Dinner was meat sauce with homemade pasta, ( bought locally), with some shredded Parmesan. What made the night was some peanut-butter swirl ice cream in a bowl with a spoonful of additional melted crunchy peanut-butter in the bottom of the bowl!! Talk about diggin your ice cream! hehehehe

The GF grilled a rib eye steak on the grill and made a great salad with avocado, grape tomatoes, cucumbers, carrots and garnished with some pecans.

Fresh pears for desert. 🍐🍐

I had a big salad with mixed spring greens, cukes, cherry tomatoes, shredded cheese, bacon bits with tangy tomato smoky bacon dressing and a handful of grapes and a little cherry vanilla ice cream and rainbow sherbet because I couldn't make up my mind what I wanted.

My peach cobbler didn't get made, I didn't want to turn on the oven. It will be an addition to tomorrow!

I had link sausage in a hot dog bun with mustard, a Kosher pickle, and chips with salsa. Watermelon for dessert and ice tea to drink.

Seems like a lot of food I hope I didn't over do it.

beef enchilada with rice, beans and such. another bowl of vanilla peanut-butter swirl ice cream with a handful of multi grain cheerios thrown in. If I had pretzels it would have been my druthers in the ice cream.....!!

Hungry Man frozen turkey dinner. I'd forgotten how good "reformed" turkey slices powdered mashed potatoes and salted bread cube stuffing could taste.

butternut squash galette: it's a pie crust fulled with butternut squash, onions, mushrooms that have been first roasted in the oven with salt, pepper, thyme and rosemary. As that roasted I sauteed spinach in garlic with sat and pepper. Combined roasted veg with sauteed, mixed and added vegan cheese. Fill pie crust and bake

ok ok...but i bet it took longer than 3 minutes in a microwave to make.

Wait...you had kale soup? as in Portuguese kale soup?

and yes...it's pretty much a pot pie..it was a recipe I found a couple weeks back that I really enjoyed. Of course I never stick with the recipe..but it's a good base.

Today I made a butter bean and spinach in a tikki masala sauce to be served with white rice. I also made corn salad, chick pea salad and pasta with a red sauce.

I make several things early in the day because it's to damn hot to do it later. This way I have choices, only need to heat it up (if required) and the house stays cool.

Not sure if it's Portuguese in nature but it's a supermarket soup. It's very good. It has kidney beans, potatoes, chourico sausage, kale, cabbage, onions, carrots, chicken broth and a ton of spices and additives and weird things like nonfat dry milk.

But it's delicious.

Tonight, I am making steamed broccoli and having some sirloin and make some mashed sweet potatoes.
