haven't really cooked in a wee while as have been workin' some crazy hours. but am off tomorrow, so i think i'll make a crock pot spicy white bean and chicken chili.

Mashed potatoes, mac 'n cheese, kielbasa, green beans and broccoli. Mandarin orange fizzy water. No cake left. Maybe some gummy bears or fresh fruit.

Even though it was a thousand degrees outside today, I made potato soup with bacon and cheese and sour cream on top ;) Work day felt like forever and now that I've eaten i feel like I could sleep for a hundred years.

I am on a pasta kick. So, it is either cheese tortellini with alfredo sauce or angel hair with a red clam sauce. Then again, it is Saturday and Saturdays are fried clam days. Hm. |

Vegan grilled cheese w/balsamic onions and sauteed mushrooms... assuming I bother to clean the kitchen and don't just pop over to the burger joint around the corner for a grilled veggie pita.

I am making "fish in crazy water" again. This time I used fresh catfish fillets, onions,(I forgot to buy garlic dammit!) carrots, celery, zucchini, crookneck squash, a big ol fat tomato and a pink peppercorn lemon thyme seasoning. It's on the stove in my cast iron dutch oven as I type. One pan, 30 minutes start to finish. I love this stuff!

I made spaghetti with ground beef and Trio Italiano Garden Delight (has 1 serving of veggies in each serving) pasta, fresh parmesan and pineapple coconut fizzy water to drink.

Grass fed brisket (crockpot for 12 hrs on low with seasons of salt/pepper/garlic powder/onion powder and some tjs everyday seasoning), smashed pink potatoes with olive oil and rosemary, and sauteed purple/green beans in bacon fat with red onions. Cantaloupe for dessert.

I have chicken breasts thawing, which I will slice thin and grill. I also have tomatoes, onion and lettuce leaves and I just made some fresh tzatziki sauce, all of which will culminate into "healthier" gyros for my dinner tonight. That and a spinach salad will work for me :)

I changed my mind and made red sauce with meatballs, sausage and peppers. I have plenty leftover for the freezer too. :) I'll do the chicken gyros tomorrow maybe.

Homemade sloppy joes on hawaian sweet bread hamburger buns. I replaced green peppers with hatch hot peppers. Super tasty I say!

I had put ribs in the oven, wrapped up, @ 275 for 3 hours. Can I just say...fall off the bone delish.
Since I broke a crown, I thought cutting the corn off the Cobb and roasting it was a better idea. That topped a spinach/romain, tomato,avocado salad. Pure summer bliss dinner, I might add! |
A peanut butter & honey chia seed sammich on whole grain bread. Try not to be jealous. :p
