I am having Roasted Tomato Bisque soup, which also features tiny little ravioli. I added a few fresh Basil leaves, too. It's simply delicious.... especially on a very chilly evening.

I'm making turkey meatloaf tonight: 93% lean turkey, Vidalia onion, bell pepper and bbq sauce. Mix it all up and bake it. It's healthy, moist and delicious.

I'm going the easy way out tonight..chopped up summer squash, zucchini, potatoes and mushrooms, tossed them with oil, salt, pepper, onion powder, and garlic powder and threw them in the oven to roast.

I cooked for 3 and I was the only one there so tonight was

Seasoned chicken strips

Sweet potato

Mixed veggies

Baked stuffed apple for dessert

Last night my lady and I went out for a lovely seafood dinner. I had crab stuffed mushrooms, crab cakes, and a lovely tomato basil soup. She had a beautiful salad and lovely piece of fish. Key lime pie for dessert. Wine to drink.

Last night, I picked up acorn squash wedges, sweet potato wedges, Asian peppers and steak, two kinds of salmon, a beautiful orzo dish, asparagus almondine, Mediterranean bean salad and a butternut slaw.

I wound up having half of one of the salmon filets (with a sweet chili and macadamia nut sauce), a little bit of the slaw and asparagus, a little more of the acorn wedges and a bunch of the sweet potato wedges. Delicious!

veg broth instead of water, rice, pinto beans, black beans, pico de gallo, peppers, salsa, taco seasons...bring to a boil, cover, reduce heat, let simmer until rice is cooked and BAM One pot burrito bowl

Yes but only because you're throwing away the utensils instead of recycling them and the containers.

It's been a super busy work week, so this morning I put a whole chicken in the oven to slow roast all day until I get home this afternoon. I found the Yumm sauce at a nearby grocery store, so tonight for supper, I'm having .....

Roasted chicken, with Yumm sauce, and an small home made garden salad dressed with grape sized tomatoes, purple cabbage, cucumbers, and slivered almonds.

Yummmmmm... :)

Tonight will be steak fajitas with grilled red peppers, garlic, and onions. Avocados and several different salsas, chips, and something lime-y to drink.

The dinner entertainment will be drooling dogs :dog:

Meatloaf.
In the 60's my Mother taught me how to make the World's Best Meatloaf:

A lb of hamburger, an egg, a can of Campbell's Vegetarian Vegetable Soup...squeeze it together and fill a loaf pan. Put it in the oven at 350, or maybe 375, or maybe 400 for maybe 45 minutes or maybe an hour or till it looks ok. Eat it.

I still make it. I still eat it.

Wait till you hear my pork chops and Campbell's Mushroom Soup recipe. lol

I am all about the unlimited snow crab legs and peel 'n eat shrimp, which the wife and I can put a hurtin' on. :winky:

Sigh, this is going to be bad.

I have spent my entire life telling everyone that I can't cook. I am so convincing that even my kids and my sister believe me. I really believe that my kids think we hired a cook for evening dinners when they were young.

If I'm being honest, I hate cooking. I forgot how to cook many things but I can cook.

Because the baby decided to cluster feed between 4:00 pm and 8:00 pm, I feel obligated to feed the other two kids. I don't think that starving them is an option.

So, I have no idea what I am going to cook but I will cook tonight. My plan is to burn something tomorrow night just to maintain my reputation.

I'm going to use some of the roasted chicken, from yesterday, to make an simple supper: an small bed of jasmine rice, topped with an Asian salad mix, add the chicken, then use a home made Thai peanut sauce, for a salad dressing.
