I was craving some Joy of Cooking waffles made with cake flour and the egg whites whipped in, to make them so light and fluffy.

Instead, I made a low carb sandwich using romaine lettuce as the bread, with tomatoes, provolone cheese and ham.

It wasn't the same by any stretch of the imagination.

I just whipped up a delicious omelet with spinach, onion, garlic, smoked paprika, feta cheese, and tons of black pepper.

Yesterday I made an 5-egg (large cage free brown eggs) omelet.... and used an handful of Asian salad mix and a few slices of swiss cheese, in my omelet creation.

It was huge, so I only ate half of it. I warmed up the other half for breakfast today.

I toasted a slice of whole wheat bread with millet seed crafted by Grand Central Bread Bakeries.

It was. .... delish! :)

I'm always amazed at not only how you cook for yourself but such wonderful stuff!
Before I moved here and in with Mary, my breakfast would be a quick danish washed down with either milk or an icy cold coke!

oh mY Lord, LOL :giggle:

It's taken me a very long time to internalize that I'm not cooking for my two son's and myself. But I'm getting better at cooking meals for two, then just saving back the other half for another meal, since it's only me here at home.

But I do LOVE to spend time in the kitchen, cooking up something lovely to eat. :stillheart:

I like it too, when I enjoy a good meal al-fresco @ McMenamin's or Alameda Brewery restaurant or open air dining at Mississippi Studios or at Goose Hollow Inn bar and grill.... :hangloose:

Three (organic, pasture fed brown, cage free) 6-minute eggs.

Two organic celery stalk pieces filled with freshly ground peanuts (less than 1 gram of naturally occurring sugar).

I had half an cup of rolled oats, with stevia powder, chopped walnuts, 1/8-th cup of organic flax seed powder, and a few blackberries on top. A titch of my new Plant Milk, too.

Diabetes runs in my family and although I'm not diabetic yet, it's all about lowering my A1C number, and drop kicking blood sugar issues to another galaxy (forever).

It was tasty and fulfilled my health care needs, accordingly.

My home made salad was so huge last night that I could only eat about an third of it, so I had about another third of it for breakfast.

I am on my second cup of decaf coffee, sweetened with stevia, and I used the Plant Milk I bought recently for the creamer. It's okay, fairly tasty, but it's not the same as the way I used to have my "coffee" in years past (lol or not ).

Oatmeal (half an cup ) with Chia seeds, cinnamon and walnuts, and a splash of Plant milk, too.

(I saw my primary doctor yesterday for an follow up visit on an health related issue, and we noted that I've lost another 1.5 pounds since last week.... which makes me smile ).

My dear friends who live below me awakened me bringing fresh from scratch made, chocolate chip, coconut, chia seeds, and wheat flour waffles with sugar free syrup. OMG! Hot, too!

I've not had breakfast yet, although I got up very early today. But .... I'm gonna go make breakfast now. I want to have an 3-egg omelet, with an bed of stir fry veggies, melted vegan cheese and a splash of Asian plum sauce. One or two tiny slices of rosemary cocktail bread with Almond butter and Chia seeds.

Brunch at Garcia's, I am having the combo plate. It includes a beef enchilada, beef crispy taco, bean chalupa, rice, and beans. Ice tea to drink.

I had a small garden salad of romaine leaves, berries, walnuts & Chia and flax seeds, sliced half of an banana, sesame stick toppers and a light drizzle of toasted sesame dressing (sugar free, homemade with evoo).
