I had chicken breast with red, yellow and orange pepper strips on a bed of basmati rice topped with mango salsa. For dessert, I had the last piece of apple pie topped with cinnamon caramel apple ice cream.

cooking for one sucks...so lets see.. sandwich.. bowl of canned soup. or add water to a stuffing chicken box hit the microwave a dream of turkey.. i so miss my family get together.... my granny had 5 girls. ... never seen anything like the girls have to prove they have more or better personal relationships than the rest... Man.. Glad I had a young man. But hes no different than the tom cat I have... come in .. clean.. bitch.. and leave.so.. I do kinda wonder where do I fit

Thai chicken curry -- packet of red Thai curry simmer sauce, can of lite coconut milk, already cooked chicken that had been languishing in the freezer, fresh mushrooms and onion. All thrown into the crockpot on high for an hour or so.

Brown rice -- boil in bag. 8 minutes

water to drink

Dessert -- gluten free vanilla cake with dairy free frosting (meh, but dessert still)

Eaten while watching Death in Paradise, the episode in which Richard dies. *sob*

Left over Thai chicken curry. I bought lime today to brighten it up.

Nothing for dessert yet. The cake does not tempt me, and it's a waste to make anything else when there is already cake.

I sauteed up fresh spinach, mushrooms, and diced tomato with some basil pesto and garlic....served over spiral pasta

tonight is sweet potato and lentil chili.

tonight: seared pork belly, mashed sweet potatoes, sauteed spinach w/ pine nuts & shallot.

I have come to the realization that I would rather cook all day one or two times a week, than every single day. I suspect I'm not a domestic diva. Always thought it was lovely image, but the reality of never ending domestic service on a daily basis brings me to tears. So for me do it big, make it pretty open a bottle of wine, turn up some good music, cook and move on....

for the next few days it is

fresh homemade salsa
hummus
2 kinds of chicken sausage
one batch made into a zucchini casserole
one batch cut and ready for salads or eggs over the week
lightly steamed a big batch of veggies; green beans, asparagus, broccoli
fresh chicken salad
cilantro lime chicken (really yummy)
big basic salad to dress up
tahini dressing

It's wonderful the next day to open the fridge and see it full of healthy, all ready cooked yumminess. Heat and rinse dishes, feed them to the dishwasher, and voila, several days of kitchen reprieve.

I ate a little earlier than usual, because I was excited to eat the first round of this year's asparagus! I steamed bite size pieces of asparagus and then folded them into my scrambled eggs along with some smoked cheddar cheese. Two strips of bacon, and two slices of sprouted wheat sour dough toast, with some raspberry jam completed the party my tastebuds had. Yum!

I so relate to this! We now decide on Friday night/Saturday what we're going to eat Monday through Friday, make a list of ingredients, buy and prep Sunday night. It took us maybe an hour and a half to shop, and two hours to prep Sunday.

Biggest life saver was a basic seasoned chicken breasts in the crock pot for six hours, then shredded and froze what we weren't going to use for the rest of the week. Also chopping up all the salad and carrots and putting into gallon size bags in the fridge.

I was asked for this recipe this morning. So, please forgive me folks for posting it again. This is for the sweet potato and lentil chili.

just as a side note if you don't have veggie broth ...just use a can of crushed tomato. Don't have green bell peppers...use what ever color you do have. If you want a change add some corn as well. That's one of the great things about chili...if you need to you can change things around a little. The chili powder, cumin, cayenne ratio is what I find to be the key to a good chili
