Tonight will be bbq chicken, corn on the cob, a mixed veggie salad with a simple red wine dressing...maybe an extra side dish who knows.

I took a good friend of mine to dinner for her birthday. We both love Greek food, so of course we headed to a favorite Greek restaurant. I had a Greek specialty platter with a little of everything, and she had Mediterranean chicken with the fixings. We also had Saganaki which she had never had before. Then the waitress brought out some baklava with a birthday candle in it. I am glad that we went, it was a joy to see my friend smiling from ear to ear. :) Both of us ended up bringing home enough leftovers for dinner tomorrow night.

Scratch the chicken parm, pasta, salad, and garlic bread - we had In n Out burgers instead. Not disappointed. :thumbsup:

I'm in Nebraska so I figured I should eat beef...I just don't think Nebraska is known for great "Mexican" food but I may be wrong and I'm too tired to find out.

I made a big pot of black bean turkey chili last night...we like it so much my Kasey requests it once a week or so.

Last night chili

This morning chili cheese omelets

Dinner tonight will be chili sizes and coleslaw

The rest into the freezer for an easy dinner another night.

Last night I was bone lazy, I called out for a Mufletta sandwich (a huge thing) and a large pepperoni pizza as well as 2 two liter bottles of pop. I have big car fixing going on so took the easy way out.

Not sure what I wanted..so, I made pasta elbows with sauce and meatless "meatballs" and then I made a veggie packed spicy Lo Mein. At some point I'll figure out which one I want to eat for dinner and what I'll eat tomorrow

I had fresh Gulf shrimp smoked in smoker with a honey BBQ dry rub & some Old Bay seasoning with a fresh tomato with mozzarella slices, chiffonaded fresh basil with a balsamic vinagarette dressing and sliced fresh peach wedges. My honey had a smoked fresh grouper fillet rubbed with a dry garlic herb mix and a salad like mine. It was so yummy!

My goal was to make arepas stuffed with a mixture of ground pork & beef, cheese, onions, mushrooms, arugula and avocado slices. This was my first time making them and they were a little too thin for slicing open and stuffing, so I had deconstructed arepas! Lol! They were still awesome and I will do better the next go round. ;)

I'm cooking grilled pork & beef burgers filled with diced onions, garlic and portabellas, roasted potatoes, sugar snaps. I will likely slice an avocado to have with it.

I had turkey franks with steamed veggies and half of a sweet potato followed by a few mini chocolate chip cookies and a couple small pieces of raspberry rugelach. Sweet tea and fizzy water to drink.

I went to my fave Jamaican place and got...

I'm in a motel in Port Clinton Ohio ...near the Great Lakes...so I had local grilled lake perch....fabulously delicious...I think lake perch is by far my favourite fish.

Sardines with crumbled boiled egg and chopped green onions. Seasoned with pepper flakes, salt, and pepper. Perfect late night meal for me.

I had chicken and rice with a side of mixed fresh beans butter beans, speckled butter beans ,chowder peas all cooked southern style and they were good...sweet corm muffins to go with it all.
