Tonight I am making one inch thick boneless pork chops smothered in red bell pepper, onion with mushrooms along with a splash of non alcoholic white wine. The side dish will be a veggie mix brushed with seasoned evoo with sea salt and fresh ground pepper. This dish is simple and a hit around hear.

Bacon is cooking in the cast iron skillet as I type. I will have cottage cheese topped w/ easy over eggs, and some leftover grilled veggies to go with the bacon.

I thought I was starving when I punched out at work. I wanted to make Indian food. Natural grocers didn't have what I needed so I settled on Thai red curry with zucchini, carrots, onion, peppers, bamboo shoots, water chestnuts and spinach over rice noodles. I added lots of coconut milk in it.

Because I cook for an invisible army, it will be lunch for a few days.

Tilapia...Initially I just seasoned it and added butter and some fresh pineapple chunks...and then, I opened the fridge and saw the coconut/almond milk and thought: hmmm why not?! Final result was good! Added some fresh chunks of papaya to the plate as decoration/'dessert'
Salad: shredded iceberg lettuce, corn cut from cob...low fat sour cream as dressing...
and, just for the 'fun' of it, one soft peppermint puff candy :)

I stopped at a local Mexican place that I've wanted to try...

They call themselves "California Mexican " I didn't know what to expect...

I got chicken enchiladas with guacamole and rice and beans...nachos and some kind of cheese sauce came with it. I ordered flan for dessert cuz it's impossible for me to resist.

Everything was ok...not great. The place is always packed so I had high hopes. I can't stand a lot of onion in my guac. I think it's gonna be a one time thing. I confess that I am terribly picky about Mexican food....and Thai..

I seasoned a chicken breast and baked it...added a fresh beet to the oven to have roasted beet...two friggin hours later I can feel myself aging and yet the beet is still hard as a rock. Who knew beets take forever to bake...not me

Oh and who decides to turn the chicken while mostly undressed and gets splashed by hot chicken juice....yep. This girl. I've had far better thoughts...:|

easy peasy..fried egg sandwich with havatti cheese on rye sourdough toast. Scoop of cottage cheese with a spoonful of cinnamon-pear jelly.

Blaze came home with lots of potatoes, yellow squash and green peppers. What to do?

Opened refrig and found celery, onions and bacon. Added sliced potatoes and green peppers. Oh, and a jalapeño. Fried it up...kinda like country potatoes. Blaze, says what makes it country? Lol

I also found two bunches of radishes. What to do? They need to be used. I found a recipe for roasted radishes. Hmmmm...I wonder how that will turn out. In the oven now.

And...I brought home two bacon Monterey Jack cheese patty's that will go on Hawaiian sweet bread buns with all the fixin's.

Took my honey out to an authentic Cuban restaurant for our "date night".....it was rather good. Of course, I could only eat my regular 4 oz....:). I have breakfast & lunch tomorrow..lol

Last night I was too hungry not to cook so I sauteed a chicken breast (which was frozen so I had to thaw it in the pan; I had no intention of cooking) seasoned it with spices and curry then added some fresh veggies. Zucchini, summer squash and red bell pepper to be exact. It was quite good.

A couple coconut marshmallows for dessert...but...the coconut fell out of the fridge and onto the floor. I may have wept a bit. Definitely need more. Love it in my yogurt too..

20 piece box of hot wings from Publix ... I could only eat 5 ---->>>> this is definitely a 1st ...

think I am too tired from lifting and moving my things all day long back/forth to/from the storage place ... and this is just the beginning of it

want it to be mid-june, unpacked and settled into the home I just bought ...

And I need a backhoe/tractor with auger to do the fence install ... I tried so hard to get my loan originator to let me get a tractor/backhoe worked into my mortgage ...she said no --->>> EVERY.SINGLE.TIME.I.MENTIONED.WHAT.A.GOOD.IDEA.IT. WAS!!! Finally realtor lady told me to leave the loan originator lady alone about the backhoe/tractor. They were not even the least bit sympathetic about it either. They just don't get it is all I can figure out about that.
