I'm taking advantage of the cooler weather and made a big pot of peanut chicken vegetable soup. I totally hit the spot.

I've been in an "ick" mood when it comes to dinner these days because of the humidity here, so I have been grazing for the most part. I think I will cook some chicken in the crock pot overnight to have with some veggies and a salad tomorrow. I will likely have fruit of some sort for dessert.

Ok...after all that, it was more chicken salad. Seems some had been "saved" for me. Sometimes we need to be saved from those who would save us.
Whatever would we do if chickens hadn't been invented. |

BBQ pork chops on the grill, baked potato with a dab of sour cream, mixed vegetables and sliced tomatoes. Large milk to drink.
I am sitting outside on the patio eating right now. It is so nice out tonight, a little cool and no bugs. I cooked 4 huge hamburgers for my canine children. They ate first. Now both of them are here at my feet looking pitiful every time I take a bite of food. |

A simple roasted chicken with citrus and seasoning.
Ingredients: 1 ( 4 lb) whole chicken 1 large lemon Butter Herbs de Provence Seasoning Sea Salt and pepper Directions: Preheat oven to 350F 1. Pat chicken dry with paper towel. Salt and pepper inside of chicken. 2. Rub all over with butter. 3. Sprinkle chicken with some lemon juice, Herb de Provence and some sea salt 4. Put the lemon that you squeezed inside the chicken 5. Roast the chicken for 1 1/2 hours. Basting every 25 minutes. 6. Remove lid of roaster during last 25 minutes to brown and crisp the skin Serve with Rice and Vegetables |
I literally threw dinner together...
I sauteed the remaining chicken sausage in olive oil, added some leftover fresh mushrooms and frozen pepper/onion blend. Threw in a can of diced tomatoes and Got some fresh basil from the garden and threw it in. Then made a pot of spaghetti which I mixed with some olive oil and minced garlic... Threw it together and sprinkled with some good parmesan cheese. Voila! |
I made lasagna, garlic bread and salad. :-)

I made myself a huge chocolate milk shake.
Does everyone know? The Rock Star of all ice creams is back. Loving that Blue Bell! I was a pouty stone butch while they were not producing and distributing. I could not get satisfied with any other brands. Mayfield was as close as I could get but still lacking. |

I have no idea...what I do know thus far is I'm not cooking, it's been a long, tiring day that beat the hell out of my body. However, at least it was a productive day.

Had a charity event at work, wore heels (ugh), my feet are screaming. No cooking here either lol. Ordering a hoagie and I'm going to eat it with my feet up .

A hodgepodge of healthy stuff; kale chips, garlic chicken spring rolls, red seedless grapes, and ... there's no telling what else I'll decide on with the chaotic palate I have tonight. I have dinner for tomorrow all figured out but couldn't make a decision on what to have tonight. :blink:

I am cooking chicken & artichoke hearts in crazy water. I also added summer squash to it, both yellow and zucchini...and okra. It is simmering in my cast iron dutch oven and it smells so good. :)

The rest of the egg salad I made, and some chips. Ate a pumpkin bagel with cream cheese shortly after because they smelled so good!

I've been craving a burger all week, so I cooked a Turkey burger and had some okra and tomatoes on the side. Hit the spot!

I'm making black bean veggie burgers (lentils, mashed black beans, spinach and kale chopped in the processor, onions and peppers finely chopped, bread crumbs, soy sauce, worcestershire, memphis seasonings, salt and pepper) with temeph "bacon," lettuce and tomato..maybe some cheese on a bun with a side of fries
I like making veggie burgers because I can pretty much put any veggie in them as long as it is put in a food processor to increase the nutrition value and season to taste...healthier and better tasting than store bought. I will say that the transition from meat eater...to vegetarian...to vegan has been an eye opening experience. Before, I thought I would be going without a lot of things...but, with an open and adventurous mind I don't miss much. Of course the fact they have created vegan foods that taste like the real thing helps. I haven't gone fully vegan yet..but I'm almost there. *disclaimer doing this was for health reasons and not animal right reasons...I can still throw down a slamming meal for my meat eating friends ;) |

While at the farmer's market today I purchased some smoked pork chops from a local butcher. I absolutely love the meats he makes. It is all fresh and very tasty. Since he didn't have any quarters left in his change box he was rounding everyone's meat prices down. So if it was 11.75 he gave back change as if it were 11 bucks. Once I got it home I got the roaster out and added those, sausage, some fresh cut pork chops (not smoked) and about 2 quarts of sauerkraut. I placed it in the oven to roast for the afternoon and then around 4:30 I peeled potatoes, diced, boiled, and mashed them to go with the sauerkraut. There is plenty of leftovers for tomorrow and I can share some with my sister (her hubby cannot even bear the smell of sauerkraut). It was delicious!!

we had burgers on the grill, steamed mixed veggies, baked potato
for dessert, they had Blue Belle Homemade Vanilla ice cream and I am still working on my 28 oz milkshake ... made with milk, ovaltine chocolate malt powder and huge scoops of the same ice cream Jennifer subscribes to the belief "what is hers is hers and what is mine is hers too" ... she stuck her snoot down in my milkshake when I placed it on Kevie's new bed steps I recently made for him ... only turned my back on it briefly ... chocolate it a definite no-no for dogs!!! Jennifer is sneaky. LOL! I have to keep a close watch on that little pocket pittie! |
