:glasses: edaname beans ( or how u spell it )... gouda... rosemary smoked ham... vine ripened tomatoes... mixed nuts... a wonderful yoghurt dressing... spaetzle pasta on the side... sparkling cider for a drink... a handful of choc covered salted caramel... = I am thankful.... taking nothing for granted |

last night was spaghetti squash, cajun roasted veggies and potato, zucchini, carrot cakes
the potato cake recipe I found needs tweaking but I think there is something there worth keeping, because today for lunch I used one..toasted some tomato, onion, cilantro and cheese...heated it and served it with an over medium egg on top and it was pretty damn good. I'll have to work on it a bit |
Hopefully I can convince someone to let me take 'em out for sushi. I have a craving that must be fulfilled.

I'm fixing salmon patties with a spring salad to go with it. I made some home made mixed fruit coconut compote for after wards it has cherries , fresh peach, orange and red sweet grape fruit slices toped with toasted coconut if any one wanted it...Fresh brewed ice tea to drink.

I'm cooking smoked apple chicken sausage, nuking mixed veggies (sugar snap peas, black beans, corn, carrots, barley and red bell peppers) in a rosemary butter sauce and mashed potatoes. Watered down Mt. Dew to start with and then I'll transfer to either fresh soda or flavored water.

asian marinated chicken salad w/ a cilantro dressing. tonight: using leftover chicken to make spring rolls using cabbage leaves, serving a "peanut" sauce but using sunflower butter instead. |

I'm making slow roasted pork chops marinated in apple cider and spices
Using my huge deep skillet to sauté cabbage in my secret spices (garlic, sweet mesquite dry mix, cracked peppercorn, butter and 2 other things) And maybe leftover cooked baby carrots that were glazed with apple juice and local honey...or a can of hickory smoked BBQ beans?? I need to decide. |

I had a large container of mushrooms (as many may know they don't hold up for long). So, I made some stuffing for potstickers...which will be served with a simple sesame noodle. I also made some sauteed mushroom and onions for gouda mushroom grill cheese sandwiches. The woman has an odd schedule today as do I. Therefore, the chances are we will be having the grill cheese and the potsticker and noodles tomorrow.
Young blood will have a reg grill cheese tonight and I'll make him some spaghetti and meatballs for tomorrow. |

Veggie feast!
Raw beet, carrot, cabbage and apple slaw tossed with lemon, diced onion, tahini, garlic and ginger.
Lentil hummus with hemp seeds, fresh basil, garlic, lemon, diced onion, black pepper and Brazil nuts. Huge smoothie of baby kale & chard with some pineapple, banana, maca and wheatgrass. It was an enormous meal! I loved every bite (and sip)! |
I made breakfast for supper:
Tiny little pancakes, ruby grapefruit glaze (for syrup), and two eggs (over easy, sea salt & cracked pepper). Now for a cup of herbal tea (orange, chamomile). |
Med rare ribeye steak, 16 oz, with wedge salad and baked potato with dos equis and water on the side.

Sriracha roasted chicken, steamed summer veggies-yellow squash, baby zucchini, snow pea pods, bell peppers and onions, and a salad of cherry tomatoes, cukes, avocado, cilantro, and mozzarella cubes in a red wine vinegar dressing.

Roasted Chicken Provencal
It was easy to make. I used coconut flour and extra dry vermouth and it was delicious. Had it over zoodles, but it would have been perfect with cauliflower rice or whole grain rice. I got the herbs from World Market. |
Dinner
Hi,
I am making fresh linguine with roasted zucchini, tomatoes, and onions tossed with Extra Virgin olive oil and Parmesan cheese. I am also making ham steak to have on the side. This will make great leftovers for lunches next week. Yummy! Chad |
The rain has my all wonky today; I thought it was dinner time so...
I boiled some egg noodles I needed to use up...added a handful of brussel sprouts to the water...drained it, added butter and caraway seeds and some cut up kielbasa that I had leftover. Sprinkle of garlic salt and crushed red pepper...some cheese and voila. Lunch for dinner lol |
Roasted butternut squash bisque, which was delicious but wasn't quite enough, so then I had a breakfast sausage and sharp cheddar cheese sandwich melted on white toast.

Last night, I had a little of this and a little of that. One chicken sausage link with a dollop of loaded mashed potatoes, a few spoonfuls of mac 'n cheese and a serving spoon sized bit of mixed steamed veggies.
I started dinner with dessert, though. I had a cup of lemon meringue jello. |
