I just returned home from the grocery with the fixins for tonight's dinner. I am so hungry, mostly because I have been thinking about what I am going to make tonight...all day!

I am going to make a baked French Brie with a blend of sliced dried figs, & walnuts mixed with fig preserves & spread generously on top of the brie round, then baked for a short time and served with a warm crusty five grain baguette. I will also have a salad with spring greens, tomatoes, radishes and lemon garlic dressing, (Tessemae's) made with all organic ingredients.

I am not sure yet, mostly because I'm tired, but.....

I'm probably going to make it easy on myself and toss a huge tortilla (gordita?) In the skillet and use some of the Asian salad mix, with a few end of the summer tiny yellow tomatoes and use up the half avocado and the last of the yummy poppy seed dressing too. Make a wrap, sort of.

My partner made soup tonight. Think it was potato, collard greens, garlic, carrot...possibly some other stuff that I can't quite recall. She also made homemade biscuits to dip in the soup. To drink homemade ice tea. Was good!

I have no idea because I'm meeting up with a couple of friends and we're going to see what looks like a fun evening of entertainment.... we *might* go try out this new cafe that is on top of one of the buildings downtown.

Dessert is bring your own, which I bought a huge slice of organic Carrot cake on my lunch break. :)

But for supper, I hope they have something like an stuffed Crab entree or Lobster bisque.

I am going to cook up some ground sausage, and lightly stir fry some garlic, mushrooms, onion, zucchini, and sweet peppers. Then stuff it all inside this Sweet Dumpling squash that is in the oven baking, sprinkle it with a little asiago cheese & bake it for another few minutes.

I had kale and chourico soup with shredded cheese for dinner but I also sautéed a large skillet of mixed veggies (mini peppers, bell pepper, mushrooms, corn, carrots, green beans, peas and cauliflower) with some turkey kielbasa. I will likely add some basmati rice tomorrow night and call it done.

Failed at attempt to make a "raw" butternut squash salad...

BUT I did nuke it, then make it like smashed potatoes...added honey, minced ginger, fresh cranberries, olive oil, S&P & OJ that I sautéed together, then poured into mash mix. Once on plate, I topped it with some walnuts....YUMMMMM

NOTE: I couldn't peel that raw squash to save my soul...SOOOO like any good boi chef, I nuked it..yes I did...removed seeds, removed peeling, & mashed it up (see above).

Had Italian bulk sausage crumbles with seasonings on side. THIS was a great dish to repeat!!! Thanks for the idea Gemme...

I am roasting a large portion of pork roast (carnitas)... and cleaned some vegetables to roast separately on parchment paper : Brussel sprouts, beets, and a few baby red potatoes. Dressed in sea salt and rosemary olive oil and cracked pepper.

The meat should be finished roasting around mid-afternoon, then I will roast the vegetables.

I also have a Raspberry jello dish for dessert after supper.

smart azz...lmao....it IS a LOT of hard work...to defrost it, open it to prepare it for nuking, AND of course effort to rid the trash afterwards..so yes a LOT of work....lol...love your humor buddy!!!

I ended up not having this last night because my "going to" never got up out of the chair to cook it. I did however, cook it today, (minus the asiago cheese) and I am so glad I did, it is delicious! I left out the shrooms, and added in chopped radishes, & cinnamon along with my favorite Mediterranean spice blend.

I was starved and threw together a random Hodge podge

I thawed some chicken hot dogs (trader Joes has the BEST ONES EVER) sauteed them in coconut oil, added some fresh kale and then remembered having frozen pepper and onion blend. Added a can of chickpeas.Threw some in and let it all get to know each other. Twas yummy. Only seasoning I used was sea salt. But I did fervently wish I had remembered to buy fresh black pepper

- Bratwurst sliced lengthwise and filled with horseradish cheddar cheese, then wrapped in bacon, glazed in BBQ sauce and deep fried
- sauerkraut with bacon
- spaetzle
- to drink, Orpheus Wandering Blues blueberry sour ale (not German, but oh so delicious)

Just as I was turning off the oven and getting plates down...he comes into the kitchen, going on and on about

Korean BBQ. How he wishes there was a Korean restaurant close by. How the BBQ is so good, spicy good. He has a picture to show me on his phone. Lots of vegetables and dipping sauces. He says, his mouth is watering for it now.

And as he turns to leave the kitchen...I say, well, tonight your getting regular roasted chicken legs, roasted eggplant and cheese tortellini with Alfredo sauce.
