The other half of the sandwich from lunch on the road. Ham and Swiss on rye with lettuce and tomato. It was good, even dry..lol, from Panera. Also traveling with a dozen cherry vanilla bagels.

I'll be making chili tonight and baking some pumpkin filled croissants.


For 32 mini croissants use 2 tubes of refrigerated crescent rolls. Roll each crescent roll out and cut lengthwise in 2.

1/2 block of cream cheese
1 cup of canned pumpkin
1 - 2 T pumpkin pie spice
3 - 4 T sugar (granulated or powdered)

Beat together until fluffy and creamy. Mix together 4 T sugar and 1 T pumpkin pie spice and roll each pumpkin pie croissant in it. Bake at 375* for 15-18 minutes.

I'll be trying half of them with cinnamon instead of pumpkin pie spice, see what happens.

Tonight we are having leftovers from the Halloween supper I cooked over the weekend. I made Mummy Meatloaf (meatloaf shaped like a mummy with 1 inch strips of mozzarella cheese over it to look like wrapping and some olive eyes) and roasted ghost potatoes. (Mashed potatoes squeezed onto a cookie sheet with a frosting bag and decorated with 2 peas for eyes.) YUMMMMM!!

I threw a whole chicken in the crock...with garlic and herbed butter under the skin...added some chicken broth and more herbs, some carrots, onion and celery for good measure. I've had it on high since this morning...I hope it comes out good....smells purty nummy right now!

My friend is just about to put a large chicken in to roast, stuffed with a stuffing that includes apples, prunes, pecans, and lots of other yummy things. Drool-worthy.

Spicy soup made from (amongst other things) the wrinkly carrots in the bottom of the fridge and pumpkin guts :)
