge of fake Heinz 57 sauce for extra zing.

Dessert was 2 WW ice cream bars.

Tonight I did a light alfredo sauce with broccoli on a bed of spaghetti squash with tons of cracked black pepper, garlic, and some skim mozzarella. DELISH!

I think something easy tonight. Like a baked chicken with some garlic and onion and sweet hot red pepper flakes. A salad and a side of rice and corn. Yes this sounds perfect.

I just finished making a yummy mango salsa with diced sweet yellow onions, cukes, red/yellow/orange baby sweet peppers, lime juice, cayenne pepper, sea salt, a touch of olive oil, and mangoes of course. I will have this spooned over baked garlicky chicken along with steamed green beans.

You can substitute those eggs for mayo :) I do it quite a bit in cornbread/brownies/cakes all kinds of things. Just an idea!

I am making homemade hot tamales. It is a couple hour deal. I seriously have dough in my hair at this point.

But. Sometimes the best food is made when someone gets dough where it should not be.

Will freeze most of them and grab out here and there for a quick lunch with some mustard. Yum.

I had a work meeting and the boss got mega pizza...and salad...

So I had Greek spinach salad with feta, olives, hot peppers and red pepper strips...

And bbq chicken pizza...a longtime favorite

Chicken pounded thin and flash fried with salt pepper and a tiny bit of tarragon
Mushroom pan reduction with red Zinfandel for the wine
Roasted butternut squash with onion
Left over stuffed apples for desert

I am sorry to say that the reduction didn't quite turn out the way I had hoped, it was low on flavor which is surprising to me since I used a red for it. It needed some other punch of flavor to make it dance with the chicken. I probably should have used stock instead of water but I was out and didn't want to go out to the store in the cold rain. Oh well, can't win em all, I will comfort myself in the red Zin, can't let it go to waste after all

After discovering that I like tofu chicken patties, I decided to do a faux parmesan chicken.
1 tofu chicken patty topped with a heart healthy pasta sauce with lots of garlic and then skim mozzarella and low cal grated parmesan.

Pretty dang good!

Subway catered my dinner. 9 grain honey oat bread with bacon and all the veggies except hot peppers and onions with a little vinegar and a stripe of chipotle Southwest sauce. Gingerbread cookies for dessert!

It was good. The vegan bourguignon reminded me of beef stroganoff without the noodles. Hoping next time we can have it on noodles ( she actually told me no when I asked, but I am hopeful. God, she is mean!).

little miss made spaghetti with meat sauce

I had a bowl of rice noodles with mixed veggies, soy and chili sauce. On the side I had a short glass of water with a scoop of green super food and a half scoop whey.

Olive Garden for mom's birthday - yum! Pasta fagioli soup, lasagna, and chocolate mousse for dessert. Mom had the soup and filet mignon with asparagus. Dad had salad and spaghetti with sausage, black tie mousse cake for dessert. The kid had salad, a lot of breadstick, fettuccine alfredo, and chocolate mousse. Yes, this family likes chocolate mousse.

bought a block of colby cheese at the grocery store yesterday - had a couple of cheese sandwiches and milk with chocolate Ovaltine powder

every few bites I took, I would give the dogs a bite

I nuked the sandwiches and the cheese was very warm and pulled a couple feet out when I would pull off a bite for Kevin and Jennifer. One time Kevie managed to get it totally wrapped all around that large snoot of his - he was going nuts trying to pull it all in ... so funny! :)
