Spaghetti casserole that just came out of the oven! However, it is for later tonight so shortly I will be eating a turkey, mayo, lettuce, onion, thousand island sandwich on Parmesan bread with some Black Cherry Fresca (we have it at work and I LOVE it!) and some cheddar Sunchips.

That is what I am pondering right now.

After reading cinnamongrrl's post, I am leaning toward nuking some corn dogs. Need quick and easy instead of quality tonight ... just something down there to get my stomach off my backbone. :) Think I am losing a little weight because I find myself constantly having to pull up my pants. :(

Cooking my Oma and Opa dinner. Tonight it will be a pork roast with verde sauce baked, peppers, onions, garlic, squash sauteed, and a cucumber tomatoes onion salad. Some fresh strawberries for dessert.

Later tonight I'll have stuffed red bell peppers. Stuffed with ground beef, TJ's 8 Healthy Chopped Veggie Combo, olives (i love olives), cheese, chopped tomatoes, green onions. Seasoned with cumin, turmeric, Mexican oregano, coriander, not sure what else.

I'll use an 1/8 cup of cooked brown rice/quinoa combo as a binder per bell pepper. It may not be enough to bind, but it will still be good to eat.

Red beans have been slow cooking all day :) So we're having red beans and rice with some Mexican blend cheese, green onions and maybe a little sour cream. Can't wait :)

I made a Knorr/Lipton side; cheesy spinach, added diced turkey ham and some green beans...

I have my awesome brownies for dessert...did I mention they were awesome?? Coconut oil makes all the difference.

OMG....shrimp/crab burgers on Hawaiian sweet bread bun with a cilantro/Serrano pepper mayo I whipped up. It was so so good. With some steamed snow peas and green beans.

We are waiting a little while to top it off with Carmel pumpkin pecan upside down cake with real vanilla ice cream.....sounds yummy Huh?..

Tonight was me staring blankly into the cupboards until my hands spontaneously started yanking things out because my gut thought my gullet had been cut.

I wound up with a Velveeta shells and cheese cup, Sante Fe rice blend, corn, steamed mixed veggies and sliced beets and a little Yum Yum sauce on the side. Chocolate milk to drink.

Grapes and a Fiber One Cheesecake snack cake for dessert.

Marinated some chicken breast in a garlic, herb, wine marinade, will grill them, made tzatziki sauce, and will have a Greek salad with it. Fresh pineapple and strawberries for dessert.

Ohhh Gemme, that sounds so good. I am sitting on the patio same as last night. Trying to think about what is for dinner. Macaroni & Cheese cups x2 will be a for sure thing. And I will heat up a bag of those wonderful steamed veggies - I love them! Quart of cold milk to drink.

I have a container of Purina Beneful Chopped Blends (beef, carrots, peas, barley) for each canine child baby so they are going to be thrilled.

we are so hungry we can barely wait ;)

I love this little Weber Q-1000 tabletop gas grill! It is their low-end one. Cooks evenly and quickly ... and so clean. I like the taste of charcoal grilled better but was tired of the messiness and wait time.

Mmmm, is it dinner time yet? This is our dinner tonight...

Peach Whiskey Barbecue Chicken

Ingredients

12 whole Chicken Thighs, Bone-in, Skin-on
2 Tablespoons Olive Oil
2 Tablespoons Butter
1 whole Yellow Onion, Diced
1 cup Whiskey
12 ounces, Barbecue Sauce
1 jar Peach Preserves
1/2 cup Water
2 Tablespoons Worcestershire Sauce
1 Tbsp minced garlic
3 whole Green Onions, Sliced Thin

** Use salmon for a great taste change **

Preparation Instructions


Preheat oven to 300 degrees.

Heat oil and butter in a heavy pot over medium-high heat. Place chicken thighs, four at a time, in the pot, skin side down. Brown both sides, then remove to a plate and repeat until all chicken is browned.

Pour off half the grease, then return pan to stove. Add onions to pan and stir, cooking for 2 minutes. Pour whiskey into the pot, being very careful if you're using an open flame. Stir and scrape the bottom of the pan, allowing whiskey to reduce for a minute or two. Pour in barbecue sauce, peach preserves, water, and Worcestershire sauce. Throw in garlic cloves. Stir until combined, then return chicken to the pot, skin side up. Cover and put pot in oven.

Cook for 1 1/2 hours, then remove from oven.

Serve pieces of chicken over a big pile of smashed potatoes. Sprinkle sliced green onions over the top.

I have to brag a little about last night's dinner. I had to get up way before the crack of the crack of dawn, and didn't have time after dinner.

I sautéd ahi tuna steaks in unsalted butter and lemon. I need to omit as much salt as I can right now. So, I've been getting creative with sauces, herbs, spices, hot peppers...lol

I concocted a relish of chopped red onion, cilantro, garlic, tomatoes, Serrano pepper, lemon juice mixed lightly with low fat mayo. Ohhhh, topped that the tuna. Oh my gosh! Delish!!!!

Served with steamed white rice and steamed fresh snowpeas.

All fresh, no salt added! Healthy, I say.

I created a very large and very revolting dinner early this evening. Then I ate it.

I'm used to "experimental cuisine." I've built up such a tolerance over these many years of kitchen experience; but this time I may have taken a little too much artistic license.

Orrrr....perhaps I have just created a new, super Penicillin.
Yeah! That's what I was doing!

lol, so if I'm still alive in the morning I'll be a millionaire!



PS - Ran out of room in the Reason for Editing box. So, here it is - I am too lazy to move this out of here and into the right thread. So deal with it. Because I probably got Botulism. lol, no wrinkles, though!

If you are too sickly to eat them now, put them in the fridge for later.

I do that experimental stuff in my crockpot. A few years ago, I made up a stew, it had about $30.00 worth of meat and other ingredients in it. Tasted like chit!!! I went and bought 4 pounds of Colby cheese ... you know if you melt enough cheese in the disaster, it will help it. With the cheese I was able to tolerate it pretty well. Ate all of it in a week ... but ... come closer, I don't want anybody else to hear ... it is far too embarrassing ... let me whisper in your ear ...I could not go to the bathroom for days after all that cheese ... then when I finally did, I thought I would surely have to call the paramedics. Almost killed me I tell you! LOL! TRUE STORY! Let's just keep that embarrassing part between the two of us. I know you will keep my little secret. ;)

Soooo...to recap for those who may have joined the conversation late -30 dollars worth of various varieties and cuts of meats, "other" unspecified ingredients in a festive array of tantalizing amounts and proportions, all topped off with four - not just 1, not 2, and not even 3, Ladies and Gentlemen - but 4 pounds of Colby cheese simmered to crispy burnt perfection over the course of one week in the slow cooker, lol.

I'll take your secret to my grave; I swear, lol.

I'm a vegetarian, so - while both of our creative cooking skills are clearly unparalleled - my own more revolting experiments tend to be a bit lighter and "quicker." (That's the secret to surviving serious food poisoning - I'm giving out tips now, lol)

So you win this time. But I'll be back.
